This mushroom soup boasts 2 pounds of fresh mushrooms, so if you’re a mushroom lover like myself, this soup is for you. It is so simple to make and everything is in a light cream broth so you still get some creaminess without the heaviness of many cream soups.

This recipe was shared with us by Olga P., one of the ladies in church. She had made it for the construction crew while our church was being built and the guys raved about it so of course we asked her for the recipe :). 

Easy and Hearty Mushroom Soup Recipe from @natashaskitchen

Ingredients for Mushroom Soup:

8 cups water
2 cups chicken or vegetable broth
3-4 medium potatoes, peeled, diced and rinsed
2 lbs mushrooms, sliced
2 cups half & half (or 1 cup milk + 1 cup heavy cream)
4 Tbsp flour (add 5 Tbsp if you like a creamier soup)
1 medium onion, finely diced
1 large carrot, grated
3 Tbsp butter
2 Tbsp mushroom seasoning (or 1/2 Tbsp Mrs. Dash, or vegetable seasoning *see note)
Salt and black pepper to taste
1/3 cup chopped parsley or dill or both

Mushroom Soup Recipe

*Note: Olga P., who shared this recipe with me, uses a mushroom seasoning that she purchased at the European market. We knew that not everyone may have access to it, so we tried using Mrs. Dash seasoning instead and it was still very tasty. YOu can also sub with this Mushroom Seasoning, or this Mushroom Soup Seasoning, adding it to taste. 

How to Make Mushroom Soup:

1. Add potatoes to a pot with 8 cups water and 2 cups stock. Bring potatoes to a light boil and continue to cook for about 10 minutes or until potatoes are almost cooked. Meanwhile saute sliced mushrooms over medium high heat until they are lightly browned and softened. Add mushrooms to the soup pot and continue cooking 5-8 min.

2. Meanwhile, heat the same skillet over medium/high heat. Add 3 Tbsp butter along with diced onion and grated carrot, and saute until golden (8-10 min) then add to the soup pot. For picky eaters who don’t like the onion texture, you can puree the sautéed carrots and onion in a blender or food processor.

3. Whisk together 2 cups half and half and 4 Tbsp flour until smooth. Add cream mixture to the soup. Add seasonings to taste (If not using mushroom seasoning, we recommend the following seasoning combination: 1 Tbsp salt, 1/2 tsp pepper, and 1/2 Tbsp Mrs. Dash). Stir in 1/3 cup chopped Parsley or Dill or a mix of both. Bring to a boil for a few minutes, check potatoes for doneness and remove from heat.

This mushroom soup boasts 2 pounds of mushrooms, so if you're a mushroom lover like myself, this soup is for you. It uses a light cream broth so you still get some creaminess without the heaviness of cream soups.

Total Time: 50 minutes

Ingredients 

Servings: 8 -10 servings
  • 8 cups water
  • 2 cups chicken or vegetable broth
  • 3-4 medium potatoes, peeled, diced and rinsed
  • 2 lbs mushrooms, sliced
  • 2 cups half & half, or 1 cup milk + 1 cup heavy cream
  • 4 Tbsp flour, add 5 Tbsp if you like a creamier soup

    Would Vegeta work for the seasoning, in this soup? I don’t know what seasoning you used and if it is available in the States. I know that Vegeta is popular in Eastern Europe.

          Hi Xenia, it looks like that product got discontinued. This looks like it would be a good substitute Mushroom Seasoning substitute. I would suggest adding it to taste. We have also had great results using Mrs Dash seasoning.

    As someone who grew up on Campbell’s Cream of Mushroom soup, this recipe was a revelation.
    Here are my Quarantine Cuisine modifications.
    I had a freezer full of veggie/mushroom stock, so I used 9 cups of that. My mushrooms were huge, but that turned out to be good when sliced.
    I’m lazy, so I sauteed the onion and carrot in butter and then threw in the sliced mushrooms and a Tbl of sherry and when everything was golden, threw it all in the pot.
    I used instant mashed potatoes instead of flour (potato flour would work I bet, but I didn’t have any).
    I substituted cream for the half-n-half because my husband prefers cream and it’s what I had.
    For seasoning, I had neither Mrs Dash nor any of the mushroom seasonings, so I used a pinch of herbes Provencale, pepper, sel gris with herbs, and just a dash of sweet paprika. I had a big bunch of dill, so I chopped it from the stem end and used that.
    I served it with caraway, sour cream and a sprig of dill.
    It’s delicious, and I bet improves upon reheating.

