Why a Cobb Salad with Shrimp?

Cobb salads can use a variety of protein options to make them a hearty meal, however, this Cobb Salad with Shrimp is one of the easiest options. The cajun shrimp only takes 4 minutes to cook. Yes, 4 minutes! I highly recommend the cajun spices on the shrimp for an extra party in your mouth – making this a truly unforgettable salad.

Ingredients for Shrimp Cobb Salad:

Shrimp Cobb Salad is a chopped salad that starts with a base of washed and chopped romaine lettuce. To wash lettuce be sure to use a salad spinner, so your final salad isn’t too wet, then layer with:

  • Juicy Cajun Shrimp–  saute the shrimp in butter with cajun spice and garlic.
  • Avocado – lots of avocados!
  • Tomatoes – slice Roma tomatoes into bite-sized pieces or use quartered cherry tomatoes.
  • Red Onions – thinly sliced red onions provide a mild onion flavor and add more color to this gorgeous salad
  • Freshly Cooked Corn – use Boiled Corn on the Cob or our favorite Instant Pot Corn for an amazing pop of sweet flavor. When corn is out of season, you can cook some frozen corn that was sealed at the peak of freshness.

The Best Dressing for Shrimp Chopped Salad:

The cilantro lime dressing is so simple but adds an incredibly fresh flavor. The ingredients are so simple with cilantro, fresh lemon juice, extra virgin olive oil, salt, and pepper. The combination of flavors really makes each bite of salad taste like a summer party!

How to Serve Cobb Salad:

For parties and entertaining, our preference for making this shrimp salad is to layer the ingredients on a salad platter or in a bowl for the classic Cobb Salad presentation. Just before serving, you can drizzle on the cilantro dressing.

When serving family-style, it is easier to toss the ingredients together with the dressing.

Shrimp Cobb Salad Recipe

A Shrimp Cobb Salad recipe that is loaded with juicy cajun shrimp and topped with fresh cilantro dressing, bringing the flavors of summer to each bite.
Prep Time: 10 minutes

Ingredients 

Servings: 6 as a side salad

Ingredients for Cajun Shrimp:

  • 1 lb medium shrimp, 31-40 Count, peeled and deveined
  • 1 tsp cajun spice
  • 2 cloves garlic, pressed or grated
  • Pinch salt
  • 2 Tbsp unsalted butter

Ingredients for Salad:

  • 1 medium romaine lettuce, 5-6 cups chopped
  • 1/2 lb 3 medium Roma tomatoes, sliced
  • 1/2 medium red onion, thinly sliced
  • 1/2 English cucumber, or 3 small, sliced
  • 2 avocados, peeled, pitted and sliced
  • 1 cup corn kernels, from 2 freshly cooked cobs

Ingredients for Cilantro-Lemon Dressing:

  • Juice of 1 large lemon, 3 Tbsp
  • 1/2 small bunch of cilantro, 1/2 cup finely chopped or parsley
  • 3 Tbsp extra virgin olive oil
  • 1 tsp sea salt or 3/4 tsp table salt
  • 1/8 tsp black pepper

Instructions

How to make Avocado Shrimp Salad:

  • Pat dry shrimp with paper towels and place in a medium bowl. Add 1 tsp cajun spice, 2 pressed garlic cloves, a pinch of salt and stir to combine.
  • Place a large non-stick pan over medium-high heat. Add 2 Tbsp butter and once its melted and hot, add shrimp in a single layer. Sauté 2 minutes per side or just until cooked through. Transfer to a plate and set aside.
  • Chop, rinse and spin dry 1 medium head of romaine lettuce. You should end up with about 6 cups lettuce. Transfer that to a large mixing bowl. Now add 3 sliced tomatoes, thinly sliced red onion, sliced cucumbers, 2 sliced avocados and 1 cup cooked corn.
  • To make the dressing, start with 3 Tbsp of fresh lemon juice, now finely chop about 1/2 cup of cilantro and stir that in. Add 3 Tbsp of olive oil and extra virgin has the best flavor. Season with 1 tsp salt and a generous pinch of black pepper and stir that together.

    Hi Natasha, since I found your Cobb Salad I can’t get enough of your salad recipes. Now, with this Prawn (Shrimp) salad what can I replace the Cajun spice with as being an Australian we’re not very fond of that spice?     This is my favorite salad, I do have a question and have not figured out how not get avocado to stay green. Love taking this for lunch at work at 12 am I hate anything heavy..is there a process besides leaving it off till I’m ready to eat

    I have made this scrumptious salad 4 times in the last month! In the last, I ran out of lemon and used 1/2 lime juice; doubled the dressing as it was so yummy! Had to substitute fresh basil for the cilantro. Everyone deemed it superb and I now have printed recipe cards to hand out after serving. This is a winner!

      Hi Trish, you could use just salt and pepper and paprika or salt and pepper and cayenne pepper. We love the flavor of cajun seasoning but you can modify it with what you have on hand 🙂

      Hi Judy, I think fresh corn is much better in this salad, but in winter, I would use cooked from frozen (a little sweeter and fresher tasting than canned), and use canned as a last resort.

