These turkey teriyaki meatballs are juicy and and so flavorful with a homemade teriyaki glaze. They come together quickly making them an easy dinner idea for a busy weeknight. Try them over a bed of steamy rice or with toothpicks as an appetizer. Baking the teriyaki meatballs at a higher temperature seals in the natural juices and produces wonderfully soft meatballs that are healthier than frying. These came out great! I had to add a little more cook time to mine, about 5 extra minutes. Personally, I think the meatballs needed a little salt added. Even though the soy & hoisin sauce are salted, I think it still needed a touch. Regardless, yummy recipe! Thanks!

I want to make these in a crockpot for my relatives graduation party.
How much sauce should I make for approximately 5lbs of meatballs? I have already precooked your meatballs (beef and pork mix) and frozen them.

Hi Lisa! I have not tested these in a crock pot. The sauce in this recipe is written for 16 ounces (1lb) of meat. I hope that helps with your calculations.

Hi Claire, this recipe truly is the best with hoisin sauce, and while I haven’t tried a substitute, here’s what one of our readers shared: “Made these and substituted the hoisen sauce for regular bbq sauce+ another tablespoon of soy sauce and a squirt of siracha .. I have no idea how close it was to the original recipe, but it was amazing. Thankyou. I always come to your site for dinner inspiration.yum.” I hope that helps.

Thanks, Ali. We’re glad you love this! I haven’t tried freezing them, but I think that would work to pre-cook and then freeze them. If freezing raw, I would thaw completely in the fridge before baking and add the sauce to the cooked meatballs per the recipe.

I doubled the meatball recipe and hoped to use 1/2 the sauce to avoid the extra sugar. Even still, the sauce coated the meatballs very well! However, I felt the meatballs lacked a pop of flavor. With that said, I did use ginger paste (I didn’t have fresh). I am excited to try the recipe again with fresh ginger and add a touch of salt (or soy sauce) to the meatball recipe. Thank you for the recipe!

The cooking time in the meatBalls had to be doubled and the sauce turned into a sticky mess that could not be pored over the meatballs it’s like there was a liquid ingredient missing here , so disappointed as I’ve tried many of your recipes but this one didn’t work!

So good! I thought it sounded like a lot of sugar in the sauce so I tasted it before I added any and I’m glad, it was plenty sweet without any sugar at all! Maybe it depends on the brand of hoisin sauce you use, and obviously each person’s preferences. Really delicious recipe though, thank you!

I made these tonight and they were very good. Mine were a little on the dry side but possibly I over baked them. I made them a little bigger (12 meatballs) and took them out at 160 degrees, so I was surprised. I did not make the teriyaki sauce but used a really quality bottled brand and added chopped pineapple to it. Sprinkled the sesame seeds and chopped green onions on top. Looked very yummy in the serving bowl! Served with brown rice. Will definitely make them again!

Pineapple has something in it that will actually tenderize a tough cut of meat. Using it in a meatloaf or meatball mix might be counterproductive. Probably would have been best to grill the pineapple separately for flavor then add to the meatball recipe as an add-on.

I made these Teriyaki Meatballs for dinner and a potluck the next day. They were a hit!!! I haven’t had such an easy recipe like this to follow in a while. And when I say easy, I mean really easy! Including prep and actually making them. Just because it lacks in steps and ingredients does not mean it lacks in flavor. I would totally make these again!

The only thing I would do different is doubling up on the sauce recipe. Our leftover meatballs soaked up all the juice so we know next time to have some sauce on reserve to drizzle again.

So juicy and delicious! I started with 6lbs of ground turkey when making these so I ended up with LOTS of meatballs. Was too lazy to make the sauce and instead heated 2 bottles of teriyaki sauce (soy vay veri veri brand). Served with jasmine rice and an asian salad kit (costco) that I added chopped yellow bell pepper, tomato and cucumber to – such a quick meal to throw together. This one is a keeper!

I love the sauce but had two problems with the meatballs. Truth be told I cut in some very tiny pieces of pineapple for added sweetness; other than that use the recipe as written. My problems were 1) the meatballs fall apart when I removed them from the oven, and
    2) the mouth feel was rather gritty and left a filmy feeling coating.

I’m not sure how much of my problem was my pineapple modification and how much the recipe but is there a trick to holding them together?

HI Elissa, I haven’t had that experience with this recipe so I suspect it was due to modifications. When I made these, they kept together without any issues. I suggest making the recipe as written since I haven’t tried that add-in. A “gritty” or “filmy” texture is also strange. Was the ground turkey fresh and not cooked while partially frozen? Cooking partially frozen meat can cause texture issues.

Hi Dina, I haven’t tried freezing, but I think that would work to pre cook and then freeze them. If freezing raw, I would thaw completely in the fridge before baking and add the sauce to the cooked meatballs per the recipe.

Hi Mario, ground beef will give you a slightly different flavor profile and beef tends to be a little more dry in meatballs but I think you could make it work.

When making beef meatballs, I add freshly pre-cooked jasmin rice. The rice helps to make them moist.

I have made this recipe several times and it is always a big hit. I would like to make it as an appetizer for a New Year’s Eve party. I work the 2 days before the party and would love to make them ahead of time. Do you think baking them and leaving them in tha fridge for 2-3 days would work. My idea is to then combine the meatballs and sauce in a slow cooker to heat them up. Please let me know your ideas, I know you are a pro at hosting 🙂

I am going to my family’s home, so I don’t need to feel awkward about asking to use the oven, etc. My plan is to prep the meatballs and make the sauce completely on Wednesday. Then bake meatballs and reheat sauce on Thursday. So, I suppose my question is, will this change any instructions? Or is this a bad plan for some reason? Any help would be appreciated. Thank you.

Hi Marianna, I haven’t really tested any substitutions in this recipe so I can’t say for sure. An easy fix is to use your favorite store-bought teriyaki sauce like Yoshida’s for example, warm it up and toss with the meatballs. Hoisin is difficult to substitute without substituting for several ingredients to replace it because it adds thickness and flavor to the sauce – it’s sort of like an Asian BBQ sauce.
