Zuppa Toscana – Olive Garden Copycat (VIDEO)

Zuppa Toscana is Olive Garden’s most popular soup. This one-pot, homemade Zuppa Toscana recipe is hearty and loaded with Italian sausage, kale, bacon and potatoes.

We love re-creating restaurant quality soups at home like our popular Clam Chowder Recipe. My sister Tanya taught me how to make this Olive Garden Zuppa Toscana and it has been a family and reader favorite since we first published it in 2010. We have since made it heartier and more flavorful. The classic just got better!

What is Zuppa Toscana?

Zuppa means soup and Toscana means Tuscan. Tuscan Soup! It is classically made with kale, potatoes, onion, and garlic then served topped with cheese.

Is Zuppa Toscana Spicy?

We use “Hot” Italian sauce which does give this soup a spicy kick but you can substitute with medium or mild Italian sausage and make a less spicy version then season with salt and pepper to taste.

Do I really need 1 HEAD of Garlic?

YES! We used a full head of garlic (about 10 large cloves). Do not skip the fresh garlic. Garlic gives the broth incredible and authentic Italian flavor. Since the garlic is sautéed, then simmered with the broth, it doesn’t overwhelm the soup. Garlic is also very good for you (a super food)!

Is Zuppa Toscana Healthy?

This soup is naturally gluten free and grain free. To make a Keto-friendly Zuppa Toscana, you can substitute potatoes with cauliflower.

For Whole 30 (dairy free), substitute the heavy whipping cream for 1 can of full fat unsweetened coconut milk (using the solid white cream portion only and adding it at the very end just to heat through).

Homemade Zuppa Toscana is loaded with Italian sausage, bacon, kale and potatoes. Learn how to make Zuppa Toscana soup as made popular by Olive Garden!

Ingredients 

Servings: 8 bowls
  • 6 oz bacon, chopped
  • 1 lb Italian Sausage, The "Hot" variety
  • 1 medium head garlic, 10 large cloves, peeled and minced or pressed
  • 1 medium onion, finely diced
  • 6 cups chicken broth/stock, (48 oz)
  • 4 cups water, (32 oz)
  • 5 medium russet potatoes, peeled and chopped into 1/4" thick pieces
  • 1 kale bundle, leaves stripped and chopped (6 cups)
  • 1 cup whipping cream
  • Salt and black pepper to taste
  • Parmesan cheese to serve, optional

Instructions

  • In a large pot or dutch oven (5.5 qt), over medium-high heat, add chopped bacon and sauté until browned (5-7 mins). Remove bacon to a paper-towel lined plate and spoon out excess oil, leaving about 1 Tbsp oil in the pot.
  • Add Italian sausage, breaking it up with your spatula and sauté until cooked through (5 min). Remove to paper towel lined plate.
  • Finely dice onion and add to the pot. Saute 5 min or until soft and golden then add minced garlic and saute 1 min.
  • Add 6 cups broth and 4 cups water, and bring to boil. Add sliced potatoes and cook 13-14 min or until easily pierced with a fork.
  • When potatoes nearly done, add chopped kale and cooked sausage and bring everything to a light boil.
  • Stir in 1 cup cream and bring to boil. Season to taste with salt and black pepper then remove from heat. Garnish with bacon and grated parmesan.

    So yummy! Taste healthier/fresher than Olive Garden. I substituted the hot sausage for mild because I have young children and one of them doesn’t like spicey food. It was a hit!

    made several times and LOVE.
    But yesterday i was in a hurry and cheated some.
    I bought 2 cans of potatoes and bob evans mashed
    cooked meat and onions hot (tialian and ground turkey) when meat was browned added potatoes and broth and water and boiled well
    about 5 to 10 min then add kale didnt need cream because the potatoes had it but did add some more …then when I served it I sprinkled bacon and cheese on top
    it was great and only took like 20 min or so. The only down side is with canned potates and bob evans it raises the salt. I usally cook LOW salt.

