Chicken Patties (Easy Chicken Cakes) VIDEO

Everyone loves these Chicken Patties, even the pickiest eaters! They are crisp on the outside with a juicy, cheesy center and it’s a genius way to use leftover Rotisserie Chicken.

We love making these anytime we have leftover chicken and no one would ever guess you used leftovers. The chicken becomes super tender and tasty when combined with the batter and the panko crust seals in the moist center.

Years ago, we shared our favorite Cheesy Chicken Fritters recipe and it was an instant hit. So many of you let me know that it works just as well with cooked chicken so we tested it and loved it, then this Chicken Patties recipe was born. So, thank you for making this recipe happen!

Ingredients for Chicken Cakes:

Chicken cakes are super easy to make. All you need is a rotisserie chicken or cooked chicken meat, a simple batter, mozzarella cheese, and Panko bread crumbs (or use whatever bread crumbs you have on hand). The lemon zest and dill seem insignificant, but they completely transform these chicken patties.

Can I Substitute the Chicken?

  • Canned Chicken – make sure to drain well and use (3) 12.5-oz cans of chicken.
  • Raw Chicken – If you want to use raw diced chicken or even ground chicken, check out our chicken fritters recipe.

The Easiest Way to Shred Chicken:

There are three basic ways to shred the chicken: by hand, with 2 forks and our favorite is to use a stand mixer.

To shred chicken with a stand mixer: This method works best if your chicken is still warm. Break chicken breasts in half and mix on low speed with the paddle attachment until chicken is shredded. Be careful not overmix since it takes seconds to shred. Try this method for Pulled Pork or Crockpot Pulled Chicken.

Can I Make Chicken Patties Ahead?

You can make these ahead up to any point in the process, even to bread them then refrigerate for a couple of days until ready to saute.

The USDA recommends refrigerating cooked chicken or leftovers up to 4 days so it depends on how long your leftover chicken has been in the refrigerator. I cook half of the batch on the first day and sautee a fresh batch a couple of days later.

How to Reheat Chicken Patties:

The air fryer is our favorite method since it makes the crust crisp again. The microwave is our least favorite method because the crust softens but the patties will taste great even microwaved. This is one of the few chicken recipes that we still enjoy reheated in the microwave.

  • Air Fryer – you can re-crisp chicken patties in the air fryer at 350˚F for 4 minutes, flipping halfway
  • Skillet – place on a dry non-stick skillet over medium heat and sautee until crisp and just warmed through
  • Microwave – microwave 30 seconds at a time, or just until the center is warmed through.

How to Serve Chicken Patties:

Just like our salmon cakes, shrimp cakes, and classic crab cakes, we love serving these as appetizers or a light lunch. Here are some creative ways to serve a chicken patty:

  1. Chicken sliders – make a chicken sandwich or sliders on Hawaiian sweet rolls
  2. With a sauce – like the lemon aioli dip that we used for Crisp Zucchini Bites. You could use Avocado Ranch or plain ranch.
  3. Main Course – serve chicken patties as the main protein with mashed potatoes and a fresh salad.

Ingredients 

Servings: 14 patties
  • 4 cups shredded chicken, from 2 large chicken breasts, (16 oz by weight)
  • 2 large eggs
  • 1/3 cup mayonnaise
  • 1/3 cup all-purpose flour
  • 3 Tbsp fresh dill, finely chopped (or 1 Tbsp parsley)
  • 3/4 tsp salt or to taste
  • 1/8 tsp black pepper
  • 1 tsp lemon zest, plus lemon wedges to serve
  • 1 1/3 cups mozzarella cheese, shredded
  • 2 Tbsp olive oil to saute, divided
  • 1 cup Panko bread crumbs

Instructions

  • In a large mixing bowl, whisk together: 2 eggs, 1/3 cup mayo, 1/3 cup flour, 3 Tbsp dill, 1/2 tsp salt, 1/8 tsp black pepper and 1 tsp lemon zest.
  • Add in shredded chicken and 1 1/3 cups shredded mozzarella then stir until chicken is well coated in batter.
  • Cover the bowl and refrigerate the mixture at least 30 minutes (this will help with forming patties). Use a trigger release ice cream scoop to divide into 12-15 cakes then form into 1/2-inch thick patties. Dip both sides in Panko crumbs.
  • Place a large non-stick skillet over medium heat. Add 1 Tbsp olive oil and half of the chicken patties. Sauté for 3-4 minutes per side until golden brown, adding more oil as needed. Repeat with remaining patties.
  • As soon as patties are off the heat, sprinkle with salt and squeeze fresh lemon juice over the patties. Serve warm.

