My sister Anna came up with this recipe and first introduced me to it when she sent me a pot of soup after our first child was born over 10 years ago. We’ve been making it ever since and even made a Creamy Chicken Soup version!
Chicken Noodle Soup Ingredients
This Chicken Noodle Soup calls for traditional ingredients and a slight twist on the seasonings.
- Chicken: The secret to super tender chicken without crazy long cooking times is using chicken thighs! You can use boneless or bone-in chicken. Thighs also provide extra flavor and don’t dry out like chicken breast does.
- Broth: Our Homemade Chicken Broth is a delicious addition to this soup and provides a rich flavor. However, if you are in a pinch a low-sodium store-bought broth can work.
- Vegetables: Onions and celery sauteed together provide the traditional base for chicken noodle soup flavor. Diced carrots are another traditional vegetable. You can also add any other fresh or frozen veggies you would like.
- Seasonings: Dill and freshly-pressed garlic brighten the flavor palette and I love adding Mrs. Dash (no-salt seasoning).
Pro Tip: When sauteing ingredients for soups, use oil in the pan instead of butter. Butter will solidify when you refrigerate the soup.
The Best Noodles for Soup
I love using nice spiral noodles or egg noodles in my chicken noodle soup. These noodles plump up nicely and make the soup feel really hearty compared to other noodle varieties. Make sure you don’t overcook your noodles, especially if storing the soup or they will get mushy.

This soup is so simple and easy to modify for different food intolerances. To make it gluten-free, just sub your favorite gluten-free noodles.
Does Chicken Noodle Soup Cure a Cold?

How to Make Easy Chicken Noodle Soup
This easy chicken soup takes about 30 minutes to make. The SECRET to amping up the flavor happens in the last 2 minutes of cooking. Adding dill and a pressed clove of garlic is what my Mother does for nearly all of her soups and I have adopted this in my own kitchen. It is a brilliant and easy way to make your chicken soup taste fantastic!
- Cook the Chicken: In a large soup pot, combine water, Chicken Broth, and salt. Bring to a boil then add chicken thighs and cook uncovered 20 minutes.
- Saute Veggies: In a large skillet saute onion and celery in oil until golden then add to the soup pot
- Add Noodles and Veggies: Add 1/2 lb pasta and sliced carrots to the pot and cook 15 min at a low boil.
- Shred Chicken: As the pasta cooks, remove thighs from the pot and shred with forks (discarding bones and fat), then add the chicken back to the pot.
- Season: In the last 2 minutes of cooking, add Mrs. Dash, dill, and press in 1 garlic clove, and add salt to taste. Simmer another minute then turn off the heat.
Storing Leftover Chicken Noodle Soup
We love making a big pot of chicken soup and enjoying it throughout the week. Keep in mind, if the soup is stored too long, the noodles will turn mushy. If storing longer than 1-2 days, it’s best to store the soup and the noodles separately and recombine right before serving.
- Refrigerated: Cool the soup completely and store covered in the refrigerator. Once noodles are in, the soup should be enjoyed within 2 days. The soup will keep up to a week if you store the noodles separately and combine when reheated.
- To Freeze: If you plan to freeze the soup, wait to add the noodles when you reheat the soup. Chicken soup can be frozen up to 3 months.
- Reheating: Recombine noodles and soup in a pot or microwave-safe bowl and heat to the desired temperature on the stovetop or in the microwave. If using uncooked noodles, reheat on the stove until the mixture boils and noodles are tender.

Easy Chicken Noodle Soup Recipe
Ingredients
- 4 chicken thighs, skins removed (bone-in or boneless)
- 8 cups chicken broth, we used low sodium
- 6 cups water
- 2 Tbsp olive oil, to saute vegetables
- 1 medium onion, finely chopped
- 2 medium celery sticks, finely chopped
- 2 carrots, sliced into rings
- 6 oz rotini pasta
- 3 Tbsp fresh or frozen dill
- 1 tsp Mrs. Dash, or your favorite salt-free seasoning
- 1 Tbsp sea salt, or to taste
- 1 garlic clove, pressed
Instructions
- In a large soup pot, combine 6 cups water with 8 cups chicken broth and 1 Tbsp sea salt. Bring to a boil then add chicken thighs and boil partially covered 20 min while you prep the vegetables, skimming off any foam that rises to the top.
- In a large skillet over medium/high heat, add 2 Tbsp olive oil and sauté onion and celery until softened then transfer to the pot.
- Add pasta and sliced carrots to the soup pot and continue cooking for 15 min at a low boil or until pasta is at the desired softness.
- While pasta is cooking, remove chicken thighs from the pot and use either forks or your hands to shred the chicken, discarding any bones and fat which should come off easily. Return shredded chicken to the pot.
- Season soup with 1 tsp Mrs. Dash (or your favorite seasoning) and more salt to taste if needed. Press in 1 garlic clove. Finally, add 3 Tbsp dill and remove from heat. Enjoy!

