How to Make Beef and Broccoli:
This recipe moves fast and comes together in 1 skillet, so you want to have all of your ingredients prepped and ready to go before you fire up the stove. It is just 6 steps in one skillet!
- Slice beef strips
- Make stir fry sauce
- Cook broccoli and remove from pan.
- Cook beef
- Add stir fry sauce
- Return broccoli to the pan
The Best Beef and Broccoli Sauce:
Many stir fry recipes have gone wrong with a poorly made sauce. We tested this recipe over and over until we arrived at the perfect balance of sweet and savory. For the best stir fry sauce:
- Use low sodium soy sauce (or Gluten Free Tamari)
- Use the right amount of fresh ginger – it has strong flavor so don’t overdo it.
- Do not skip the sesame oil as it gives authentic flavor
- Simmer sauce at least 3 minutes to mellow out garlic and ginger
- For a thinner sauce, add 2 Tbsp water at the end
How to Ensure Tender Beef?
The right cut (see list above) can make all the difference in a stir fry. Here are our best tips to achieve tender beef:
- Freeze steak 30 minutes for easier slicing
- Use a sharp knife to cut super thin slices against the grain
- Add steak to a HOT skillet to sear and seal in juices
- Don’t overcrowd the pan or it cools quickly and will steam cook
Can I Make Beef and Broccoli Ahead?
This saucy beef and broccoli recipe reheats really well so it’s perfect for weekly meal prep and to-go lunches for school and work. The protein and nutrients found in beef give you and your family the strength and energy you need to get through the busy school season.
For meal prep: add cooled rice to a heat-safe container and top with the Beef Broccoli Stir Fry, then cover and refrigerate until ready to heat and serve (Beef and Broccoli can be refrigerated up to 4 days).
How to Pack a Hot Thermos:
Pack a hot thermos in the morning and it will be warm at lunchtime. A hot thermos can keep food hot for 5 hours before it’s eaten, and this Broccoli Beef is the Best. School. Lunch. Ever!
- Heat the thermos first by filling 3/4 full with boiling water (do not overfill), cover with lid and let sit 5 min and drain just before adding food.
- Meanwhile, heat food to 165˚F. Place into the heated thermos and close with lid.

Beef and Broccoli Recipe
Ingredients
Beef and Broccoli Ingredients:
- 1 lb flank steak, very thinly sliced into bite-sized strips
- 2 Tbsp olive oil , (or vegetable oil), divided
- 1 lb broccoli, (cut into 6 cups of florets)
- 2 tsp sesame seeds, optional garnish
Stir Fry Sauce Ingredients:
- 1 tsp fresh ginger, grated (loosely packed)
- 2 tsp garlic, grated (from 3 cloves)
- 1/2 cup hot water
- 6 Tbsp low sodium soy sauce, (or GF Tamari)
- 3 Tbsp packed light brown sugar
- 1 1/2 Tbsp corn starch
- 1/4 tsp black pepper
- 2 Tbsp sesame oil
Instructions
- Prep: Start cooking white rice first so it's ready when the stir fry is done. Cover and freeze steak 30 minutes for easier slicing.
- Combine all stir fry sauce ingredients in a bowl, stir well to dissolve the sugar, and set aside.
- Place a large skillet over medium heat and add 1 Tbsp oil. Add broccoli florets and sauté 4-5 minutes, partially covered with lid, stirring or tossing several times until broccoli is bright green and crisp-tender then remove from pan. Tip: If you prefer softer broccoli, add 2 Tbsp water before covering with the lid and it will steam cook the broccoli.
- Increase heat to high heat and add 1 Tbsp oil. Add beef in a single layer and sauté 2 minutes per side or just until cooked through. Quickly pull out a piece to test for doneness.
- Add the sauce, reduce heat to medium/low and simmer 3-4 minutes. It will thicken. Add broccoli and stir to combine. Stir in 1-2 Tbsp water to thin the sauce if desired. Serve over white rice.

Word to anybody planning on making this: if you’re like me, you’ll look at the sauce and think “that’s not enough, maybe I should add some broth or some water so it ends up saucier” but resist! It doesn’t look like much, but it ends up nice and saucy without swimming in it. Turned out great as listed!

So delicious! Made it with the thin-sliced “Kobe” rib-eye meat from Costco; it was so easy! I added some rainbow peppers and matchstick carrots to amp up veggies, and added 1/2 t. crushed red pepper to the sauce (we like it a bit spicy!) It was perfect!!! Will def make again!!!