      Hi Laura! I am not sure how the Hawaiian flavors will go with all of the other flavors in this, like dill. Feel free to adjust the spices per your preference. I have not tested them in the air fryer, but they reheat great in the air fryer.

    Love the idea, but the recipe as written is very bland, dry, and tasteless. (I used parsley because husband doesn’t like dill). He wants me to play with this using the chicken and cheese, but wants something more flavorful and not dry. Goodbye flour and lemon and hello to who knows what at this point.

    But thank you for the recipe. I love the idea of something easy to do with leftover baked chicken! It just needs work to fit our Southern palate. LOL

    Made 1/3 batch using canned chicken. Used the airfryer instead of oil on the stove: 190F for 11 minutes, flipping and spraying both sides with an extra layer of oil halfway through. The texture was a little stringier than we expected, but it was yummy and a good recipe when you are short on things because you need to run to the grocery store.

    Made these tonight and my daughters and I LOVED them! Made 12 chicken cakes. I used parsley instead of dill. Tired canned chicken (bc I’ve never cooked with it before so, why not). These were EXCELLENT! I’m freezing the leftovers and plan to defeat then reheat them in the air fryer. Hope they’re ok like that.

    Made these for dinner tonight and we thoroughly enjoyed them. To avoid heating up the kitchen, I air fried the patties at 370 for 10 minutes. They came out crispy and created much less mess than pan frying. I ‘ll definitely make these again.

    This is SO good! I’ve only tasted it but oh my! Easy, too. I premade the “filling” and chilled it for a few hours before. I may have used to much cheese…whoops 😉 is there such a thing? Waiting for my supper date to dive in. I also made asparagus, mushroom, and warm dill German potato salad with shallots.

    I made the chicken patties we love them. Was wondering if after I cook them and cool them can I freeze them and for how long if I seal a meal them. We didn’t put the lemon or dill in them but we did add onion powder oh soo good. My niece wanted to make them so I taught her how to make them they loved them. Thank you

    I was looking through your recipes for one that used leftover chicken and came across this one. Made it tonight – it was delish!!! I have enough left for tomorrow as well. We can’t wait! On a side note, for a veg I took some frozen corn and threw it in the pan after I took the patties out. Added a tad bit of water and the corn absorbed all the wonderful flavors left in the pan.     Natasha, fixed these for the first time. They were delicious! My family was a little confused at first, as they looked so much like the salmon cakes that I make. Maybe that would be a good April Fool’s meal.😉 Only suggestion that was made, what herb would be good to add a little sweetness to this recipe? Rosemary, perhaps?

    These were a hit at my house today! My 3-year-old liked them, and hubby went back for seconds. I didn’t have mozzarella on hand, so I used cheddar, and I used a leftover chicken that I had cooked in the slow cooker. I paired this with that garlic aioli from your blog, and it was divine!!

    Natasha I love your recipe because they have every day greens and spices .I have a husband who is a diabetic.can you come up with some for him he is over weight and I am underweight he is close to 300 lbs .I am 68 years and weight 107lbs He is 69 and weighs 298 lbs

    This recipe is a go to every time! I’ve used leftover chicken & canned chicken with great results. The fresh lemon does take it up a notch but I’ve subbed lemon pepper seasoning and it’s still good. Dried dill is a fine sub as I usually never have fresh on hand. I do add finely diced sautéed peppers and onions (to get some veggies in without my husband and toddler complaining 🙃) and it’s really good.

    Hi.. I came across your recipe. I just made these. My 8 yr old granddaughter loves them (great because she wanted take out chicken burger).
    I put the chicken through a food processor, then I used PC Gluten free flour and gluten free panko crumbs . They turned out great. GD had 2 and does not want take out anymore.. do that is a bonus

      Hi Heather, it should work fine in the air fryer or the oven as well. We always make them on the skillet, so I don’t have exact baking times. If you experiment, please let me know how it goes. Also, when baking, I would suggest spraying lightly with cooking spray to get a golden crust.

        I made these and loved them. Had 4 patties left which I froze in a ziploc bag. Took out 2 at a time, cooked in microwave on high for 2 minutes, then transferred to toaster oven and toasted to crisp them back up for 5-10 minutes. Delicious. They were still excellent when reheated from frozen. Thank you for the recipe.

