Cheeseburger Sliders (Easy, 30-min Recipe)

Cheeseburger Sliders are juicy, cheesy and beefy – everything we love about classic burgers! These sliders are quick and easy, make-ahead, and reheat really well so they’re perfect for meal prep or gatherings. Watch the video tutorial and you’ll be craving them until you make them.

We made these Cheeseburger sliders for our daughter’s 5th birthday party and we loved not having to stand over the grill to make traditional burgers. I made them earlier in the day which was amazing and took the stress out of making food for a large crowd. The kids were crazy about these cute little hamburger sliders and they disappeared so fast!

P.S. You can easily cut this recipe exactly in half (keeping the baking instructions the same) to feed a smaller family.

The Best Rolls for Sliders:

To make these burger sliders, use a 24-pack of dinner rolls (or 2 smaller 12-packs). We love the King’s Hawaiian Roll brand for making sliders and our favorite flavors are original Hawaiian Sweet and Savory Butter. You can also use homemade dinner rolls.

The Best Ground Beef for Cheeseburger Sliders:

Stick with lean ground beef – either 90/10 (10% fat content) or 93/7 (7% fat content). You can use ground beef with a higher fat content if that is what you have on hand since you will be spooning out the extra fat and liquid.

Tips for Making Hamburger Sliders:

  • Spoon out the excess fat and liquid release from the beef so you don’t end up with soggy buns.
  • Lining the bottom buns with cheese and covering the beef with cheese seals in the juiciness of the beef without making the buns too moist.
  • Apply the sesame seeds as soon as you brush on the butter and they will stick better to the buns.
  • Bake uncovered so the rolls don’t sweat and become soggy.

How to assemble sliders with buns, cheese, ground beef, more cheese and topped with slider buns.

Can I Make these Ahead?

Yes! Sliders can be pre-made even a day ahead then covered and refrigerated. If baking from chilled sliders, add an extra 3 minutes or so when baking, or until hot and the cheese is melted.

Sliders also reheat really well. To reheat sliders: microwave each slider uncovered 15-20 seconds or just until the beef is heated through and cheese is melted.

What to Serve with Sliders:

Sliders are so fun because they can be served as an appetizer, lunch, or main course for dinner. We keep it simple and serve sliders with chilled dill pickles. They are also amazing with Baked Potato Wedges. Because these have the classic profile of cheeseburgers, try dipping them into homemade burger sauces, or use your favorite condiments like ketchup, mayo, and mustard.

Ingredients 

Servings: 24 sliders
  • 2 lb lean ground beef, (90/10 or 93/7 fat content)
  • 1/2 Tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 large yellow onion, finely diced
  • 1/4 cup mayonnaise
  • 8 slices medium cheddar cheese
  • 6 oz medium cheddar, shredded (or used more sliced cheese)
  • 24 dinner rolls, (or use 2 packs of 12)
  • 2 Tbsp unsalted butter, melted, plus more to grease baking sheet
  • 1 Tbsp sesame seeds

Instructions

  • Preheat oven to 350˚F. Butter the bottom of a rimmed baking sheet.
  • Place a large skillet over medium/high heat with 1/2 Tbsp olive oil. Add diced onion then 2 lbs ground beef and break up with a spatula. Season with 1 tsp salt, 1 tsp black pepper, and 1 tsp garlic powder. Sautee over medium/high heat, breaking up the beef and cook just until cooked through then remove from heat.
  • Tilt skillet to spoon off and discard excess fat. Stir in 1/4 cup mayo.
  • Cut buns in half. Place bottom half of dinner rolls on buttered baking sheet and line bread with sliced cheese. Spread ground beef mixture evenly over the sliced cheese, using the back of a spatula to square off the edges. Cover the ground beef with 6 oz of shredded cheddar.
  • Place the top of buns, cut-side down, over the burgers. Brush tops with 2 Tbsp melted butter and immediately sprinkle tops with sesame seeds. Bake at 350˚F for 12-15 minutes, or until cheese is melted and tops are golden brown.

      Hi Dianna, the mayo helps bring it all together and adds a creaminess to it. A few of my readers have omitted it, but I recommend trying it with the mayo the first time around. Some of my readers have reported using mustard instead as well.

          Yes, like in the video, bake with the tops on. By uncovered I’m referring to not covering the pan with foil because it will trap in moisture and make the bread soggy. I hope that clarifies it.

      They mean tops on the beef assembled and buttered but don’t cover it in foil. We want the butter to brown the tops and bottom of the bread 👍🏻 I’ve made these over and over and they’re 💯 a hit!

    This recipe is a keeper! When I try a new recipe, typically at least one of my kids doesn’t love it (usually the same kid). These sliders got a thumbs-up from all three AND they asked for the leftovers the next day! I have the ingredients on my shopping list to make again this week because they are requesting it.

    Love these sliders! Super easy to make and a big hit at potlucks! Since the husband doesn’t like mayo (and will refuse to eat anything with it – even if he can’t taste it) I swap out half of the quarter cup of mayo with 1/8 cup of yellow mustard and he loves it!

    We love these!! All 4 of my kids eat them everytime I make them! I make a burger sauce from ketchup, mustard, and maple syrup to dip them in! The only changes I make are: I add ground up dried mushrooms to the meat, and only one type of cheese. These are excellent!

    I made these four Fourth of July and they were a hit!! Super easy and delicious. I followed the recipe but added a little yellow mustard (a tablespoon or two) in with the mayo. I also put caramelized onions on them. Next time I’ll probably leave off the sesame seeds. They look good but a lot of them came off the bun while serving and eating.

