We love easy stir fry recipes from Chicken Stir Fry to Shrimp Fried Rice. Adding ramen noodles to the stir fry was a game-changer because it makes it a meal similar to our Rice Noodle Stir Fry.

Ramen Noodle Stir Fry

It’s funny now, but we stocked up on ramen noodles in 2020 because, like many families, we were thinking about food shortages. We don’t often cook ramen, but since we have a stash, we’re now figuring out delicious ways to use it up. So you could say 2020 gave us the gift of this Beef and Broccoli Ramen Stir Fry recipe!

Ramen Stir Fry was a home run for our family. My son can’t get enough of it and says it tastes better than Panda Express (which he loves). I made it twice in one week and he finished the leftovers to the last bite. P.S. It reheats well the next day.

Ingredients for Ramen Stir Fry

The ingredients are very close to our wildly popular Beef and Broccoli Stir Fry and the addition of instant ramen makes this a one-pan meal.

  • Beef – we used 1 lb flank steak but top sirloin is a great substitution. You could even substitute with thinly sliced boneless pork loin chops.
  • Broccoli – a full pound makes this a well-rounded meal (see veggie substitution options below)
  • Dill and Chives – these are optional garnish, but highly recommended
  • Stir Fry Sauce – Grated fresh ginger and garlic combined with brown sugar, water, soy sauce, sesame oil, corn starch, and black pepper. This corn starch causes the sauce to thicken and turn perfectly saucy.

The Best Ramen Noodles for Stir Fry

  • Instant Ramen Soup Packets – It’s easiest to use 2 of the standard 3.5 oz packages of instant ramen noodles (any brand) – discard the seasoning packets and cook in water according to package instructions.
  • Organic Ramen Noodles – we have found organic ramen noodles in our local grocery store. It worked well, but these seemed to get a little mushy with reheating.
  • Cup Noodles – In a pinch, I’ve made this work with 4 cup noodles (rinse off the seasonings in water then boil in water 2-3 minutes or until tender).

How to Make Ramen Stir Fry

  1. Cook Ramen Noodles – boil in water for 3 minutes or according to package instructions then drain and rinse in cold water to stop the cooking process.
  2. Make Stir Fry Sauce – Combine all of the stir fry sauce ingredients in a large measuring cup and stir to dissolve the sugar. Using warm water helps it dissolve faster.
  3. Cook Broccoli – steam cook with 2 Tbsp water covered with the lid for 4 minutes, stirring occasionally until crisp-tender, then transfer broccoli to a plate.
  4. Sear Beef – cook in a single layer for 2 minutes per side, stirring once. Use a large skillet to avoid overcrowding the pan.
  5. Add Sauce – Once the sauce is added, simmer for 3-4 minutes for the garlic and ginger to mellow out and to thicken the sauce.
  6. Combine and Serve – add broccoli and cooked ramen back to the pan and serve garnished with sesame and chives.

Common Questions

Can I substitute broccoli?

You can get creative and change up the vegetables. Try subbing broccoli for snap peas, or chopped asparagus.

Can I make this in a wok?

Yes! You can use a large heavy skillet or a wok to cook this stir fry. You will still need to cook the ramen separately.

Can I use dried ginger?

Fresh ginger will give you the best flavor and we highly recommend using it for the best results. In a pinch, you can substitute 1/4 tsp ground ginger for 1 tsp grated fresh ginger.

Can I substitute the sesame oil?

We haven’t found any other ingredient that substitutes well to give you the same flavor as sesame oil. This is a critical ingredient for those Asian takeout flavors we all love.

Make-Ahead

  • To Refrigerate: cool the stir fry to room temperature then cover and refrigerate for 1 to 2 days
  • To Reheat: Add a sprinkle of water and toss over a warm skillet until heated through or reheat in the microwave until steaming hot. Adding a little water will keep the stir fry moist and saucy.