    Awesome! Thank you! We made this Sunday and had it for dinner for 3 nights! I also reduced the amount of water a little and deglazed the onions and garlic with white wine and cooked that down for 3-4 mins. This was way better than I remember olive garden’s soup.

    I just made this last night. Perfect for a cold rainy night…and my family loved it! They had seconds and thirds or maybe more. I just mixed in the crispy bacon bcoz I knew it wouldn’t be enough if we used it for garnish. The parmesan topping was a great addition as well.

    This soup was delicious! We have a local place that started making this but they are always sold out by the time I get off work so I decided to make it myself.

    I did add a tad more extra cream, and let it simmer for a few minutes before serving. It was wonderful.

    Some fresh grated parmigiano reggiano really sets this dish off.

    Natasha, thanks SO much for your incredible, copycat recipe of OG’s Zuppa Toscana. It tastes exactly like their soup. I DO agree the amount of garlic is absolutely necessary and adds a warmth & authentic Italian flavor. Thanks to this recipe, I will save money and make it myself.     This recipe is AMAZING! I’ve never tried it at Olive Garden but I’m sure this recipe beats that! The only minor thing I changed, was that I added some cream cheese! My husband and (very picky) 3 year old daughter devoured it! I will keep this recipe in my “favorites” book.

    I live in Scotland and every time we holiday in USA I have to research where the nearest Olive Garden restaurant is located as my wife loves their cooking.     This is my new favorite soup! The family lives it so much, we have it 3-4 times a month. I do cut down on the water just a cup or two and replace what I cut out with half and half. Also I use a Greek seasoning called Cavender’s in it that really adds in the flavor.

    Had to make some adjustments as I live in Central Europe and some ingredients are impossible to get. Replaced kale with cabbage and combined minced pork with some red wine vinegar, salt, pepper, paprika, oregano, garlic powder and chili flakes to substitute Italian sausage.

    Worked really well, I don’t know the original, but it’s delicious!

    Great soup family loves it, except when I use hot sausage the broth gets very red and even the heavy cream doesn’t clear it up, so I use Italian sausage and pepper flakes works well

      I am in complete agreement! I also use regular Italian sausage and add chili flakes for heat rather than the hot Italian sausage which leaves red oil floating on the top. Chili flakes make the soup “prettier” and flavour is still great!

    This is my favorite soup, and this is my favorite recipe for Zuppa Toscana. I see a lot of people concerned about crunchy kale. I cut them into 1/2 inch strips, and they’re always nice and tender. I use 4 cups kale, and 2 russets because I like this soup more brothy. I cut the russets in half then slice, so everything fits nicely on the spoon.

    For those who “don’t like kale”: this recipe is a GREAT way to use that super-nutrient-packed green. I never buy it, but got some in my CSA farm box and needed to use it. No one in my household likes kale raw or chewy at all, so I decided to try this recipe. I chopped it small and sautéed it with the onions and garlic. It was very tender and well cooked by the end. No bitterness and made a full, well-rounded meal in one bowl! Try it—I bet you’ll be amazed!

      Hi Moni! Yes, the kale can be crunchy. You may try boiling the soup a couple of extra minutes before adding the cream so that it has additional time to soften.

    This is definitely our favorite soup! I replace the kale with spinach, double the recipe and cook in the crockpot after sautéing the sausage. The leftovers freeze well for a quick meal later on. Creamy, spicy, delightful!

    I love making this! It has never failed me and my taste buds. I did not grow up very knowledgable in the kitchen, so do not fret this recipe is achievable! As of recently I have tried to incorporate less meats in my diet and will substitute, so I tried this using ‘Impossible Foods Plant Based Frozen Spicy Sausage’ which I bought at Walmart. I did not include bacon, frankly, vegan bacon is not good in my opinion. It came out fantastic too! So for those interested in experimenting I think it’s worth the try.

