Mom’s Chicken Fettuccine Alfredo (VIDEO)

Mom learned how to make this “Pollo Chicken Fettuccine Alfredo” in culinary school. She made it for us when we were kids and we were crazy about it. Now I make the same alfredo recipe for my family. It’s one of my favorite comfort foods. Watch the video tutorial and learn how to make chicken alfredo.

Ingredients for Chicken Fettuccine Alfredo:

We usually use chicken breast but chicken tenders would work well if that is what you have on hand.

Fettuccini is the pasta of choice here but we’ve been known to swap with angel hair or vermicelli. You can use a variety of pastas. P.S. sometimes we sneak in the full pound of pasta when feeding a crowd. 

Substitute for Half and Half?

This recipe calls for half and half, but you can substitute with equal parts of milk and heavy whipping cream. The half and half thickens as it simmers and even more as it rests. If you prefer a creamier or thicker sauce, you can use heavy whipping cream instead.

How to Make Chicken Alfredo (Video below):

1. Cook fettuccini in a large pot of salted water (4 qts water with 1 Tbsp salt,) according to package instructions then drain and set aside.

2. Meanwhile, thinly slice chicken breast into strips and season all over with salt and pepper. In a large, deep skillet, heat 2 Tbsp olive oil over medium/high heat and saute chicken until light golden and cooked through (5 min). Remove chicken from the pan and cover to keep warm.

3. In the same pan over medium/high, add 1 Tbsp olive oil and 1 Tbsp butter. Add onion and sauté 3 minutes until soft. Add sliced mushrooms and sauté until soft (5-7 min), stirring frequently. Add garlic and sauté another 30 seconds until fragrant, stirring constantly.

4. Add half-n-half and simmer over medium/high heat 8-10 min, or until just beginning to thicken. Add chicken back to pan, along with 1/4 cup parsley and season sauce to taste (1/2 to 1 tsp salt and 1/4 tsp pepper).

5. Add cooked pasta and stir to combine. Heat another minute until warmed through then turn off the heat, cover and let pasta rest 10-15 minutes then stir to combine and serve garnished with more parsley.

After the pasta rests, you will have a creamy but light Alfredo sauce that coats the noodles perfectly.

Ingredients 

Servings: 8 people
  • 2 lbs Chicken Breast
  • 3/4 lbs fettuccine pasta , (or angel hair or vermicelli pasta)
  • 1 lb white mushrooms, thickly sliced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 3 1/2 cups half and half, *
  • 1/4 cup parsley, finely chopped,, plus more for garnish
  • 1 tsp sea salt, or to taste, plus more for pasta water
  • 1/4 tsp black pepper, or to taste
  • 3 Tbsp olive oil, divided
  • 1 Tbsp unsalted butter

Instructions

  • Cook fettuccini in a pot of salted water (4 qts water, 1 Tbsp salt,) according to package instructions then drain and set aside.
  • Meanwhile, slice chicken into strips and season all over with salt and pepper. In a large skillet, heat 2 Tbsp olive oil over medium/high heat and sauté chicken until lightly golden and cooked through (5 min). Remove chicken from the pan and cover to keep warm.
  • In the same pan over medium/high, heat 1 Tbsp olive oil and 1 Tbsp of butter. Add onion and sauté 3 min until soft. Add sliced mushrooms and sauté until soft (5-7 min), stirring frequently. Add garlic and sauté 30 seconds, stirring constantly.
  • Add half-n-half and simmer over medium/high heat 8-10 min, or until beginning to thicken. Add chicken back to the pan, add 1/4 cup parsley and season sauce to taste (1/2 to 1 tsp salt and 1/4 tsp pepper).
  • Add cooked pasta and stir to combine. Heat another minute until warmed through then turn off the heat, cover and let rest 10-15 minutes then stir and serve garnished with parsley. 

Notes

*To substitute half and half, use equal parts of milk and heavy cream. If you prefer a thicker creamier sauce, you can use heavy whipping cream instead.

    I have made this a couple times. I love the receipt good taste, I have modified it with 2 Tbsp of corn starch and 1 cup of fresh shredded parmesan cheese. Everyone loved it.

    TERRIBLE! So bad I had to throw it in the trash. I typically like recipes from Natasha but this one is a no.. it was just noodles in milk.

      HI Sarah, I haven’ thad that experience, but I definitely would not recommend using milk or it will be too thin. If you like a thicker cream sauce, I suggest trying the sauce from our Creamy Shrimp Alfredo Pasta.

    I wish I had read the reviews first.. it’s like eating a bowl of cereal pasta. The cheese is really needed to thicken up the sauce. This is noodles in milk. I do not recommend this. It Is not alfredo

    All you recipes are really great. My kids love this recipe and we’ve made it many a times.
    However, if I can make a comment about your website. Ayayayay…..the number of ads that take up the space is insane. I have to think twice to decide whether I want to suffer through it to get to a recipe, or go somewhere else. Recently, I’ve been choosing other places.

    The sauce was pure water. And 1/4 cup parsley was disgusting. Sorry but absolutely not. Waste of money.

      Hi Stacia, the sauce would be watery if you used milk rather than half and half. Milk won’t thicken at all. This is supposed to be a lighter sauce than the one we used on Shrimp Alfredo – Please see the note at the bottom of the recipe card if you prefer a thicker sauce.

    Hi Natasha, this came out perfectly with nice super thick sauce because I work years as a Chef and Caterer in Florida so I knew to really ensure the chicken was thickly coated with Flour. The chicken was soft to bite into and so, so flavorful. Thanks for an easy quick dinner in under 20 mins.

    What can I replace Cream with in a lot of say, Alfredo etc recipes, I cannot tolerate cream but love the cream pastas

    Hi Natasha the sauce wasn’t very thick which is typical when you use half n half or milk ( in my case I only had 2 cups of half n half) and this is what I’m afraid of every time I make an Alfredo type sauce. Any suggestions?