Beef and Broccoli Ramen Stir Fry is a meal in itself with saucy Ramen noodles, tender beef, and plenty of broccoli. This homemade stir fry is an easy 30-minute lunch or dinner.

Ingredients 

Servings: 4 people as a main course

Beef and Broccoli Ingredients:

  • 6 oz instant Ramen noodles, (two 3 oz packages), seasoning discarded
  • 1 lb broccoli, cut into 6 cups florets
  • 2 Tbsp olive oil, divided
  • 1 lb flank steak, or top sirloin, thinly sliced
  • 2 tsp sesame seeds, optional garnish
  • 2 Tbsp chives, optional garnish

Stir Fry Sauce Ingredients:

  • 1 tsp fresh ginger, peeled and grated
  • 3 cloves garlic, grated (2 tsp)
  • 6 Tbsp low sodium soy sauce
  • 1/2 cup warm water
  • 3 Tbsp light brown sugar, packed
  • 1 1/2 Tbsp corn starch
  • 2 Tbsp sesame oil
  • 1/4 tsp black pepper

Instructions

  • Start by cooking ramen so it is ready when you need it. Fill a medium saucepan with water and bring to a boil. Add ramen noodles and cook 3 minutes, breaking them up with a spatula. Drain and rinse with cold water and set aside.
  • In a large measuring cup or bowl, combine all sauce ingredients and stir to dissolve the sugar.
  • Place a large heavy skillet over medium heat. Once skillet is hot, add 1 Tbsp oil, 6 cups broccoli and 2 Tbsp water. Cover with lid and sauté for 4 minutes, stirring occasionally until crisp tender. Transfer broccoli to a separate dish.
  • Increase to medium high heat and add 1 Tbsp oil. Add beef in a single layer and sauté 2 minutes per side or just until cooked through then reduce heat to medium low.
  • Re-stir the sauce if it has separated and add to the pan and simmer 3-4 minutes, stirring occasionally. It will thicken. Return broccoli to the pan along with the cooked noodles and stir or toss to combine and coat the noodles in sauce. Add 1 to 2 Tbsp water to the sauce to thin if desired. Serve garnished with sesame seeds and chives.

    When the number of portions is changed (feeding 6 people in lieu of 4) the first part of the ingredients changes accordingly. However, the measurements in the text of the recipe card doesn’t change. For example, the number of packets of ramen. For 4 people it is 6 oz of noodles, which is 2 packets. For 6 people it is 9 oz of noodles, which should be 3 packages of noodles but it still shows as 2 packages. It happens for the cups of broccoli and the tsp of garlic in the recipe card as well. It’s just a small thing but I had to double check my portions when I realized the discrepancy.

    Hi – made this last night and it went over well. Whenever I come across a recipe that calls for sesame oil I am always wondering whether I should be using toasted sesame oil or not. I have both, and they taste different… what do you recommend?

      Hi Kurt! I will specify in the recipe card which one to use, This is regular sesame oil. Toasted sesame oil is meant to be drizzled on top as a finish and not for cooking/frying.

        Hi, I was confused, too, especially because the sesame oil on the recipe card is a link to *toasted* sesame oil on Amazon. I can’t find untoasted sesame oil in the stores anymore. What other oil would you recommend in a pinch, pls? I have canola or could easily get peanut oil. Thank you for the recipe- can’t wait to try!

          Hi Alice, sesame oil has a pronounced flavor that is hard to replace. I suggest using this plain sesame oil. Even if you used toasted, it would still be ok here. Sorry I didn’t realize that link was pointed to a toasted oil. Sometimes products are switched on Amazon without notice. I have changed the link now.

      Hi Sabrina! We haven’t found any other ingredient that substitutes well to give you the same flavor as sesame oil. This is a critical ingredient for those Asian takeout flavors we all love. I worry that the rice vinegar would change the taste or add too much sourness to the dish.

    Just want to say the feature of searching recipes by ingredients is awesome- I stumbled upon this when searching for all things beef. Used regular spaghetti, and frozen broccoli/cauliflower- didn’t have fresh broccoli on hand. It turned out DELICIOUS- adding this to my meal rotation!

