These shrimp lettuce wraps make for one delicious and super impressive meal. I REALLY want you to discover the peanut dipping sauce (also great on chicken wraps). You might be pouring it over all of your lettuce wraps forever.

What Are Lettuce Wraps?

They are similar to spring rolls but wrapped in a fresh lettuce cup instead of rice paper. They usually have some kind of protein; chicken, ground pork, shrimp, etc., are loaded with fresh vegetables and served with a peanut dipping sauce. Lettuce wraps are often on restaurant menus such as PF Chang’s famous lettuce wraps.

What is Boston Lettuce?

We love the cup-like shape and dark leaves of the Boston lettuce. It is also sometimes called “bib lettuce”, or “butter lettuce.” They are sold next to regular lettuce and sometimes come in closed plastic containers labeled as “living” plants with the root attached.

Can I Substitute Lettuce?

YES! If you are not able to find it in your local grocery store, regular sandwich lettuce or even the leaves from hearts of romaine will work. 🙂

Peanut Sauce Recipe:

Ok don’t laugh, this peanut sauce has 2 ingredients. You combine them in a mason jar, cover and shake until smooth. It is better than any restaurant version we have tried.

  • THE DRESSING: We use “Newman’s Own Low Fat Sesame Ginger” dressing (P.S. this dressing contains wheat so if you’re gluten free, try: Bragg’s ginger sesame).
  • THE PEANUT BUTTER: You can use any brand of creamy peanut butter to make peanut dressing. If your peanut butter has been refrigerated, bring to room temperature so it blends easier with the dressing.

How to Serve Lettuce Wraps:

Let your family or guests assemble your lettuce wraps buffet style. We start with a lettuce leaf, add several strips of carrot and cucumber, some avocado, 2 shrimp and a couple generous-sized sprigs of cilantro.

DO NOT skip on the cilantro. At least give it a whirl. It totally reminds me of spring rolls and makes the entire lettuce wrap dangerously enticing. Finally, drizzle the top with the peanut dipping sauce. It will change your life.

Ingredients 

Servings: 4

For the Lettuce Wraps:

  • 1 head of Boston lettuce
  • 1 lb large shrimp, peeled and deveined
  • 1/2 tsp sea salt, or to taste
  • 1/8 tsp black pepper, or to taste
  • 1/2 Tbsp olive oil
  • 1 avocado, sliced into strips
  • 1/2 cucumber, sliced into strips
  • 1/2 small bunch of cilantro
  • 1 medium carrot, cut into matchsticks

Peanut Sauce:

  • 1/2 cup Lowfat sesame ginger dressing, (We use Newman's Own Brand*)
  • 1 1/2 Tbsp creamy peanut butter, room temperature

Instructions

  • Rinse and pat dry your shrimp. Sprinkle shrimp with salt and pepper to taste. Add 1/2 Tbsp olive oil to a large hot non-stick skillet. Once oil is hot, add shrimp and sauté on med/high heat 2 min per side or just until cooked through then transfer to a plate. 
  • Cut your cucumber and carrot into thin matchsticks. Slice your avocado into strips, cut cilantro springs in half. 
  • Make your peanut dressing, combine 1/2 cup sesame ginger dressing with the 1 1/2 Tbsp peanut butter in a mason jar or tupperware with tight fitting lid. Shake thoroughly until smooth. 
  • To assemble lettuce wraps, place the lettuce cups on a platter, add several strips of carrot and cucumber, sliced avocado, 2 shrimp and a couple of large sprigs of cilantro. Drizzle the top with the peanut dipping sauce.

    Love your recipes, however, the sodium is over the top. Would love to see low sodium recipes. 1500+ mg in this recipe is nearly daily limit for average person and over for one watching sodium intake. I’m going to try and make with less sodium!!

    I made these tonight. Absolutely delicious. I don’t like cilantro so I tried mint. I didn’t like that either. The peanut sauce was great. I must not build them well because it was really messy. But I will make them again.