Tasty, and can recommend this recipe! One reminder is to 100% read the recipe amounts carefully. I had dried dill seasoning and saw the 3 tablespoons amount on the recipe, and put that amount in without thinking… The recipe called for fresh dill and not the dried form, which is more concentrate. My soup ended up having way too much dill of course. My bad!

Delicious! 3 of us are sick and I needed an easy chicken soup. I used turkey bone broth that I had in the freezer from Thanksgiving (I’m in Canada so it was just a month ago, not last year), had to make a copycat Mrs Dash, and I forgot to add the garlic but it was still delicious! I over salted a bit so it got a squeeze of lemon juice and good grating of fresh ginger to offset it but I don’t think it changed the flavour significantly. My son’s told me they prefer this to my usual chicken soup (that stung but at least they ate). Thank you!

This recipe is horrible. Noodles turned mushy, there was zero flavor, and I have to throw the whole thing out.
Heather, it wasn’t mushy for us and we’ve made this recipe a lot of times now. Make sure you don’t overcook your noodles, especially if storing the soup or they will get mushy.

Hi Geraldine! If you plan to freeze the soup, wait to add the noodles when you reheat the soup. Chicken soup can be frozen for up to 3 months but the noodles do not freeze well. I assume you could provide the noodles dry with instructions to add them when reheating the soup.
Can you clarify the ratio of broth to water please? In your video you state 10 cups water + 4 Cups broth needed, but your recipe says 8 cups broth and 6 water….this is a big difference.

I didn’t have fresh dill, so I subbed Mrs Dash for a half teaspoon of Dill Pickle Seasoning, and it taste wonderful! Also added a smidge of umami seasoning to help give it extra depth. Great recipe, thank you!

This is my go-to recipe for chicken noodle soup ever since I found it! I’ve made this many times, including the time my mum had COVID, and it never fails! I haven’t been able to get my hands on any dill but even without the dill and Mrs Dash seasoning it’s good! Definitely recommend using chicken thighs and rotini pasta, always makes the soup tastes better.

This recipe is FANTASTIC! I’ve always been fussy with how I like chicken soup, and the only real winner up until now has been my best friend’s mom’s soup (which is handed down from their Polish grandma and I’m not privy to the actual recipe,) so I’m very happy to say that this will be my go-to recipe from now on!
I followed the recipe exactly; the only thing I added was a couple sprigs of fresh thyme and parsley, as well as a small bay leaf (removed when chicken was added back in.) I also used dried dill and cut the amount to 1 tsp. I didn’t have rotini pasta on hand so I used pennette which was just fine.
I loved it, my husband loved it, and I’m excited to share leftovers with family!

I like how meaty the soup was and I think I would rate it a 10 except for the dill. You said 3 tbl of fresh dill. I added 2 tbl and it made it very picklesque. Way too much dill. It overrode all the other flavors. I will make it again but maybe try only 1 tbl of dill.

Wow! First time in all my years, I made chicken soup and it turned out fantastic! I used Remes egg noodles, which was the only complaint my son had because he likes my homemade noodles. I saute’ the onions, celery with the garlic together. I also used frozen carrots and dry dill weed. I did not have enough chicken broth (7 cups) so I added 3/4 c of beef broth and another cup of water. I didn’t want to make a trip to the store lol! I feed homeless ppl at my home and this costs me a whole total of $23 and some change. This made just enough to feed 5 ppl twice & still have a bowl or two left for lunch today! Great recipe!

I have made this twice now. First time I didn’t have low sodium chicken broth so I just used regular and it was amazing, we were obsessed. Second time around I decided to get some low sodium chicken broth and give it a go. I felt like I was seasoning forever to try and get it to taste good. Much better the first time.

LOVE LOVE LOVE you and your recipies!! I found a hack that really works for chopping onions without tears and burning eyes! I use it all the time. Simply pour some plain white vinegar on a few paper towels and wipe down your cutting board right before you start chopping. That’s it! I’ve only used this method with wooden chopping boards. Don’t know if it works on others made of different materials. Try it! Also chopping some of the celery tops in addition to the stalks gives an awesome flavor. I believe it’s the best, most flavorful part of the celery!

chopping onions, set a bowl of water near where you are chopping. i have read that it is the water in your eyes that draws the onions so the bowl of water is supposed to replace the eye moisture. i do not have that problem so can’t say if this works but, can’t hurt to try it

Hi Rosi, the recipe serves 10 people. Sorry, I do not the servings in cups. You may be able to weigh the soup when it’s done and then divide that by 10. That way you’ll at least know how many ounces or grams to fill your bowl to get 1 serving.

Thank you so much for this recipe. I made it for someone in hospice care and their family. It was so easy to make and they absolutely loved it. The only changes I made to the recipe: 1) I didn’t have Mrs. Dash, so I used poultry seasoning plus a little extra thyme instead 2) my garlic bulb seemed small, so I used 3 small cloves instead of just 1; and 3) I used egg noodles instead of rotini.
It’s easily the best chicken noodle soup I’ve ever made, and it felt good to bring smiles to a family going through the unthinkable. Thank you!