    This looks great ~ definitely going to try it (after grocery shopping!).
    The “servings” number always makes me laugh (not just this recipe, ALL of them) ~ with just 1 lb of meat, 1 lb of brocolli, and 2 ramen packets, this recipe would MAYBE feed my 2 boys (18&20 yo, over 6′ tall, work hard all day; only 2 still home of 8 so I’ve been doing this a while :^)

    I seem to be the odd one out. Just didn’t care for this. Simple, yep. All the right ingredients, yep. Sadly it just didn’t taste that exciting. Too sweet and lacking salt. And for goodness sake, never add cornstarch to warm water. I followed the directions and it promptly clumped as I feared it would. Sigh.

        Hi Olga! Yes, that would be fine. You’ll have to experiment with the amount used. Per information I found online, For every 1/4 teaspoon of ground ginger, use 1 tablespoon of fresh-grated ginger in recipes. This works in the opposite direction as well.

    Loved this! I had leftover pork roast, so I used that instead of the steak. I’m sure steak would be better!

    Next time I will stir the broccoli in the sauce before adding the noodles. Noodles soaked up all the sauce! I’m going to add red pepper flakes next time too.

    My husband and I absolutely love this dish. While I like it just the way it is, my husband would like it to have a little more heat. There are lots of spices to chose from out there. What would you suggest to kick it up a notch?

      Hi Marisa, we haven’t found any other ingredient that substitutes well to give you the same flavor as sesame oil. This is a critical ingredient for those Asian takeout flavors we all love.

      Not sure how easy it is to find (we get it at a local apple orchard) but in a rush I use apricot grilling sauce instead of homemaking a sauce. It still gives a great asian flavor.

    I made this for my husband and he loved it! He said, “I ate like a king!” It was fun and easy to make. The only think different was that I marinated the meat in some soy, ginger, garlic, cornstarch and hot pepper flakes. The meat here can be tough a bit so I like to marinate it. I only had a thick dark soya sauce on hand. I wasn’t sure if this had a stronger flavor so i used less. I would like to know the exact sesame seed oil you use. I think there is roasted and unroasted. I have the roasted one and it smells fairly strong. I didn’t want to ruin the recipe with too strong of a sesame seed oil flavor so i used less. Thank you so much for your time and effort to share this recipe.!

    All your recipes are amazing. You are my go to above all cookbooks for dinners! This recipe is amazing!! I did not add the brown sugar and substituted the water for beef stock. I added two packets of the beef ramen seasoning as well and mixed with a little beef broth. It all thickened up nicely and the family devoured it! I also at the end added a little mixed cabbage for a little crunch. This will be a regular for us!!!

    I have had this pinned for so long….finally got around to making it….boy is it yummy! And so quick to make! I only had frozen broccoli so I threw it in with the Ramen to cook and added the seasoning packets to add flavor….drained it and added it to the beef and sauce…a family favorite for sure!     Would this recipe freeze well? I want to make it ahead and then have in the freezer for future meals.
    I used flank steak ($15.99 per lb!) but it was somewhat chewy even though I sliced it very thinly. I expected that cut of beef to be more tender. Butcher suggested skirt steak but it was the same high price per lb. so I used flank as in the recipe.

    This is delicious. I have made it numerous times and the family loves it over rice instead of using Ramen noodles. The sauce is wonderful. I normally add mushrooms, bamboo, water chestnuts, baby corn, bamboo, bean sprouts, and broccoli plus I triple the sauce and add a little chili hot oil/peppers to it (family preference). The meat is super tender and so good but I do thinly slice it too (another family preference).

    Everyone likes it with the Ramen noodles as written but they just prefer rice over Ramen noodles.

    I’m super excited to try this recipe! I’m not big on sweetness in dinners though. Could I omit the brown sugar or at least use less? I know it probably helps thicken the sauce some but do you think the corn starch would be enough? Thanks!

