I was frustrated with store-bought tartar sauce; one disappointing can after another. Solution: homemade tarter sauce. Making your own is really easy. It’s fresh and amazing for these salmon cakes fish sticks or breaded fish fillets.

See those fish sticks there – yeah, those are from Costco. Maybe one day, I’ll make my own fish sticks, but for now, these are really good (the Trident brand). Sometimes I find that I eat more tartar sauce than fish stick (sounds gross, but this sauce is THAT GOOD!). This recipe stays fresh in the fridge for a few days.

Ingredients for Tartar Sauce:

1 cup real Mayonnaise
1 cup finely chopped dill pickles
1 Tbsp dill (fresh or frozen), OR 1 Tbsp finely chopped fresh parsley
1 tsp lemon juice
1 tsp sugar
1/4 tsp freshly ground black pepper
2 Tbsp finely chopped onion is good too, but optional (I usually skip it)

1. Combine everything in a mixing bowl and give it a good stir.

Homemade Tartar Sauce is way better than any store-bought version. This has just the right taste and texture. It's perfect for fish sticks, or with crab cakes or salmon cakes.
Prep Time: 15 minutes
Total Time: 15 minutes

Ingredients 

Servings: 8 servings or 1 1/2 cups total
  • 1 cup real Mayonnaise
  • 1 cup dill pickles, finely chopped
  • 1 Tbsp dill, fresh or frozen, OR 1 tbsp finely chopped fresh parsley
  • 1 tsp lemon juice
  • 1 tsp sugar
  • 1/4 tsp black pepper, freshly ground
  • 2 Tbsp onion, finely chopped, optional

Instructions

  • Combine all ingredients in a bowl and stir to combine.
  • Add more lemon juice or pickles if desired.

    This is the recipe I’ve used for decades, only about 1/3 of the amount, Except, I add dill pickle juice instead of lemon and I grate a small amount of onion instead of chopped (it’s a must for me).
    Love all your recipes! I just made your Crockpot Chili tonight and I have salmon in the freezer so eyeballing your salmon patties! 🤤 And of course I’ll make “our” tarter sauce! ☺️

      Wet a paper towel and set it next to the onion on the cutting board. No more tears! Onion are attracted to water molecules. Easy fix!

        I used dill relish. Added a touch of garlic powder as well as onion powder. Didn’t add the onion but I might add a little as it seems slightly runny. It’s chilling in the refrigerator now so we will see how it goes.

    I use purchased sweet pickle relish in mine (drained) instead of the dill pickles since I like a sweeter taste, also you can use dill weed and celery seed and lemon pepper for some seasoning in addition to salt and sugar, some sour cream too mixed in….

    First, I want to point out this is a great recipe. Made it a dozen times in 1/4 amounts for 2 people. I keep the liquid down by using a manual food processor (the ones with the pull cord). Mine came with a spinner basket that can spin the liquid out of ingredients such as jarred relish.

    Easy to make and excellent to taste. I am not a pickle person but even I ate some. My husband was reminiscing about a coastal restaurant we visited on vacation a couple years ago…it was that high quality. The only modification I made was using onion powder and blending up the ingredients in my food processor. Yum! Thanks for sharing.

    Didn’t have enough tartar sauce to serve with your Cheesy Chicken Fritters (which we love) so I found this recipe and halved it for dinner. Only had dried dill on hand but it turned out great! Will let chill for longer next time. The fritters with this sauce in a bun – yum. Thanks Natasha!

    I don’t understand all of the good reviews. The proportions are way off. It tastes like dill pickles. When I was making it I realized I had made it before and cut the dill pickle amount in half. Still way too much.

    I made this one day when I decided last-minute to have fish for dinner and the tartar sauce in my refrigerator was outdated. I had all the ingredients on hand plus fresh chives from the garden. It’s delicious! The next day I mixed some chopped, hardboiled eggs into it which made a wonderful egg salad dish!

    5 stars just for the instructions… made me laugh! Getting real tho – I scaled the recipe to yield 1/4 cup because it’s just me and I’m a vegetarian so I’m going to eat fake fish. At first this was so abrasive! Like fear for your veneers abrasive! BUT. Make it a bit ahead (I only did 12 minutes) and there’s magic happening. Rivals any commercially available. Except for the scaling, I didn’t change anything and it’s good. Thanks for the recipe.

      Hi Kari! Some grocery stores carry them in the frozen section but you can also buy fresh herbs, wash them, pat them dry and freeze them yourself as well. I hope that helps.

      If you grow your own dill (which we do) it is cut, washed, separated into as many individual use sections, wrapped up in waxed paper like a cigar. Then all are put into a large freezer bags and frozen. Take out when needed.

