Italian Pasta Salad Recipe (VIDEO)

Italian Pasta Salad is one of our favorite pasta salad recipes. This is an easy, make-ahead salad that is perfect for meal prep. Every bite is loaded with rotini, salami, mozzarella, olives, healthy veggies, and a homemade creamy Italian Dressing.

Pasta Salad Ingredients:

Italian Pasta Salad is a meal in itself with protein, grains and plenty of vegetables. It has vibrant Italian flavors with kalamata olives, fresh mozzarella cheese, salami, and parsley.

We love that you can change up the ingredients based on what you have on hand. Try substituting with diced bell pepper, or crunchy broccoli, or use Feta instead of Mozarella cheese to add some Greek flavors. P.S. If you’re feeling adventurous, roasting your own bell peppers will take this salad to the next level.

What is the Best Italian Dressing?

We love homemade Italian dressing for the best flavor and because you can use high-quality oil and seasonings. In a pinch, store-bought Italian dressings will work. We like Newman’s Own brand Italian dressing and Ken’s brand Italian dressing.

What is the Best Pasta for Salad?

We love rotini noodles for pasta salad. Rotini is the spiral-shaped pasta you will see in the photos here. You can buy them in the traditional pasta color or in a multicolor blend which can be really fun for a pasta salad. You can also experiment with different kinds of pasta such as shell pasta or macaroni.

How to Cook Pasta for Pasta Salad:

Cook your pasta in salted water according to package instructions until it is aldenté. Aldente means firm to the bite. Pasta that is overcooked can seem mushy in pasta salad and will absorb more dressing so make sure you don’t overcook. As soon as the pasta is aldenté, drain in a colander then rinse under cold water to stop the cooking process, chill the pasta, and rinse off excess starch to keep the pasta from sticking.

Cook’s Tip: Buttered pasta doesn’t work well for pasta salad so do not add butter or oil after your pasta is cooked. Rinsing in cold water is enough to prevent noodles from sticking together and there is plenty of oil in the salad dressing.

Italian Pasta Salad is an easy, make-ahead recipe that is perfect for meal prep. Every bite is loaded with rotini, salami, fresh mozzarella, olives, and healthy vegetables, and it all comes together with a homemade creamy Italian Dressing.
Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutes

Ingredients 

Servings: 8 people
  • 8 oz rotini pasta
  • 6 oz salami, sliced into strips
  • 10 oz cherry tomatoes, halved (3 cups)
  • 1/2 English cucumber, diced
  • 1/2 medium red onion, finely diced
  • 8 oz fresh mozzarella, pearls or halved mozzarella balls
  • 1/2 cup black olives, pitted and sliced
  • 1/2 cup kalamata olives, pitted and halved
  • 1/2 cup roasted red peppers* drained and coarsely chopped
  • 1/3 cup parsley, finely chopped
  • 1 cup Italian dressing, or added to taste

Instructions

  • Cook rotini pasta according to package instructions in salted water just until pasta is aldente (firm to the bite).
  • While pasta cooks, prep remaining ingredients and make Italian Dressing.
  • Add dressing just to the portion fo salad you plan to eat. Enjoy right away or cover and let the salad marinate for 1-3 hours before serving.

    The bowl hasn’t been available for at least a year on Amazon. I think it could be discontinued. The only sur la table bowl like it is 16″
    How long will this keep in the fridge with the dressing on it?

      Hi Joanie! The homemade dressing will last up to 2 weeks refrigerated but the salad itself, once assembled and mixed is best within the first couple of days because of the tomatoes and other ingredients that start to get watery and mushy.

    Thank you for this recipe. I doubled it, omitted the olives, rinsed and halved marinated fresh mozzarella balls that happened to be on sale, and used store bought Olive Garden dressing, since I had to make a large portion for a potluck at work. It was still a hit, and there was barley a small portion left to take home to mom.

    This is a lovely salad! At first I thought it may need more vinegar for my taste, but my advice is to let it marinate for a couple hours minimum. This will be my go to pasta salad. I just love it! Thank you for sharing. Mmmm

    This pasta salad is delicious! Question: You only use 8 oz of rotini pasta which is 1/2 box of Barilla rotini. For about 10-12 people, as a side dish at BBQ, would that be enough OR if you add 16 oz pasta would I double the rest of the recipe (or not) do you think? Have you ever made more than 8 oz of the pasta for a larger group? Thank you!

      Hi Kathy! This recipe makes enough for 8 servings. If you want to make enough for 10-12, I recommend changing the serving size in the recipe card and it will adjust the ingredient list for you. To do that, hover your cursor over the number of servings in red lettering and slide right or left to decrease/increase the servings. I hope that helps.

    A 5 star review from us! Such a lovely summer pasta salad. Made a batch yesterday for our dinner and husband’s lunch and used remaining ingredients and remaining 8oz pasta to make a new batch! It refrigerated great without added dressing. I made a few changes and recipe still turned out amazing. Did not include kalamata olives or roasted peppers. I did add artichokes, shredded parmesan cheese, green peppers and mozzarella cheese sticks. We used the Ken’s Italian dressing. Love that this salad can utilize leftover veggies in the fridge.

    Here is a tip on a very easy way to halve cherry tomatoes. Stack 2 plastic deli container lids on top of each other with the tomatoes on the bottom lid. Run your knife through the middle and …….DONE!!

    This was fantastic. Made it with fusilli pasta and skipped the kalamata olives (used the black olives only), but otherwise followed the recipe. It was a hit! Made a double recipe of the dressing which was more than I needed (probably used more than a single recipe would have allowed) and enjoyed the leftover dressing. Thank you!