We absolutely love this recipe and make it often. Here is how my family likes it. I make one batch of sauce, sans corn starch, and marinate my beef over night. The next day i make a second batch of sauce with the cornstarch and add red pepper flakes. I put the sauce in a pan to warm it up and thicken it. Next i cook the meat and vegetables on the black stone. We love the vegetables and usually use a combination of whatever we have. Our favorites are broccoli, red peppers, onions, mushrooms or snap peas. I then combine the meat and vegetables in a large bowl with the sauce. By the time the black stone is wiped down we’re ready to eat. We normally make a double batch so we have leftovers for lunch the next day. Everyone loves this recipe, which ever happens. Highly recommend. Thanks for the recipe.

I made this for the first time tonight and as others have said, it was a hit. I chose to add a little water to my broccoli before I covered it and allowed it to soften some and then removed the broccoli from the pan. Next, I sautéed the beef and then removed it from the pan. I had sliced up some onions and mushrooms which I lightly sautéed. I added the beef back to the pan with the onions and mushrooms, the sauce, let it cook a little bit and then added the broccoli. Yum.

This has been go to recipe for homemade “beef” and broccoli for awhile. I’ve never tried it with beef, only with Venison and it’s amazing. We don’t use sesame seeds and I occasion will sautee some onions to add to it. Always amazing. For sure use the low sodium soy sauce, otherwise it will be salty. This recipe is so easy to adjust for taste. Feeling like less sweet, cut back on the sugar, etc. I love oyster sauce so will add that sometimes.

Is it OK not to use sesame oil? It doesn’t break down well in heat and so I would rather not use it. Can I use a different oil and what would you advise if I did.
Hi Sharee, we recommend to not skip the sesame oil as it gives authentic flavor.
I prefer to think of sesame oil as a seasoning, not a cooking oil. It can be added later in the recipe to prevent breakdown or burning. I definitely don’t skip it.
I’m going to be honest–I was worried that the sauce wasn’t going to turn out right (by my own mistake). I did not like the smell of the sauce due to the sesame oil and was worried it would ruin it. When I poured the sauce into the pan, I was worried I had mixed something up because it took longer than I expected for the sauce to thicken up.
But I am here to tell you, TRUST THE PROCESS.
Because this is now the best stir fry I have ever made! The sauce was amazing, the beef was great, and it was overall such an amazing recipe. I’ll now be using this sauce for lots of different stir fries!

My whole family loved it. My two year old ate two bowls! I used a tri tip steak and I added a red bell pepper and a carrot (thinly sliced). I doubled the sauce because I had 1.4 lb of meat and more than 6 cups of veggies and it was quite saucy but that was perfect for putting sauce on the rice

This was delicious. I used prime rib leftover from a restaurant meal. Just sliced and added to the sauce to warm. As suggested by others I did add a Tbl of oyster sauce. Definitely a keeper!!

This was the best beef and broccoli I’ve ever eaten. I can’t believe this came from my own kitchen. This is better than any restaurant. I used beef milanesa and rolled them up and the sliced thinly and got a lot of strips that way. Frozen broccoli florets worked out great and I didn’t have to thaw them first. This was better than any Chinese restaurant or any other places that makes broccoli beef!! The flavors where intense and it was so EASY to make. The only thing I did different was add about 1 tbsp of oyster sauce to the mix.

The family likes it and it’s basically 1 pot. We like it with a little less ginger and more broccoli (so I increase the sauce too as we like it more saucy). My food store had precut stir fry beef, so I used that and it was so easy.

This was okay. I used thin sliced sirloin which I cut in 1″-2″ pieces. Meat was very tender. I also added red bell pepper and onion cut into 1″ chunks. We like ours “saucy”, so I double those ingredients. There was just something off about the taste. Couldn’t quite figure out what it was.
Hi Cathy, I haven’t noticed any kind of off taste – my best guess is maybe it was one of the products used? Was anything expired or passed it’s optimal freshness? Even something as simple as freezer burn on steak can ruin the flavor of a meal – it’s hard to guess without being there.
This was wonderful!!! I doubled the recipe so there would be enough for my crew. Everyone thought it was great (This NEVER happens). I used leftover steak and added only at the end to warm so the steak wouldn’t be over cooked. I also added a bit of black soy sauce (couple of TBS). This is a keeper. Hi Parker! Yes, you can use minced ginger. Add it to your preferred taste. This recipe uses sesame oil in the sauce. Be sure to not use toasted sesame oil, which is better for drizzling on top as a finish, not for frying.

Delicious! I used high quality round steak, slicing it thinly, and marinating it in half the sauce recipe. I use amino acids rather than soy sauce and added a green onion at the end. This is a keeper!