    I halved all the ingredients & subbed dill relish for the dill pickles which probably made it thinner. Next time I’ll cut the relish down a bit more. Overall it was very tasty and my hubby loved it… TY appreciatively for the recipe.

    Natasha, I follow you every day and Ir have made so many of your recipes. Now I have a problem, where can I find a large recipe for Tartar Sauce for our church fish try. I mean really large, like to start with for a 100 servings. Our little packets of Tartar sauce Friday night were awful.

      I use relish in my potato/macaroni salads. I dump a whole jar of the relish in my mid size strainer and let it drain for quite a long time over a bowl or cup. My salads don’t get to “drippy” that way. Good luck.

      You can also try “grating” the onions for a finer texture. I like to strain a bit of the juice after grating it. Still adds good flavor, but reduces the liquid so it won’t make it runny after it sits for a bit.

      Hi Lisa! If you are following the instructions and ingredients as listed you should not be having that issue. Did you make any substitutions? Or possibly use too much lemon juice or not drain your pickles?

    This is 5 stars for a reason!! Easy, quick delicious, time saying, perfect!! if you have specialty pickels with garlic or a mix of bread/butter pickels and garlic pickels it will definitely kick it up a notch..it did for me and never used sugar because of the sweetness in the bnb pickels! To quote Matt Pitman ” I ain’t mad at it”!

    Outstanding ! Didn’t have dill (family doesn’t love dill anyway)used parsley and one clove garlic crushed ! I used gherkins (never had them before)omg so good. I always love your recipes. You are my “go to”. You have taught me a lot . Thank you.

      Hi Mary, we used dill for this recipe, but parsley is a great substitute. Since it’s a great substitute, I bet that combined; they will work well. I hope that is helpful!

    Easy to make, with everyday ingredients – no special trips to the store, I appreciate that! I’ve made this recipe several times (halving the ingredient amounts) and I like to add a dash of Worcestershire sauce, as well as a tsp of good quality Dijon mustard, and a touch of Caesar dressing, reducing the mayonnaise by as much.     I’m not a fan of tartar sauce, but this recipe is excellent. I used sweet pickles, since that’s what I had on hand. Dried dill and minced fresh onion. It is a tasty complement to the Salmon cakes.

    It definitely needs to rest for at least 30 minutes to let the flavors meld. It tasted way too sweet when first mixed and I almost threw it out. So glad I didn’t! I do like my tarter extra briney, so I also minced up some capers and added a little of the juice as well. Overall, pretty yummy, but next time I will be reducing if not omitting the sugar all together.

    I’ve found that adding onions tends to enhance tarter sauce, however I know many folks don’t like the texture of raw onions. So, to have the best of two worlds, I grate onions for almost all my sauces. To add a bit of zip, try adding horseradish (to taste)!

    Thanks so much for sharing this amazing recipe! I realized we had run out of our usual tarter sauce (K^*%t) and needed something quick since all the grocery stores were closed. Found your recipe and tried it, and the entire family LOVED IT! In fact, they loved it so much they asked me to stop buying the grocery store brand I had been using for as long as I can remember!     Made this last night to serve with pan seared Rock Fish. This is without a doubt the best Tartar Sauce I’ve EVER had ANYWHERE. The freshness imparted by the fresh parsley, the brightness from the fresh squeezed lemon juice and the bit of chunkiness from the finely chopped dill pickle and onion. I have fresh dill growing in my garden so I’ll try that next time. I might even try substituting greek yogurt for a different taste. I don’t buy premade dressings or sauces like Tartar sauce because I find great recipes like this.

    I substituted lime juice for lemon because I didn’t have lemon, dill relish drained for dill pickle, dried dill weed, lowrys garlic salt with parsley, minced garlic and the rest the way your recipe called for and it was awesome! Thank you, better than any bought tartar sauce!!!

    Saw this recipe pop up on FB, last night and since I was out of tartar, I thought…oooo let’s try Natasha’s, since everything I’ve made of hers has been really good! OMGosh, so easy and delish! I will never buy store bought again! I liked this one because it is made with dill pickles, not sweet, which I can’t stand. I think next time…and there will be a next time, since I’m a tartar girl, not ketchup…I will add a bit more dill, and maybe some garlic. It’s better if you! let the flavors blend overnight! You won’t be disappointed in this recipe, TY Natasha! : )

        I’ve used dehydrated dill and it was still very delicious. It also stayed “fresh” in the refrigerator for over two weeks. If using dried dill, refrigerated for about an hour before using. This is the best tarter sauce recipe ever!