      I agree with Natasha – it’s not a sweet sauce. I used raw sugar instead of brown sugar which reduced the amount of sweetness even more and worked just as well.

    I have tried several of your recipes now and none of them have disappointed. In fact, your site is now where I go first when I’m looking for something new. I have a super good recipe for beef and broccoli that I have made for years but it has tons of ingredients and takes a very long time to prep and this was a VERY close in taste. Sooo yummy at a fraction of the time! That’s a no brainer!

    We are an “al dente” type of family when it comes to veggies and noodles so I only cooked the ramen 2 minutes and the broccoli 3 minutes since I knew it would continue to cook a little when added back into the meat and sauce. It was PERFECT for us!

    We also found this noodle loving family was left with only beef and broccoli for leftovers so next time I’ll add another package of ramen and make 1 1/4 the amount of sauce. I’ve calculated the approximate amount for each ingredient in case anyone else is interested in doing the same.

    For 1 1/4 the amount of sauce to satisfy the extra pack of ramen (prep as listed in recipe)…
    1 1/4 tsp ginger
    4 cloves garlic
    7.5 TB
    10 TB (or almost 2/3 cup) of warm water
    3.75 TB light brown sugar
    1.75 TB corn starch
    2.5 TB sesame oil
    1/2 tsp black pepper – we like pepper 😉

    Also, if anyone makes the same silly mistake as I did and forgets to cook the broccoli FIRST before the beef, I just steamed the broccoli in my microwave steamer for 3 minutes and added it in at the end according to recipe. Worked great!!

    AND…a tip to help when wanting to slice beef very thin…put it in the freezer for a little while until it is more firm (not frozen). Makes slicing thin a breeze.

    This will be a regular on our meal rotation, for sure. Sooo many recipes on Natasha’s Kitchen I can’t wait to try! Homemade corn dogs and egg rolls is way up there on the list.

    Made this last night. In order to get incredibly tender meat, I used the velveting technique. I also cut an onion into small wedges and sauteed it with the beef. The sauce was very tasty and the noodles cooked just perfectly at just under 3 minutes. However, the leftovers do not keep or reheat well. The ramen noodles were mush by the morning.

      Hello there, thanks for sharing your comments and feedback with us. To reheat, add a sprinkle of water and toss over a warm skillet until heated through or reheat in the microwave until steaming hot. Adding a little water will keep the stir fry moist and saucy. I hope that helps.

    I made this for dinner last night and we absolutely loved it! Question for Natasha — I love noodles and thought about adding more the next time I make this. Would I need to adjust the sauce/make more sauce? Thanks so much for your wonderful recipes. I make 2-3 of your recipes a week 🙂

      You are my favourite on line cook. This recipe was absolutely delicious. My husband doesn’t like broccoli and the asparagus from my garden is going strong right now so I cut into bite sized pieces and used it instead. Worked great! Thank you!

    Hi Natasha that recipe looks great waiting to get in the mood to try.
    Could you please provide the corresponding temperatures on an electric skillet for eg med, med low, med high etc. thanks

        Since I was only feeding one, I had this meal for 3 nights. It was delicious….even the second and third nights! Definitely will make it again but with flank steak.

      They use a method called “velveting” for chicken or beef. Google it for the ratio of egg whites and cornstarch.

    This was delicious. I added an extra step and velveted the beef in egg whites, baking soda, corn starch and bit of soy sauce. It is a game changer in the texture of the beef or for any meat in a stir fry. I watch all your vids when they come in my inbox and love your recipes but I’ve never seen you do this. If you haven’t already, maybe an idea for a new video. Thank’s for the recipes.

    Any chance you will put out a cookbook? We print our favorite recipes and put them in a binder but a cookbook would be great. Since the pandemic we started trying our favorite restaurant entrees and have gotten pretty good at preparing them. We make one of your recipes once a week and we love them. Thank you for the step-by-step videos. They are very helpful.