    I have a kiddo who hates mayo and mustard. I wasn’t sure what to do. I added a hefty squirt of ketchup. My kid who has diagnosed feeding issues ate 3 of these! He asked me to make them again sometime. I think their small size wasn’t overwhelming to him. (He’s not young, he’s a teen) Thank you for this.

    I made two trays of these for my pool party and they were a big hit. I made them the day before and just put them in the oven before the party and served them in my caserole crock pot dishes. I used Lawry’s seasoning salt.

    Amazing recipe!! I used velveta jalapeño cheese for the bottom and Taco Night Taco Bell shredded cheese for the top and it added a little kick that was just right. I also added my own garlic butter on top and that added a boost of flavor too. Will be adding this recipe to my every week list.

    Wonderful recipe! I’ve made it a few times and it’s always a hit. I don’t have sesame seeds so when I butter the tops I sprinkle on garlic and basil and it increases the flavor!

    Made this last Friday night for my grandson’s 13th birthday party ..storms came through knocked their power out.i made these and and a slab of my ribs . They all loved it. However I sometimes don’t read or look at the photos ha , 😅 I put the sliced cheese on top of the meat then top bun and shredded cheese on top of the buns . But after praying over it all God blessed it they said is was the best! We ate that night in candlelight and lanterns

    I came for the corn dogs and stayed for the sliders and so much more! Absolutley love making these this way. My father makes these individually and when he had these and was told how he was so impressed.
    I added a few tweaks. Used some real garlic and worstershire. And potato rolls.
    Im older and live alone so Im always looking for easy, freezable meals. These are perfect. My freezer is getting well stocked with your reciepe ideas.

    Made for Super Bowl Sunday & was a big hit! I added 3 cloves of garlic to the onions. We used 4 different sliced cheese option: cheddar, colby, havarti, & gouda. Still used shredded cheddar. Delicious & pretty quick to make. Will definitely make again! All our guests wanted the recipe too!

    Made these for a 4th of July neighborhood pot luck “dock party”. They were a huge hit and was one of the first food items to go.     These were such a hit with my kids and mil. I didn’t have sesame seeds or sliced cheese so I used shredded cheese top and bottom and I did melted butter with Parmesan on the tops. I made one batch as directed. The next batch I added a bit of bbq sauce and Worcestershire to the meat as well. Once on the bun I added mustard and chopped pickles. These do not last! Do not think of only making a half batch. Fun and easy as well as delicious.

    I saw a few other recipes that call for using 1 pound of ground beef but the same amount of other ingredients (mayonnaise, etc) so if you’re using 2 pounds of ground beef, should you double the amount of spices & mayonnaise?

    Never leave comments but these were great. Made them ahead of time before a pool party and cooked them at the hosts’ place for mid afternoon snack at her pool. Served with dill pickle slices and Freddy’s sauce. I used cheddar slices and Gouda shredded. There were fantastic!! Not a crumb left! Perfect for 4th of July or church potluck too. Highly recommend

      Hi! How far in advance did you make these? How did you store it? I know the instructions states to chill the sliders in the fridge and add 3 extra minute souring cooking time but I’m wondering how it held up. Thanks in advance!!

    LOVE THEM!!! We have made these 3 times now. The second time I did not dice up the onions small enough and my son didn’t like them. A texture thing for him. I dice them super fine and sauté them well. They are in our meal rotation for sure. In fact, these are what my son and his cousin requested for their first meal home from college.     These tasted great, however the rolls were a bit hard and dry after baking. I used the Hawaiian sweet rolls and baked as directed. Perhaps covering them with foil before baking would keep them softer?

      Hi Jasmine, the mayo helps with the creaminess and texture. Mustard may work as a substitute. One of our readers wrote in saying, “If you want to make it next level, use mustard instead of mayo. It gives the meat an even better flavor.”I hope this helps

    The Hawaiian rolls and mayo really are such a great idea. made this for my husband today. We used swiss (his preferred cheese)and they were fantastic! Had mushrooms on the side! Will definitely make again! Oh, I loved your video also. Thank you Natasha for sharing!

    I hesitated to try these because they sounded too simple to have much taste. Boy was I wrong! These are certainly stress free to make. I made them ahead in the morning and then spent the day out doing errands. I just popped them in the oven when I came home and talk about delish! My husband and mother loved them. I did cut the recipe in half since there are three of us and then reheated the left overs in the micro for lunch! Now on to your grilled cheese~! Since summer is coming we are trying all of your sandwiches and salads.

    Boy O Boy! Those cheeseburger sliders are great! I’ve made them a couple of times and enjoyed them each time. I made them early in the week and had them for lunch with chips and fruit. Couldn’t ask for a better lunch. I love burgers so much I could eat them every day. those sliders are no exception. I will be making this recipe for some bigger occasions than just my lunch.

    What do I do with the Mayo and grease mixture? Does it go in the skillet or the grease I spoon off?

      Hi Jeanie, I’m not sure which mayo and grease mixture you’re referring to? In step number 3, we instruct to spoon off and discard excess fat. Then you will mix the 1/4 mayonnaise into the beef. You can watch these steps in the recipe video. We discard the fat and mix the mayo starting at minute mark 1:09. I hope that helps.

      Pretty clear to me. Step 3, spoon off and DISCARD excess grease, then stir in 1/4 cup mayo. Not sure why anyone would think you stir the mayo into the grease when it’s been discarded.

    I made this for my big family and they loved it. My fiancé is extremely picky and is wary of trying new recipes, but he loved this.     I just love everything you make and these are my absolute favorite way to serve burgers and everyone who eats them LOVES them! I wanted to say that I used this slider technique to make sloppy joes (using your recipe of course!!) and they were absolutely delicious! I made sure to use sliced cheese on top AND bottom buns so they didn’t get soggy and they were perfect. I made them last week and my son already wants me to make them again. Highly recommend.
