(A mom who chases after a 1-year-old gets hungry ok?!) It’s relatively guilt free; no butter or oils required. Easy, cheap and healthy; that’s my kinda meal.

These leftover hard boiled egg recipes probably have you craving eggs ;). Here is a quick recipe on how to hard boil eggs. It’s our standard method and it works every time! Just be sure you use store-bought eggs. Eggs that are super fresh from the farm (or my Mom’s chicken coup), tend to peel with great difficulty unless you can let them stay refrigerated for a couple of weeks before using them, or try Instant Pot Hard Boiled Eggs for easier peeling.

    I was told a short while ago that hard boiled eggs particularly very fresh ones as I have chickens that placing them in a jar and shake them the shells come off quite easily. That was told to me by my sister and I find it works a treat.

    “Eggs are recommended in Federal dietary guidelines as a way to raise good (healthy) cholesterol levels.” That’s not what it says. (Eggs don’t raise your HDLs.) They just said replacing saturated fats with carbs wasn’t making you better off.

    I have always been disappointed with asymetrical eggs when making deviled eggs. I have discovered that if you stir the pot gently until the water comes to a boil, the yoke will stay basically centered in the egg.

    I cook this way my eggs as well. I was searching for days how to cook proper way eggs and not to have a smell on the second day. this way eliminated 90% of the smell of your eggs (if you’re using on 2nd and 3rd day).     My husband makes an amazing bread spread or dip that’s super easy with leftover eggs that I can’t get enough of.

    In a blender he adds precisely:

    4 cans of tuna (with water)
    One large onion (chopped up at least in fourths)
    1 cup mayo (or half of mayo half of sour cream)
    6-8 eggs depending on thickness

    So good! Makes a large serving though so maybe divide that by half 😉