Honestly I had low hopes because I have tried a lot of recipes like this and they never seem quite right but omg this recipe was simple and the flavor was perfect! I halved it and had to replace the corn starch with flour and it still turned out perfect. I also added bean sprouts 🙂

I really appreciate the nutrition facts, but what is the serving size?
Hi Samantha! At the top of the recipe card, it shows the estimated number of servings the recipe makes. The serving size in the nutrition facts is per serving. This recipe serves 4. It is computer generated so it’s difficult to have it generate the size of the servings. You’ll have to divide the total recipe into 4. I hope that helps.
Turned out really good. I used deer meat instead of beef and I wanted to add a little heat so I used red chili peppers just one or two dried ones.

sooo good!! to the sauce i added gochugaru, mirin, and sezchuan peppercorn and i used that sauce (minus the corn starch and water) as a marinade for my beef and added the slurry later, it came out so tender!! bookmarked this recipe to use again!!

Mine was lacking flavor and I added green onion,carrots and peppers I will try again, otherwiise it was good. Could it be that I was short on Sesame Oil ? I barely had half a tablespoon?????????
Feel free to add more seasoning to taste but it was just right for us and we’ve tested this recipe a lot of times. I recommend following the recipe as written to achieve excellent results. We’d like to know how it goes on your next try!
This is my family’s favorite dinner that I make at the moment. We like to double the sauce; it is incredibly delicious. I highly recommend the COSTCO Kirkland Signature Beef Loin New York (Shabu Shabu) for the beef. It is already thinly sliced, and it is delicious. Although expensive, we get four dinners out of a $50 package of beef.

I am making this now and I have to say it smells like my favorite restaurant in here. I added a packet mix I found at the grocery store yesterday that’s for “beef and broccoli” but it’s basically the corn starch with some flavorings in it.

I’ve made this twice in the last two weeks, and it’s fantastic. My husband is one of those people who doesn’t really “notice” food, but even he complimented it and requested it again. He’s still talking about it now as he does the dishes!

Tonight wilI be the second time making this dinner. It is in my weekly rotation now. I grated carrots and also sliced up onions and it was delicious. My children range from 15 to 25 and they loved it. I am going to make it with cauliflower rice instead of regular rice. I’m sure it will be delicious.

I looked for a recipe that I could use left over cooked steak. It was wonderful–a definite keeper. Liked that I saw to omit or reduce sugar. It tasted great, but trying to reduce sugar from our diet. Instead of putting it over rice, we put it on baked potato. Yum!

Hi Nat! Yes, that should be fine. It is thicker and sweeter and less salty than light soy sauce so you may need to make some modifications and add salt if needed.
The proportions of the stir fry sauce is perfect! Only I like more robust flavor and more savory. 2nd time I made it, I added 1/3rd more of each ingredient but only used 1 Tablespoon of the sugar.
This time the sauce was spot on for me.
Reminder to pour off the fat from the cooked steak.
I also added onions that were sautéed with the broccoli.

Hi Vicky, I haven’t experimented with anything else, but honey would probably be the next best thing if you wanted to omit the sugar, just add it to taste since honey is sweeter than brown sugar cup for cup. One of my readers wrote: “We omit the brown sugar from this recipe because of my wife’s diet, but she does drizzle a slight amount of honey and that works amazing.”. I bet mushrooms and chili may work. If you experiment, please let me know how you like it!

Absolutely the BEST recipe I have come across for beef with broccoli! I have made this twice in the past two weeks. I made it the first time for my daughter when I stayed with her post child birth. made this tonight – had a lot of left-over beef steak already cooked that I used – stir fried the broccoli plus added sliced onion and sliced red pepper and thinly sliced carrot – cook that to desired tenderness then threw in the sliced beef steak then the sauce and everyone loved it. Not too sweet. Said this dish was better than the original beef steak served the previous night

Here’s what one of my readers wrote: “Truly delicious and so much tastier than those gross bottled sauces. Substituted honey for brown sugar and even used cheap stew beef cut super thin…still came out amazing!!!” I hope this helps.

Really delicious, I added a teaspoon of Honey, a 1/2 table spoon of ginger (because we love it) and a dash of red pepper flakes. My kids came back for seconds!

Hi Teresa, I don’t recall getting feedback on this that it was too salty which makes me think either too much soy sauce was used or the proportions of broccoli and beef to sauce were changed without modifying the amount of sauce. Also, make sure you add sugar to the sauce which balances the sauce with sweetness.

I have been making your recipe for a few years now but somehow I learned to add 1 tablespoon of Shaoxing wine to the sauce. Now, I am just looking back at your original recipe and it doesn’t call for the Chinese wine…Hum, I wonder where I came up with it???