    These chicken Pattie’s are wonderful! And very adaptable to change them up in different ways!
    The first time I made them I followed the recipe exactly. They were delish! I have made them without the dill and added other seasonings and they were also delish! And Btw.. I cooked them then froze the leftovers (they make a lot for just 2 people) they reheat perfectly in a 350 degree oven for about 30 mins directly from the freezer!

    Just made these for dinner last night! Fantastic.
    I substituted low-fat plain Greek yogurt for the mayonnaise to lower the fat, but it lacked some of the zing so I added lemon juice to enhance it.
    Also added some green onions as the lemon butter sauce I paired with it had some in it and I cut too many. Very good pairing!
    I didn’t have any chicken breast lying around, so I used canned chicken breast, which worked perfectly.
    New family favorite, go-to meal!

    I just made these but had to make it gluten-free. I used one-to-one flour and gluten-free bread crumbs. Unfortunately the patties didn’t hold together as well as I would’ve liked. I don’t know if the lack of gluten played a part in it, but I will definitely try it again. Maybe dipping the patty in egg yolk before the bread crumbs would help? Anyway, next time I will also add some onion powder to the mix because I think that flavor would work nicely.

    These are FABULOUS….I just made them and even though I didn’t have lemon zest I did add some lemon juice.     Thank you for the recipe. Not to be one of those people that makes a dozen changes to a recipe so that it ends up being a completely different dish we did make a change. Since we were using a left over smoked/barbecued chicken we decided to use pepper jack instead of mozzarella and omitted the dill. They turned out really well.

      I would add mashed potatoes instead, but you may have to make some adjustments, like adding another egg. Perhaps dip your patty in egg before coating with the bread crumbs.

    OMG! These are fabulous! I used 4 smallish boneless thighs which I cooked in the crockpot the night before. Chopped rather then shredded. So flavorful! Next time, more dill and lemon zest. There will be no more wasted leftover roasted chicken. These will make great sandwiches too.

    I made these a few months ago and froze some after breading. Just pulled some out and decided to experiment with air frying. I reheated them (from frozen) @ 400 degrees for 8-10 min. Turned out amazing. So glad I froze them for myself 🙂 Hope this helps someone!

    I love this recipe. I do have a question. I shred home-cooked chicken. The cakes don’t stay together when I cook them. Not sure if I need to shred the chicken smaller or add something to bind the mixture better. Thanks for you help.

      Hi Patricia, there should be enough binder in the recipe if you are making it as written with the same proportions. Make sure to use a good non-stick skillet so the patties don’t stick to the pan which cold make them fall apart easier.

Made it with a side of mashed potatoes which I mixed with butter and all the raw veg in the fridge…tomatoes, spring onions, baby carrots, parsley.     Natasha, these were soooo good!!! I had to modify the cheese for a family member so I used almond cheese and a small amount of regular. I air fried for about 7 minutes just to make sure the cheese melted; then finished off in the skillet to brown them. Thank you so much for a wonderful recipe.

    One quick question about this recipe, you say PANKO breadcrumbs. Iwhere I am there is no such thing, can I use just normal breadcrumbs?

    I’m pleased to report that these do freeze well! I made them a couple of weeks ago, left them untreated and froze them 2 to a pack. Took them out to defrost a couple days ago and tonight breaded then with Panko and pan sautéed them in a tbspn of oil, 4 min per side and they were fantastic! So happy I froze more of them!

    I loved the way mine came out! Yummy! I substituted all-purpose flour for wheat flour. Substituted mayonnaise for vegan mayo. Only had parsley on hand & dried dill, so I used the amount of parsley you suggested & a pinch of dried dill. I used my air fryer, had some test runs. Found that cooking at 375° for 6 minutes and then turning them over & cooking for another 6 minutes gets them nice golden brown look. Plus the gooeyness of the cheese was just right. 👍

    These look great but I’m wondering how they would turn out in the air fryer.

      Hi Sandi, it should work fine in the air fryer or the oven as well. Hi Iris, it should work fine in the air fryer or the oven as well. We always make them on the skillet, so I don’t have exact baking times. If you experiment, please let me know how it goes.I recommend also checking out the comments section below the recipe if others have shared their experience using an air fryer.

    These were really good! I added a teaspoon of garlic powder and I used a couple shakes of dried dill because I didn’t have fresh but they still turned out great!
