Chicken stir fry couldn’t be easier to make than this recipe.
- Cut the chicken thighs (or breast) into bite-sized pieces and cook.
- Cook vegetables until desired tenderness.
- Prepare easy sweet and savory stir fry sauce.
- Combine the chicken with the vegetables and sauce. Simmer until sauce thickens and ingredients are well incorporated.
TIP: When cutting chicken, slice into small bite-sized pieces. This will ensure the chicken is full of flavor, tender and not hard to chew.
Best Chicken for Stir Fry?
Chicken thighs tend to be more forgiving in stir fry, but you can substitute with chicken breast if you don’t have thighs on hand.

Chicken Stir Fry Recipe
Ingredients
Chicken Stir Fry Ingredients:
- 1 lb chicken thighs, cut into bite-sized pieces
- 1/2 zucchini, sliced or cubed
- 2 Tbsp oil, divided
- 1 Tbsp unsalted butter
- 1 cup broccoli, cut into florets
- 1 small carrot, julienned or cubed
- 8 oz mushrooms, sliced
- 1/2 red pepper, cubed
- 4 garlic cloves, minced
- 1 tsp fresh ginger, minced
- 1/2 onion, cubed
- ½ cup cashews
Best Stir Fry Sauce Ingredients:
- 1/2 cup chicken broth
- 1/4 cup water
- 1/4 cup soy sauce
- 2 Tbsp honey
- 1 Tbsp cornstarch
Instructions
- Trim chicken thighs of excess fat and cut into bite-sized pieces. Cut the vegetables into even-sized pieces (about the same size as the chicken pieces).
- Combine all of the ingredients for the sauce in a bowl.
- In a large pan (or wok), on med/high heat, heat 1 Tbsp oil. Once oil is hot, add chicken in a single layer. Cook chicken until browned, mixing as needed. Once cooked, remove chicken from pan and set aside.
- Add the remaining oil and the butter to skillet with the broccoli, zucchini, mushrooms, red peppers, onion, and carrots. Cook until vegetables are crisp tender, mixing frequently.
- Add chicken back to the pan. Add the garlic and ginger and cook 1 minute, stirring frequently.
- Add the cashews then pour the sauce into the pan and bring to a boil. Turn down heat and let stir fry simmer until the sauce thickens and is well incorporated with the remaining ingredients. Garnish with green onion and sesame seed before serving if desired.

What is YOUR favorite restaurant recipe to re-create at home?
Stir fry was always my least favourite dish growing up. I love my mom dearly, but chicken breast cannot sit in a frying pan for half an hour and remain edible, and “low sodium” soy sauce is a crime against nature. This recipe has changed that very quickly, and I make a double batch at least once a month.
That said, I would be VERY interested to see someone get this prepped and cooked in 30 minutes. Even in a single batch, the sauce took a good 10 minutes alone just to thicken. A minor complaint, of course. Excellent recipe.

We had to use low sodium chicken broth and soy sauce which made us have to use more seasoning for ours BUT that’s on US not this recipe, this recipe is delicious! After we added our seasonings it was less bland (again on us because we are watching our sodium intake). We added sugar snap peas at the end during the simmering process and served it over those 90 second fried rice packets. So good! Will make again 🙂

Do you use regular chicken broth and Soy sauce… not the lower sodium versions in this recipe?
Yes, that’s correctly. But you can substitute to your preference if you’d like.

Oh my gosh! This recipe is to die for! It’s so delicious. My boyfriend loves it so much, as do I and I’m a picky eater. I usually use this recipe and by the end of the week find all of my veggies that are almost expired. I chop up what I got and usually use 2 plus pounds of chicken, meaning I double the sauce ratio. It seems a bit healthy so I also serve it with white rice.

Great, delicious meal! Used what I had in fridge: zucchini, bell peppers, bok choy, carrots, mushrooms, and canned corn.
Always have red onion and ginger on hand.
Took another reviewer’s suggestion to coat the chicken in the corn starch prior to cooking. It did make a difference in the thickness of the sauce. Actually used more corn starch than suggested, just eye balled it. Also used sesame oil throughout the stages of cooking. Had it with white rice. My teenage daughter loved it!

Hi Gigi, you may simmer more until the sauce thickens. Also, sometimes if you are using a smaller skillet and ingredients are crowded, the sauce may not thicken properly. Also, changing veggies, or adjusting amounts in the recipe can affect how much moisture is in the recipe. I hope that helps.

