This breakfast sandwich is cheesy, juicy, easy and so darn delicious! All you need is 5 minutes, 5 ingredients and 1 pan – perfect for breakfast on-the-go! This breakfast sandwich is loaded with eggs, ham and cheese and is hugged by a warm English muffin that toasts in the same pan. And it can all be cozied up between your fingers… Yuuum!

You can easily scale this recipe up or down depending on how many mouths you’re feeding. Watch this video tutorial to see just how quick and easy it is…

This recipe has completely won us over. The inspiration came when My husband’s cousin Vicky shared a video on Facebook for a breakfast sandwich. After making our version 4 days in a row, we knew it needed to be shared with you.

This is also a kid-friendly breakfast. Our son requests this sandwich all the time.

Ingredients for 1 Breakfast Sandwich:

1 english muffin, cut in half
2 eggs
2-4 slices of ham (we ❤️ black forest but any kind will do)
1/3 cup finely shredded cheese (we used Mexican cheese)
1 tsp chives, finely chopped
Salt and Pepper to taste
1 Tbsp olive oil or butter to saute

Tip: to make 2 sandwiches at a time, toast the English muffin in the toaster and sauté two sets of eggs in the pan.

This breakfast sandwich is loaded with eggs, ham and cheese and is hugged by a warm English muffin that toasts in the same pan. Serve as is or with hot sauce if you like a fiery breakfast! 🙂

Ingredients 

Servings: 1 breakfast sandwich
  • 1 english muffin, cut in half
  • 2 eggs
  • 2-4 slices of ham, we love black forest but any kind will do
  • 1/3 cup finely shredded cheese, we used Mexican cheese
  • 1 tsp chives, finely chopped
  • Salt and Pepper to taste
  • 1 Tbsp olive oil or butter to saute

Instructions

  • Heat a large non-stick pan over medium heat and drizzle with 1 Tbsp oil.
  • Place your Engish muffin on half of the pan cut-side down. Crack 2 eggs side by side on the other half of the pan and break the yolks with a spatula.
  • Once eggs are mostly cooked through, sprinkle tops with salt and pepper to taste, 1 tsp fresh chives and half of shredded cheese. Place toasted english muffins cut-side-down over the eggs and lightly press on the tops with a spatula.
  • Flip the sandwich over (egg-side-up). Place ham over half of your sandwich and top with more cheese. Fold the sandwich together and and remove from heat.

Notes

    I’ve been making this sandwich for years. Its our family’s” GoTo” Airport sandwich for taking on a plane. Sometimes I make it with croissants. When we pull the sandwiches out, everyone around just drools. Airlines don’t feed us anymore, so we bring our own. So economical too! I also heat the ham up in the microwave while the eggs are cooking and add it at the end. It helps to melt the cheese too. So yummy!

    Far better than the fast-food version!

    With today’s recipe prep, I subbed the ham with 4 slices of fully-cooked Canadian Bacon for each sandwich, and used recipe amounts of fine shredded Monterey Jack cheese – instead of Mexican. I used onion greens to replace the chives, and made no changes to the original recipe instructions. Cooking times were the same and ingredient changes resulted in another awesome grilled sandwich, with different great flavors.

    Just made this for my son and I this morning. I only had 2 eggs left, so had to make with 1 egg apiece (which ended up being perfect!). These were so good – Egg McMuffin……what? Won’t be getting those anymore, there’s no comparison. I might try with bacon or sausage in the future. I had diced ham today, which didn’t want to be contained and popped like popcorn when it sat in the frying pan…lol. After I go grocery shopping and buy more eggs, we’ll be having these again. Maybe with a side of hash browns on the weekend.

    I was excited to see this recipe. When we camp, I cook everything in a skillet over a propane burner. This is perfect! My sandwich was pretty messy to eat. My husband suggested that I try using only one egg. I’ll try that next.

    Do this a lot. Jelly is really good with it….

    A bread French toast version by coating both sides of bread(bottoms touching) in the 2 eggs with milk added and cook until you can flip the eggs and bread over then fold extra egg onto bread and add cheese and meat…flip together into your sandwich. Edge cook if needed until browned. Best sandwich ever.

    In the video you just have the avocado sitting there at the end. lol It doesn’t serve any purpose in the video and is only used as a prop in the picture. Of course avocados have many health properties and are good at any time of the day for dietary reasons. I just find it odd to have a cut avocado sitting there that serves no purpose.