    I am confused, do i add oil to the pot in the very beginning when sautéing the bacon? I see no mention of oil in the recipe list or instructions

      Hi Stevie-Ray, we do not add oil to the bacon. While the bacon cooks, it releases the fat. You should get quite a bit of fat left over. We scoop out the extras but leave about 1 tbsp in the pot to saute the onions.

      Hi Debra, I haven’t tried to freeze this soup but, I make and freeze soups just about every week. I find that creamy soups kind of separate but, if you hold the cream and add it later, once it’s thawed, add it when you’re reheating it. Hope this helps.

      Hi Ursula, one of my readers shared the following great review on making this in a crockpot/ slow cooker: “We make it in a crock pot. We add the cooked sausage and all ingredients minus the kale and heavy cream. We add the cream and kale 30 mins before serving. It is perfect.” Another reader reported cooking on low for about 8 hours. I hope it helps!

      Hi Laura, I haven’t tried freezing this soup myself, but one of our readers wrote: “I freeze this soup all the time! I usually make a triple recipe so I can freeze some for later… It’s as good, or better!” I hope this helps.

        Hi Natasha, if you can freeze the Zuppa Toscana, I don’t see why you can’t freeze the Chicken and Wild Rice soup. What are your thoughts?

          Hi Brooke! Many of my readers have commented on freezing the Zuppa Toscana successfully but generally, I don’t recommend freezing because the cream can break up and separate as the soup freezes, making the reheating not so pretty.

    I’ve made this a handful of times. My husband loves when it’s on the menu. Has anyone left the sausage in while it simmers? I have tried it both ways and haven’t found much of a difference. It’s super delicious though! Thank you!

    I’ve never had the Olive Garden soup but this soup is so good!

    This is the closest knockoff recipe I have ever tried.
    I add about a teaspoon of sea salt and a teaspoon of black pepper for my taste.

    I interchanged the broth and water measurements and I still would have preferred more broth. I had to use a lot of seasoning to overcome the blandness. And I like my kale a little more tender so I added it earlier. But the core of the recipe is good.

    This was DELICIOUS!! ABSOLUTELY loved it! I’ve never had the soup at olive garden before but have seen it around online and it always looks so good. I used cheap tube sausage because that’s what I had on hand, and added Italian seasonings and crushed red pepper to it, used all broth (unsalted home made), no water and added about 3 extra cups broth (13 c total). Will be making this again! Loved the kale in the soup. The perfect dinner on a cold night. The garlicky, creamy broth is to die for, I’d definitely recommend adding more broth so you have plenty to drink at the end 😋

    This is absolutely delicious! I made the recipe as sown but added 2 big diced carrots (we love them), and added a big tablespoon of the Better than Bullion Italian herb seasoning to the water. So, so good….better than Olive Garden!

      Hi Jeanette! I have not tested canning this soup to advise how or if it would be possible. You could freeze it. A couple of my readers reported good results with freezing this soup.

    This is so easy to make and just delicious. I was a little nervous about all of that garlic. So, I only added about 1/2 a large head. While still good, it can easily use the rest, and I will do that next time. Thank you for the great recipe!

      HI Dave, it’s 10 cups of liquid total which generously serves 8. It does make a large pot of soup. If you desire a heartier soup, I would cut 2 cups water and then just add more if desired.

      Hi Regina, the only way we can keep running our site for free to our audience is to have advertising. We found that most people would rather scroll past the ad to get a free recipe than to pay a subscription. We have to be able to pay our 7-person team and keep things running and the ads pay for that.

    I’ve been making this soup ever since I tasted it at Olive Garden! I make the soup and use spinach at the end but I don’t add cream in the pot of soup, we add our cream to our bowls and than I don’t worry about it going bad, although it doesn’t last long. I have made it with hot sausage and mild sausage. I love your recipes.

      Hi Holly. I don’t have the exact measurement. Fresh garlic is stronger so you may need to use more than the recipe calls for if you are using minced garlic from a jar.