    I just made these shrimp lettuce wraps yesterday for lunch. My mom and I both enjoyed them! The cilantro gave it an awesome flavor and the cucumber with Avocado was reminiscent of a sushi roll with the dressing!
    I didn’t have the dressing so my mom made her own using peanut butter, ginger, sesame oil, and soy sauce.
    Thank you for the recipe, as I was looking for something Heaney to do with shrimp that didn’t involve pasta. Great way to for in veggies!

      Hi Gene, My cousin shared another recipe with me recently: 1/2 cup peanut butter, 1/4 cup maple syrup or agave, 1/4 cup apple vinegar, 1-2 Crushed garlic cloves, 1 tsp fresh ginger grated. I hope this helps!

    This recipe looks amazing. I’m shocked at how high the calorie count is though. I can’t figure out why each one is 399 calories. Can you suggest a way to lower that count?

      Hi Kami, it has to do with the sauce so the overall calorie count would be lower with less sauce. And keep in mind this is a dinner-sized serving.

          That is a Cuisinart Single Burner hot plate. I don’t know the exact model number. But I’ve seen them sold on Amazon. Costco had some in the store recently as well!

    Delicious, simple, and visually beautiful! I buy frozen Argentinian shrimp from Trader Joe’s, and serve everything with lettuce, or rice wraps. I usually make my own peanut dipping sauce, as they’re ingredients I have on hand. (Plus, the littles enjoy measuring and mixing.) Rice noodles or soba noodles are a nice side.

          Brittney, we usually serve them stand alone since it is a meal in it self. You can also cook up some quinoa which tastes great on the side or inside the lettuce wraps.

    Is the shrimp supposed to be hot or more room temp or cold? Wondering if I can make these ahead of time for a party

      They can be at room temp, or even cold (cold are good as long as you don’t saute them in butter; if they are buttered and cold; you’ll be able to see the butter when they cool).

    Very delicious! I made this yesterday and my husband loved it. I lost track how many he ate.lol. He kept talking about how great it was today in morning. It’s light on the stomach. The combination was just perfect and sauce was amazing. Will make again for sure. Thank you for the lovely recipe!

    Hello, Natasha! I read your blog and i like your recepies:) I’d like to make this salat, but in Ukraine we dont have the dressing that you write about. So, can i use soy souce, ginger and olive oil instead of it?

      I think that would work. My cousin shared another recipe with me recently: 1/2 cup peanut butter, 1/4 cup maple syrup or agave, 1/4 cup apple vinegar, 1-2 Crushed garlic cloves, 1 tsp fresh ginger grated. 🙂

    I made your lettuce wraps today for dinner, and had guests over and let me say they were so yummy. I switched shrimp to chicken and was delicious. Two weeks ago I made peanut sauce from scratch that tasted very very similar to yours. But I did add 1 crushed garlic clove to the sauce that made it taste so yummy. Thank you Natasha. Oh and today I also made your fruit Keks and the cabbage salad with cranberries. also yummy. Keep the recipes coming.

    Natasha, do you have a good recipe for rice pilaf? When I make salmon or vegetables I would like to serve them with some rice instead of mashed potatoes. Can you help out?

      1 cup rice
      3 cup water
      0.5 cup small thin pasta( i think its called vermicelli)
      3 tbs oil
      1 tbs butter
      1 tsp salt
      Rinse rice , drain it well. In a pan heat oil add vermichelli and brown it. Add butter then drained rice and saute it for a minute add salt and water, mix it lower head to low, cover it and let it cook for 10 minutes.

    I loved this recipe but peanut butter is not very popular in my country hence quite expensive and I’m sure there is no way I will ever find the sesame ginger dressing. So, is there any other sauce you think would taste just as good with the lettuce wraps?

      What are you doing up as late as me? lol. It’s even worse in Idaho since we are an hour ahead! 😉 I have purchased shrimp at Costco but I actually think it’s spendier than Winco. I guess it depends on what’s on sale at Winco. Oh and the shrimp for this particular recipe came from Fred Meyer (they were on sale, surprise surprise ;)).

          Yeah, I just watch for when it goes on sale. 🙂 I purchased a bag at Costco recently and wasn’t necessarily impressed. If you can, buy shrimp that is from as nearby as possible (shrimp from Taiwan always tastes off to me and seems a little slippery).