    OMG this looks amazing! I make mine with pepperoni, ham,salami,cheddar cheese, pepper jack,mozzarella, black olives, banana peppers(sometimes peppercinis) obviously rotini noodles. Then I use Wishbone Italian dressing and a bunch of salad supreme. Everybody requests it for parties. I’m going to make this one though and I vet it’ll be a huge hit.

    Love this recipe. I have found that soaking the chopped onions in dressing ahead softens the flavor of the onions and at the same time adds the extra flavor to the dressing. I usually do this the night before I make the salad. Great flavor and the kids don’t fuss about the raw onions.

    I making this recipe and it calls for 1 cup of dressing for 8oz of pasta but the recipe for the dressing doesn’t come out to a cup ???

      Hi Dorothy, that is correct. If you change the servings in the recipe, you can easily scale it up or down in the ingredient list. I hope that helps. Also, we often use store-bought salad dressing and it works great. We linked to homemade dressing as an option.

    You asked for a tip about how to cut a lot of cherry tomatoes at once. This lid method works great:

    How to Cut Cherry Tomatoes (and Grapes, Cherries, & Olives)

    Cherry tomatoes (or grapes, pitted cherries, or pitted olives) of uniform size
    2 flat plastic container lids with rims
    Serrated knife (blade must be at least as long as the plastic lid diameter)
    Directions
    On plastic lid with rim side up, place cherry tomatoes in a single layer. Place a second lid on top of the tomatoes with the rim side down. With one hand, hold & press firmly but gently on top of the lid to hold the tomatoes in place (not so hard that you squash them). With your other hand, cut the tomatoes horizontally through the gap between the two lids. Remove the top lid, and the tomatoes should all be cut in half.

    Use the same procedure for cutting grapes, pitted olives, or pitted cherries.

    This pasta salad was such a hit. Everyone loved it. I substituted the red onion for green onions and left out the kalamata olives because my grandkids are picky. I was sure they would pick out something in this salad but I really wanted to make it and they loved it. What a hit. And I made the Italian dressing too and it was fabulous. Thank you, Natasha.

    Hi, Natasha…love your recipes and love watching you demonstrate them. However, I noticed a couple of errors on the recipe for the Italian Pasta Salad and Italian Dressing.

    1. Salad: you have an asterisk attached to the roasted red peppers but there is no reference below explaining why you called it to our attention.

    2. Dressing: Sea Salt…you show 3/4 fine sea salt. Is it the measurement a teaspoon?

    Please advise. Thank you!

    You asked for a tip about cutting cherry tomatoes … I saw Gordon Ramsey lightly press a small plate over top of the tomatoes (could use anything flat) to hold them still, and then slice through them all at the same time with a sharp knife. Brilliant!!

    Also, I think pepperoncinis would make a fabulous addition to this amazing salad 😋

    When I slice cherry tomatoes I place them between 2 deli lids and run my knife between lids.slicing all tomatoes at once. Super easy

    So disappointed! This salad looks sooo delicious but there are too many competing flavors. Actually felt ill after eating. Perhaps leaving out or reducing the amounts of roasted red peppers, kalamata olives, and parsley would have helped.

        I have been loving your site, however your ads are competing with your website and is making it hard to follow.
        With in the website, the ads keeps on popping into the page which makes reading very hard. For video playback, the ads that are videos would play at the same time as your video which drawn out your voice quite often. I cannot find ways to close ads. These ads are none stop, they play one after another.

    Wow! My wife does not like olives, so I had to put them in separately.
    I do not recommend omitting the olives at all! It brings this delicious dish to the next level of awesome!

    Yes when you are cutting you should never put your hand on top of a knife. The top of the knife is just as sharp as the bottom. I use a pairing knife too cut cherry tomatoes.

    Your recipes are wonderful! I am back in the kitchen! You wanted to know if anyone had a trick to cutting cherry tomatoes. I take two extra large plastic lids (the kind you get at the gas station for a really big drink). Put one lid inside up on the counter. Set the tomatoes on the inside of the lid. Put the other lid right side up over the tomatoes. Hold the top lid firm. Take a serrated knife and cut thru the middle of the tomatoes cutting all the tomatoes at once.

    I make pasta salad often using commercial or a homemade dressing, but your Italian dressing is really the best I’ve tried. That little bit of mayo emulsifies everything beautifully and I’ve used the dressing on tossed salads too. A wonderful, knock-it-out-of-park recipe for Italian dressing! Great stuff!

    lay your tomatoes on the cutting board put a plate on top of them to hold them all together (bottom of plate on the top of the tomatoes) and take a long knife and come from the side while holding down on the plates and cut through all the tomatoes with one swipe. It works like a champ

      Hi Cheryl, you can definitely use your favorite store-bought dressing. I have in a pinch or when I just don’t have time to make the dressing. I always have a bottle of storebought on hand. The homemade dressing will last up to 2 weeks refrigerated.

    You asked if someone knew of an easy way to slice cherry tomatoes. I saw this on one of those FB videos and admit that I haven’t tried it. Take a dinner plate and set it upside down on the counter. Place the cherry tomatoes in a single layer on top inside the plate bottom rim. Place another plate gently right side up on top of the tomatoes. Then slice through all the tomatoes at once. Not sure whether it works or not, but may be worth a try. Enjoy your videos and recipes a lot. Keep up the good work.

    You mentioned in Your video, if anyone had a tip to cut cherry tomatoes easier to let u know. I use 2 plastic round lids put tomatoes in between and slice right inbetween the two tops. It keeps them from rolling around and you can do many at the same time ! Thank you for sharing this recipe

    To slice cherry tomatoes. Use two saucers. Put the tomatoes in one saucer. Place the second saucer on top of the tomatoes. Use your serrated knife between the two saucers in a sawing motion. I saw this on another cooking show but I have not Tri it. If you do let me know how it works.