    Also. You didn’t even heat the ham up? Just let the surrounding heat of the egg heat it? Why not lightly grill it? The “pepper”, you can’t even see that you used any on the sandwich. Of course that is a personal preference

      Thank you for that feedback Topher, we do love to add avocado to our sandwich. You can put it in the sandwich or just serve it on the side for breakfast which is what we did. I sprinkle avocado with salt and pepper and drizzle with extra virgin olive oil. So yummy!

    As a breakfast sandwich addict, couldn’t wait to try this. Now on my fourth time and so call for a comment. It was great!! I did change the chives to chopped jalapeno and used cooking spray instead of oil. This is a great breakfast sandwich. I have friends coming over next weekend so will prepare this, omit the cheese and jalapeno, but make a white cheese sauce with onion and jalapeno to pour over them.

    How could I make the breakfast sandwich for a crowd of 40 people? I work at a hotel that has complementary breakfast. We use liquid eggs instead of regular eggs. Everything but the liquid eggs come precooked. Or can u give me other ideas for making breakfast sandwiches

    I’m having a wedding shower brunch on Saturday and I think I will serve these sandwiches. I will start cooking them up 30 minutes early and wrap in foil then keep in a warm roasting pan. Do you think it will work?

      Hi DeAnn, the only concern I would have about that is the muffin would get soft from the trapped steam inside the foil. It sounds like a good idea, but I would suggest testing by wrapping one in foil for 30 minutes to see if the moisture doesn’t make the muffin too soft.

      I think these are best served fresh. I would recommend prepping the ingredients for the sandwiches in advance so it only takes 5 minutes to prepare a hot and cheesy sandwich. I do think it would still work to make them ahead and then put them in the oven or microwave before serving to warm them and melt the cheese.

      You have much higher quality ingredients, it tastes much better and it is much more satisfying – egg mcmuffins have nothing on this sandwich! 😉

        Agreed, Natasha. McD’s eggs come in a big plastic bag. Real eggs are always better than bags of liquid eggs. I hear it is possible to ask for a real egg in the shell at McD but have not tried it. Also, I maje these on hamburger buns and add grape jelly. The salty ham and sweet jelly is so good.

        This sandwich may not be much different than an egg mcmuffin in ingredient makeup, but it is so much more satisfying and better tasting than the corporate version. And, you can tailor the ingredients to fit any family member’s personal taste. My vote is for Natasha’s recipe.

    This is an awesome recipe. It’s super easy and quick, and super delicious. I usually don’t cook breakfast for my husband (he is too picky about his breakfast), but I decided to give it a try. He loved it, and asked for it again the next morning. I used turkey instead of ham (that’s what we had in the fridge), and added a slice of bacon! You can’t beat this recepi! Natasha, thank you!

    Ha Ha! Still chuckling at how easy this is Natasha! Easy, but Genius! Soooo tasty and wonderfully quick! I substituted some sliced red onion for a crunchier texture (I hope you don’t mind!) which I really love!

    I’ve made this before but not like you did in one pan. Now I’m hungry. I noticed you had an avocado on your counter. Do you use it on the sandwich or was it just for decoration? Just curious, because I love avocado.

      You can put it in the sandwich or just serve it on the side for breakfast which is what we did. I sprinkle avocado with salt and pepper and drizzle with extra virgin olive oil. So yummy! 🙂

    Omg yo Natasha made this just now only thing is next time need to toast the English muffin a little bit more but omg wowsa I am in such food heaven now in place of the chives which I didn’t have in hand I used parsley flakes and in place of the ham I definitely did sprinkle extra cheese (my fave part lol) and placed a few hot sliced jalapeno peppers and came out really very hooked mmmmm this one is a winner babes dd (dunkin donuts will definitely see less of me now lmao) such a gr8 economical saver and way creative with the English muffin love it

        Awwww thanx darlin must’ve watched the video a thousand times lmao to get right just the toasting part also forgot to tell u I added hot sauce @ the end definitely tell vadim in addition to the sliced jalapeno peppers he can also add hot sauce my pleasure Natasha anytime happy eating

    Wow Natasha another way cool sammie creation sometimes I wonder what to do with an English muffin will definitely be making sometime soon gotta also tell mom and maybe I’ll make this for Wednesday for me to take along my mouth is totally watering right now tho I cannot eat ham for kosher dietary reasons what’s another good substitute @ usual your videos r da bomb gr8 on camera personality will also pass along to my bestie Ariella she has six kiddies and it would definitely totally benefit her and the whole family keep them recipes coming gurl
