The Best Omelette Recipe

Omelettes are the most requested breakfast in our house and 99% of the time we always have the ingredients in the refrigerator. They are:

  • Quick – they take about 2-3 minutes on the stove
  • Easy – It’s literally 4 ingredients including the butter and the cheese to make a basic omelette (my daughter’s favorite).
  • No special tools are needed – you’ll just need a bowl, fork, small non-stick pan, and a flexible spatula for flipping.
  • Kid-friendly – who can resist that cheese pull? We’ll sit around the table and see who can get the biggest cheese pull.

Ingredients for a Cheese Omelette

This is everything you’ll need for a simple cheese omelette (see more variations below).

  • Eggs – we use large eggs, right out of the refrigerator
  • Salt – just a pinch is plenty. We use fine sea salt which dissolves quickly.
  • Butter – you want to keep a well-buttered skillet for each omelette. Butter adds flavor and keeps the omelette from sticking.
  • Cheese – we love shredded mozzarella cheese (low moisture, part-skim), but you can use cheddar or your favorite cheese.

Variations

  • Florentine Omelette – Sauteed mushrooms with chopped baby spinach leaves.
  • Bacon and CheeseCrispy air fryer bacon and melted cheese are a perfect match and so satisfying.
  • Veggie Omelette -Try diced and sauteed bell pepper and onions, seasoned with a little salt and pepper.
  • Garnishes – add a little freshness with chopped chives or parsley, halved cherry tomatoes, and diced avocado with a sprinkling of salt and black pepper.

Tips for Fluffy Omelettes

  • Prep fillings ahead – since omelettes take just a few minutes to cook, make sure all of your filings and toppings are prepped before you turn on the stove.
  • Foamy eggs – beat the eggs and salt with a fork until the eggs are foamy. The bubbles will give your egg more rise and become puffy as it cooks. My kids also love to use this hand-cranked egg beater for the fluffiest omelettes.
  • Avoid pepper – since the black pepper doesn’t dissolve into the egg, it will pool at the bottom and give your omelet an ugly appearance. Save the pepper for sprinkling over the finished omelette if desired.
  • Non-stick pan makes it easier to flip your (I love my 8-inch Hexclad pan because it’s not Teflon). You don’t need a fancy omelette pan.
  • Reduce the heat – Once the eggs are in the pan, reduce the heat to low to give your eggs a chance to cook through without browning.
  • Be patient – it’s tempting to crank up the heat for the omelette to cook faster but doing so will brown and ruin the eggs.

How to Make Omelettes

There’s nothing worse than an overcooked omelette. It should be cooked until it’s just set and not browned. Once it’s browned, the egg deteriorates in flavor and texture. Follow these steps for moist and fluffy omelettes every time.

  1. Beat eggs – in a small bowl, combine 2 eggs and a pinch of salt then beat with a fork until frothy.
  2. Heat skillet – place a small non-stick pan over medium heat and melt in 1/2 Tbsp of butter. Once butter is melted and bubbly, add beaten eggs and reduce heat to low.
  3. Pull cooked eggs with a spatula into the center, allowing the liquid eggs to fill in the space. Watch the video tutorial above to see this process in action.
  4. Flip – once eggs are nearly set, the omelette slides easily on the skillet and you can get a spatula underneath, flip it over. Turn off the heat.
  5. Fold – add cheese and your favorite toppings, fold the omlette and slide it onto a plate to serve.

Can I Substitute the cheese?

Learn how to make the perfect, tender and fluffy Omelette. The key to the perfect omelette is making sure you don’t overcook it. It should remain light yellow in color and never brown. You can customize a basic recipe in so many ways.
Prep Time: 2 minutes

Ingredients 

Servings: 1 person (makes 1 omelette)

Omelette Ingredients:

  • 2 large eggs
  • Pinch fine sea salt
  • 1/2 Tbsp unsalted butter
  • 1/4 cup shredded mozzarella, low moisture, part-skim

Optional Fillings:

  • Fresh spinach, coarsely chopped
  • Sautéed mushrooms
  • Crispy Air Fryer Bacon, chopped
  • Sautéed diced bell pepper and onions
  • Ham, diced

Optional Toppings:

  • Chives or parsley, chopped, to garnish
  • Salt and freshly ground black pepper
  • Baby tomatoes, halved
  • Avocado, diced

Instructions

  • In a small mixing bowl, beat together eggs and a pinch of salt until foamy.
  • Place a small nonstick skillet over medium heat and swirl in 1/2 Tbsp butter. Once butter is melted and bubbling, add frothy eggs to the skillet and immediately reduce the heat to low.
  • Use a spatula to pull the cooked eggs into the center, letting the liquid egg fill the space behind it. Continue going around the pan, pulling the eggs towards the center until the eggs are nearly set.
  • Once the omelette is sliding around the pan easily and you can get a spatula underneath, flip the omelette over and turn off the heat.
  • Sprinkle cheese over the egg and add your favorite toppings. Fold the omelette in half and slide it onto your plate then garnish as desired.

    FINALLY!! I don’t make omelettes very often because, quite frankly, I am horrible at it … until today!! Thanks to this recipe I made omelettes that my entire family enjoyed. I sautéed onions and sweet red peppers in advance, as well as cooked some bacon that I crumbed in to it, and added the shredded mozzarella cheese. They were fluffy, fully cooked , tasted and looked amazing. I highly recommend the video as well . I was impressed that using the technique from the video still made very pretty omelettes. Thank you so much! I’m just disappointed that it took me until I was nearly 50 to make a good omelette.

      Hi Tanya! Watch my process again closely and see if you are doing anything differently. You’ll need to use a good non-stick pan. Also, be sure that your pan is not too large for the size omelet, it will make your eggs too thin and your omelet will break. I used an 8” HexClad pan. And lastly, be sure to allow enough time for the eggs to cook and solidify before flipping them over. I did this over medium heat. I hope that helps!

    I find adding about one tablespoon of water per egg before whisking makes for a fluffier omelette. I Also do the same for scrambled eggs.

    Perfect. I am 80 years old and have never made an omelette in my life, I just mix extras into scrambled eggs. .My wife wanted a real omelette for lunch. I found your recipe and went for it. Ten minutes later I had a great omelette. I can improve on it but my wife was very happy. (That’s what counts).

    Was wondering how long do you let the egg pan heat up for? I heated mine for 1 min. Think that was too long cause mine was kinda sticking to the pan even tho I put butter in the pan, also it was setting very quickly & kinda rush in making the omelette. I think need new egg pan, had it for long time. Omelette recipe & the toppings you put in it look delicious by the way!!

      Hi Angela! It warms up fairly quickly. I add 1/2 Tbsp butter to the pan. Once the butter is melted and bubbling that is when I know my pan is ready. When my eggs are in the pan, I reduce the heat to low to give your eggs a chance to cook through without browning. Hopefully, that helps.

    Hi,Natasha, First, allow me to express my sadness on what’s happening in Ukraine. In your omelet recipe, you state to beat the eggs ‘til they’re fluffy. To really get fluffy eggs, separate the yolks from the whites. Set yolks aside. Beat the whites are fluffy. Then, slowly add the yolks and continue beating. They will turn out really fluffy.

    Thx for the video Natasha. I like my omelette with a little milk to make it fluffier. Put in a frying pan with butter over med. heat. Cover with lid. Let cook without turning over but checking to see no browning on the bottom. When it is basically cooked and able to slide, add onions, bologna or ham and shredded cheese of your choice to HALF the omelette and fold other half over top. cover for 1 minute and serve. OMG. SO SO GOOD. Let me know if you give it a try.
