Hi Dixie! I haven’t tried this so I can’t provide specifics but I do think that quinoa would work. For the substitution, keep in mind that 1 cup quinoa makes 2 cups cooked quinoa and 1 cup uncooked white rice = 3 cups cooked. I hope that helps and let me know if you try with quinoa!

New to the website and before you use dried, the tend to plump up and for some reason do not digest easy?

Hi Rhonda, I haven’t tried that but from a quick search online, you can make dried blueberry muffins by folding in dried blueberries at the end; maybe 1/2 to 2/3 cup of dried blueberries.