I threw together a version of this recipe and then looked up yours to see how it compared. I cooked it almost exactly like you did. I used a bag of frozen chicken tenderloins and a bag of frozen stir fry veggies, and it came out really well. Next time, I’m going to try adding the garlic and ginger that you suggested. I thought this was good! I followed the recipe exactly, except added more corn starch (2 tablespoons instead of 1), I added my vegetables in increments of hardness ie celery first, zucchini last, and used peanuts instead of cashews. I also added a bit of chili flake to the sauce, as we like it hot. I asked my husband if he thought it was bland, and he shrugged and added a bit more soy sauce. All in all, I’ll make it again.

I made this according to the recipe but I used frozen stir fry veggies. I thawed them out first but did use the mushrooms fresh. We found it a tad bland. Next time I’m matching soy to broth ratio and not add water.

I decided to make stir fry for dinner somewhat spur of the moment, and found this recipe. It’s amazing! It’s very tasty and easy. I had a bag of stir fry veggies in the freezer, so I used those along with fresh carrot and onion. I also seasoned the chicken with salt + pepper before frying, and added some shrimp. Love it! I wasn’t happy with the results following the directions. The vegetables became soggy trying to thicken the sauce. For the amount of liquid, I questioned only 1 tablespoon of corn starch. The sauce never really thickened. Also the chicken is cooked without any seasoning. At the end I thought the whole thing bland and all the sesame seeds in the world wasn’t going to fix it.

I made this last night for dinner. I was so good. Not salty like some other stir fry recipes. I made it with sugar snap peas, peppers and garlic from our garden. It was very good. And yes, your sauce is the best !!!

Could I use frozen vegetables for this stir fry??
Hi Cheryl, I haven’t tested this with frozen veggies, but it may make the sauce a little looser. Some readers reported using part frozen and part fresh veggies for the stir fry with good results.
This was a huge hit with the family. Feeding a preteen and a teenage girl is often a real challenge. They loved this so much they were racing to get the last spoonful. I modified the sauce slightly, added a tsp of LA hot sauce and a tbsp of addl low sodium soy. Dinner is in the Bag!!

Absolutely love this recipe, I make it all the time. My son has an oral allergy to fresh fruits and veges, so I use frozen stir fry veges, which is just as good and cuts out the extra prep work. I add it at the same time as the sauce, which I double the sauce because I love it that much. I use chicken breast, low sodium soy sauce and replace chicken broth with water and better than bouillon. Over white rice and I’m a happy camper!

Love this. Changed it up a little. I velveted the chicken breast (put corn starch on it and let it sit for20 minutes). The only veggies I had were asparagus, red onion and chopped broccoli. Came out delish. Will make again. Oh we had it with fried rice

My wife loves this recipe and she’s a pretty picky eater. I also love it! I’ve made it probably 10 times in the last 3 month. My only complaint/question is I can’t get the sauce to thicken at all. What am I doing wrong?
Hi Ben, great to hear that your wife loved this recipe. I would simmer it more to thicken the sauce, it should also thicken more as it gets cold.
Adding cornstarch to your sauce should help it thicken while it heats up! Adjust as you go or to your liking.

You can knock down the sodium by using low salt soy sauce.

Tried to make this, but I feel like you tailored the sauce to the vegetables that you chose and because you chose literally the grossest group of vegetables possible, this turned out awful.
Hi Sam, this has been a popular recipe and I always recommend making the recipe as written before making modifications.You might enjoy some of our other stir fry recipes more.
Sam, the veggies are typical for stir-fry recipes so I’m confused by your negative comment or what you were expecting. What veggies would you prefer that you wouldn’t deem gross?

This is the best stir fry recipe I’ve ever made! Everyone is entitled to their opinion, but I think maybe if you didnt like it maybe you could could simply say ‘not one of my favorites’ you can see the vegetables listed, so try swapping them for ones you do like or simply don’t make it! But there truly is no need for you to be so rude and nasty Sam!

Absolutely delicious!! Doubled the recipe but didn’t take into account the volume of vegetables I would have to fry 😂 I have been eating it everyday it everyday with no complaints because it’s so good 🙂 didn’t have any ginger so left that out but it still tasted amazing.

I agree Chalen, even I tried this and it turned out quite good – going to try for tonight’s dinner again. I omit the mushrooms as not my fav but Natasha has listed other options as well.
So rude, if you don’t like a recipe, move on !!