    I love this soup, I like to add chicken. I end up adding a lot more seasoning and salt but next time, I’ll have to make a trip to the russian store to try it out with the mushroom seasoning packet.

      Hi Heather, We have had many great reviews stating how flavorful it was. Did you possibly alter the recipe in any way? If you prefer the beef flavor I’m assuming using a beef broth base would assist with that.

      Hi Julie, I haven’t tried that but that would be a great experiment! I love the flavor of dried mushrooms but they do have to be cooked for awhile in order to soften properly so I would suggest cooking mushrooms in the water and broth until mushrooms are softened then proceed with the rest of the recipe.

    Hello, I’m trying to watch my carbs intake and wondered if I can omit potatoes and instead of regular flour can I use coconut or almond? Can’t use cornstarch eather to make it thicker..Thank for wonderful recipe! And can you please recommend any of your recipes that would have low carbs? Thank you!♡

      Hi Tanya, I really have not tried those substitutions so I can’t say for sure if they would thicken the soup the same way. Sorry I can’t be more help, but without testing that, I would only be guessing. If you test it out, let me know how it goes since someone else may have the same question 🙂

      Hi Cheryl, I haven’t tried that substitution but it might be worth experimenting if you are looking for a lighter soup. If using evaporated milk (since it is less creamy than cream), I would suggest another tablespoon of flour to help with thickening the soup.

      Hi Patricia, you could add vegeta seasoning, but keep in mind it does have some msg-like ingredients which is why we prefer Mrs. Dash.

    Delicious! I made a bit diffeerent in regards to the mushroom, I used Straw mushrooms, so added added them potatoes when near done, spooned out soup for my mother in law (no dairy) and proceeded with the cream, 100% spot on perfect, thank you again for a flawless recipe 🙂

      Rosalina, you are absolutely right. That is why we don’t buy that product but the original recipe author used it so I included it and left a note about what we used as a substitution. It’s a great tasting product but yes, you’re right about it containing not so great ingredients 🙂

    So far, this soup is the best mushroom soup I’ve tried! My husband loves it, and he requests this soup every time I ask him what kind of soup he wants..     I tried this soup tonight. It was Ahhhh-MAZING. I love how quick and easy it was to make. I threw everything together after coming home from work. My husband and I wolfed down two bowls. Even my picky eater 19 month old son ate a decent amount. This is definitely going on the “family favorite” list!

    This is the first recipe I have made from the website. My husband was longing for mushroom soup from his childhood. I had never made it before and did this version due to my Polish heritage. Cooking this reminded me of home. My husband loved it!!! Said it was better than his mothers lol. Thank you for a delicious recipe!

    I have a quick question!
    I have been reading your recipes and can’t wait to try most (all) of them! But I’ve noticed that you use chicken broth a lot, would you please tell me how you get yours? and where to buy it? or if you make it at home? I have no idea!

      I buy the better than bouillon chicken paste at Costco. It’s reduced sodium and organic and the best price is at Costco. It’s very economical because you just mix it with hot water to make as much as you need and you store your little jar in the fridge so it doesn’t take up as much space as cartons of broth.

    Hello, I stumbled upon your website few weeks ago and used some of your recipes and my husband already has favorites from the recipes i found on your website. Thank you so much for taking your time to share with all of us wife’s that want to keep our hubby’s tummies happy 🙂 !
    Also, can you tell me what is the difference between the Mushroom soup recipe and the Mushroom potato soup recipe.. Looks like they are close and both have potatoes,.

      I’m so glad you are both enjoying the recipes! 🙂 The mushroom potato soup is a little heartier and has less liquid – it’s a little more like a stew. The mushroom soup has twice the amount of mushrooms and makes a bigger pot. I like them both, but I think the mushroom potato soup is a little more popular. Click here to view the recipe :).

    This soup is very delicious, the only down side to this soup it’s to greasy. 3 tbsp of butter is WAY to much. I stopped using the butter and switched to avocado oil, healthier and less fattening. But overall delicious. Will be making some more in the near future.

    This one is a keeper, just made it and turned out so good. I did not have any mr dush so I blended some dried wild picked mushrooms into a fine powder and used that instead 🙂 very yummy, thanks for a great recepie and blessing on your delivery

      Hi Stacey, to be honest, I haven’t tried freezing it so I’m not sure if it will affect the consistency. I imagine it would be ok, but I just haven’t experimented to give you a concrete answer.