I didn’t have chicken stock so just used a chicken bouillon powder to make the stock, I dislike the taste of celery so left that as well, still tasted amazing. I did add some corn for an added vegetable.

I have a great chicken soup recipe- while the baby carrots,celery and onion are cooking in butter in large pot add about 1 tablespoon of Bells Seasoning- and also 1 jar of low sodium Better than Bouillion- I add long grain wild rice ( 1/2) a box to simmer and rotisserie chicken at the end- absolutely delicious! But I want to try yours too- I am a staunch follower of yours! My friend Deb gave me the recipe

I got confused there as well. Your video says 10 cups water and 4 cups broth but the recipe says 6 cups water a 8 cups broth. Which one is better to use?

Is it possible to make this recipe with cooked shredded chicken ? Would I still have to add 6 cups of water to the 8 cups of chicken stock ?
HI Rebecca, that should work great but I would probably use a little more chicken broth and a little less water since you won’t be adding to the flavor of the broth by adding cooked rotisserie chicken.

Love this recipe!!!! And wet a paper towel and just place it next to the onion you are chopping. Onions make you cry because the fumes are drawn to moisture (your tear ducts) if you have moisture near it, the fumes will never make it to your eyes!

Except for using four boneless, skinless chicken breast halves instead of thighs, I made this exactly according to the recipe. Wonderful for dinner on a chilly evening along with a grilled cheese sandwich! Next time, I might reduce it to three chicken breasts, try butter instead of olive oil to saute the vegetables, and try basil instead of dill.

Trick for chopping onions is to wet a paper towel next to chopping. The chemical is absorbed into the paper towel.

I wore swim goggles when I would chop onions…then a friend told me how to wet a paper towel, wring out a tiny bit of water and leave it crumpled up next to the onion you are chopping up…it really does work. The fumes goes into the wet paper towel, not your eyes.

Generally speaking you always use 1/3 as much of a dried herb when using that instead of the fresh which is what I did here. You can always add more if you taste and it’s not enough.

That was delicious!! My husband said it was the best soup he’s had! Chicken felt apart when we went to shred it. We added extra garlic and dill as we love those particular flavors. This dish is a keeper for sure!

My family absolutely loved this delicious soup. I sautéed three slices of bacon with the onions and celery and I also added bok choy. Didn’t have garlic or dill and it still turned out incredibly delicious!

Agree with that, I recently had to start wearing my glasses (getting older and my eyes are dryer now) and I told my husband that now I cry while dicing onions. I really miss my contacts!!!
To NOT cry when peeling onions try pluging your nose with tissue or whatever you can think of as long as you don’t smell the onion you won’t cry!

I find that if my yellow onions are chilled they are not so pungent. I just put them in the refrigerator a couple hours before I slice/chop them. It makes a huge difference! Sometimes, when I’m in a hurry, I stick them in the freezer — not to freeze but to give a good chill. Let me know if it works for you. Make sure they’re cold!!!!

Hi, chicken breast isn’t quite as tender as chicken thighs. If you can get your hands on chicken tenders, that would work better, but you can make chicken breast work. With chicken breast, it would be better to cook longer (30 minutes or more).
Nice and easy. I like to take a whole chicken and roast in oven until done. I take it and put it in the water with bay leaf salt and whole peppercorn and simmer for 30 minutes. Let in cool till next day. drain some fat and shred whole thing. Use celery, onion and carrot all thick cut put in soup add parsley and simmer till done add chicken. serve over wide egg noodle. the best

I trick would be to blend up the onion and celery and make a paste, or shred it so it won’t be noticable. 😉
I am not a fan of celery I added Bok choy and some onion powder. I also added some better than bouillon roasted chicken. It was delicious♡

Love homemade chicken noodle soup. My favorite herb to add is tarragon. Give it a try! You’ll love it! I use a Costco rotisserie chicken, boiled off after indulging it for a couple meals (just my husband and I), however, our 17 yr. old grandson loves it! I have to figure out how to get it to him when he goes to college! To say I get my money’s worth from one chicken is an understatement!

I have a hard time with onions also, so I just keep a small fan in the kitchen and set it on low and a couple of feet away from the cutting board and it doesn’t seem to bother my eyes any more. Made your Chicken Lasagna two days ago and did your soup tonight both easy and yummy!

Hi Tanya, you can omit both if you don’t have them. We prefer it with both. The fresh dill does add more flavor, but you can omit it or replace it with parsley.

Hello Tay, you would use less dried than fresh. For example, if a recipe calls for 1tbsp fresh, I will use 1 tsp dried. I hope that is helpful.

What a great, easy recipe! My family loves it! I didn’t have the dill or Mrs. Dash the first time, and the soup still turned out delicious. Hi Sarah, salt and pepper work great. I have forgotten to add Mrs Dash in the past and as long as you add that dill/garlic at the end, it will have plenty of flavor.