    Honestly this is the best salad I’ve ever made the dressing is divine very light and very fresh you don’t even need to actually cook the shrimp if you want to speed the recipe up you can buy pre-cooked frozen shrimp and just season them with blackening seasoning or your favorite Cajun seasoning it’s still delicious

    I did not have Cajun spice. Instead of that and pressed garlic I used Trader Joe’s garlic grinder mix…amazing! Dash of chili powder, cayenne pepper, cumin! Amazing! Dressing was doubled and all loved it!

    I made this salad at Easter, when our friends invited us over. Every couple brought a dish and I decided to make this salad. Oh my, what a hit this was… My friends didn’t even want to mix it, because it looked so pretty. This salad is so colorful and sooo tasty, everybody gave so many compliments. The salad dressing is perfect.

      Hi Valerie, once the dressing is in, it really should be enjoyed within 6 hours and any un-eaten portion should be refrigerated. The salt in the dressing will soften the lettuce and the cucumbers so they won’t be as fresh and crisp if you try to store it with the dressing on.

    This was delicious. It does take WAY more than 10 minutes to prep though. I work fairly quickly and it took me at least an hour. That being said, I would definitely make it again. Just remember to allow plenty of time to prep unless you have helpers like Natasha does!

      Hi Carm, it’s difficult to substitute avocado because there’s nothing quite like it in taste and texture but if you wanted to omit it, it would still taste great. I would just increase the other ingredients in the salad.

    Due to allergies, we make this with chicken and it is amazing! I also improvised this week and smooshed (that’s my technical term, lol) a very ripe avocado into the dressing and just mixed it through the salad that way. So yummy!     GREAT way to use up leftover (cooked) salmon too. I used defrosted-cooked shrimp, and frozen corn (all I had). Sauteed them both w/the butter & Cajun seasoning for 1 minute. I added the fresh garlic the last 30 seconds so it would not get brown/bitter. Instead of using Romaine lettuce, I used what I had on hand (a bag of salad mix that included spinach). Spinach alone would be great too. You can use ANY tomatoes, including cherry tomatoes. I did not cut up/put my avocado into the salad until it was ready to serve (last minute). The 50/50 lemon juice/olive oil dressing was a little too tangy for me, so I doubled the EVO, and added 1 tablespoon of sugar. PERFECT!! Its just two of us, so I just filled the salad bowls w/lettuces, and topped w/remaining ingredients vs making up a salad for 6, and tossed. It worked great!! I also let the tomatoes, onions, and cukes marinate a bit w/a little dressing while I was preparing the rest of the salad. Such a NICE dinner-salad.

      Hi Emily, I haven’t tried that but I think it would need something a little more than mayo for flavor and consistency. Plain mayo would be very thick. You can probably use a creamy mayo-based dressing here if that is what you mean 🙂

      Hi Traci, I’ve never had that happen before since all of the salad ingredients should not be clumpy unless you refrigerated the oil which would solidify it. I’m not sure what else it could be.

    Spectacularly DEE-LISH! We took fresh tortilla’s, warmed them up for a few seconds on the grill, and used the salad inside the warm tortillas. Not a spec left as my neighbor wiped the bowl’s inside with the last tortilla. It’s a wonderful supper!

        Hi Jenn, you could try a regular olive oil, not extra virgin since extra virgin does have more flavor as it is intended for use in salads and drizzling over foods, but regular olive oil or extra light olive oil (as long as it isn’t marked “extra virgin), are pretty flavorless.

      Hi Angie, I think fresh corn is much better in this salad, but in winter, I would use cooked from frozen (a little sweeter and fresher tasting than canned), and use canned as a last resort.

      Hi Marie, I would cover with plastic wrap directly over the surface to keep the avocado from turning brown. This salad (or most salads with Romaine lettuce), doesn’t keep well in the refrigerator after dressing is introduced since it will soften.

    This salad is fantastic! It hit all the healthy requirements and it was a hit with those not watching there diet too! A win/win all around. Every bite was an explosion of flavor and taste. No two bites were the same. I had many requests for the recipe and I was glad to share it with everyone. If you plan on taking this to an event I would say to start early on the chopping and put together just before you go and add the dressing to the salad when you get to your event.

    Just made it and it is as good as it looks. I never could get a decent read on nutrition – you might want to start including that as it would be helpful. But, I knew to use less corn or no corn to reduce carbs. A little extra garlic also never hurts.

      Hi Sarah, I used raw shrimp that were also frozen. I thawed in the refrigerator overnight then rinsed in cold water and patted dry with paper towels. This particular batch was from Costco 🙂

      Hi Megan, once the dressing is in, it really should be enjoyed within 6 hours and any un-eaten portion should be refrigerated. The salt in the dressing will soften the lettuce and the cucumbers so they won’t be as fresh and crisp if you try to store it with the dressing on. You might try my avocado tuna salad or my almond tuna salad which both hold longer.

          Hi Kira, yes that should work fine! I don’t typically like refrigerated tomatoes so you might consider adding fresh tomatoes before heading to work, but otherwise, yes 🙂

      I wish my Mom had cucumbers already – these are actually from Costco and are the closest to homegrown that I have found. We buy them all winter long 🙂

    To be completely honest, I have never eaten a shrimp before. We come from a big fishing family that uses shrimp strictly for fishing purposes. But obviously the shrimp are totally different and can’t be substituted for each other. My 5 year old LOVES fishing and shrimp and her nickname is “Shrimpy” She also dresses up as a shrimp each year for Halloween. Silly but true. I like the sweetness that the corn adds to this salad too!