      Hi Patti! This sauce isn’t very thick but it could also be because you used less than recommended. Generally a higher-fat cream results in a thicker sauce. This recipe also does not contain cheese like other traditional Alfredo recipes. You may enjoy my creamy shrimp alfredo pasta recipe which uses heavy cream and cheese.

    Rating is solely based on instructions. You cant cook this without making a mess using a skillet. I think saucepan or even a pot would be better. Also, you cant simmer on medium/high heat as instructed. Thats a boil at that point and if its boiling hot you’ll never really be able to tell the thickness. But 5 star taste.

    So I used a couple of substitutions, but this recipe still turned out pretty good. I used whole wheat spaghetti, and whole milk instead of half/half, since that’s what I had. I added a couple tablespoons of flour to the onion/mushroom mixture before adding the milk, and it seemed to help the milk thicken. This is a good, lighter Alfredo dish!

      Hi Linda, that is a bummer, sorry to hear that. It sounds like the heat was probably too high. Also, this sauce doesn’t get super thick like a heavy cream-based alfredo sauce but it should thicken up some and will thicken more off the heat.

    Great. There must be 500 fettuccine alfredo recipes available but I followed your recipe and reduced the quantity of each ingredient since I was making it for two people. I liked the layers of flavour and textures especially for a dish that’s easy to do lazily. Was worth the effort. I added a little parmigiana instead of salt since I expected cheese to be an ingredient. I also used dried parsley as I didn’t have any fresh to hand. Conclusion that it’s a very nice and simple dish that benefited from the extra care of your recipe. Thanks. I’ll make it again.

    Chicken Fettuccine Alfredo is my by far favourite Italian dish. I followed the recipe for the most part. I ended up adding 1 cup of parmesan cheese once the sauce thickened, waited until it all melted into the sauce and then added chicken. I also used fresh homemade fettucine. That elevated the dish to another level. It smelled and tasted absolutely amazing. My husband said it was a restaurant quality.

      When using a light cream (half and half), it is important to simmer the sauce until it thickens slightly or it will be too loose and won’t coat the noodles easily.

      Oh no! Sorry to hear that. Did you measure the half-and-half correctly and let it simmer long enough? I put in my recipe notes that the half-and-half thickens as it simmers and even more as it rests but if you prefer a creamier or thicker sauce, you can use heavy whipping cream instead of half-and-half.

      I had the same issue but I mixed a couple tablespoons of water with 1 tbs cornstarch and mixed it into the sauce. It thickened up quickly.

      I do not add parmesan because I feel that the recipe doesn’t need it anymore but others add and love it too. Feel free to sprinkle a little first then add more if you prefer that.

      Hi Genevieve. I have not made this with fat-free half and a half myself but I think it would still taste ok however, the sauce will not thicken very much and may be runny.

    This is SO good! The first time I made this, I followed the recipe as-is. The second time, I decided to add parmesan cheese and italian herbs to the sauce. It was amazing! To thicken the sauce, you gotta let it sit or add a teeny tiny bit of cornstarch/water mixture if you don’t want to wait. I also keep the pasta and sauce separate so that it can be stored for the next day – when it’s at its best!

      Hi Tammie! The half and half should thicken as it simmers and even more as it rests. If you want a thicker, creamier sauce, you can use heavy whipping cream instead but you have to be careful not to overhear as it can get oily and split. Also, be sure to use regular half and half (not fat-free). I hope that helps.

    Confused. Alfredo sauce is milk/cream, butter and MOST importantly good quality parmesan or pecorino cheese.
    This is closer to a bechamel sauce, not an alfredo. Maybe I am missing something ?

    Watery, bland and completely flavorless. Good choice for nursing homes. My kids wouldn’t even eat it though. Do not recommend. Unless you like drinking milk with chicken and noodles in it cuzv that’s all this is. So gross

      Hi Joseph! Yes- it is different than other traditional alfredo recipes. My mom learned how to make this “Pollo Chicken Fettuccine Alfredo” in culinary school. She made it for us when we were kids and we were crazy about it so that is what inspired this recipe. You can always add cheese. Many of my readers who tried this recipe have also added cheese.

    I’m not sure why but when I make this, it comes out very oily. I reduced the total oil for cooking to 1 TBSP instead of 3 to see if that was what was causing it, but it still was oily. I’m not sure what I’m doing wrong

    Um, fettuccine in name of recipe is so incredibly different from angel hair pasta.
    Kinda seems like you tossed in other pasta ideas for no reason.
    I would suggest naming it Chicken Pasta Alfredo to not mislead!

    I don’t know how this has so many good reviews. It was tasteless I added parm to the sauce because it just tasted like half and half with a little butter which is what it is. For as fattening as this was within 15 minutes it was sticky pasta with no creaminess. I went back over the recipe to see if I did something wrong and I did not.

    Amazing taste and simplicity at the same time. I’ve tried several recipes of Alfredo pasta. This one is the best so far. Minor suggestion – I’ve added a few sun-dried tomatoes to the recipe (cut to the dime size pieces). Just for the color and some extra touch of the taste. thank you for your recipe!

    This was delicious!! I used the heavy whipping cream instead of half and half. I also added peas and parmesan and made this all in one pot (didn’t set the chicken aside, just added the other ingredients after browning chicken briefly and then of course adding the pasta after it was cooked). I salted a good bit, but we just might prefer more salt. So yummy, my 6 and 9 year olds loved it too!

    Great basic sauce. It needed something. I added some instant chicken bouillon. Cheese would be wonderful as well. Maybe next time. Added some parmesan to the end as a topping. Good overall.

    There is no cheese in this recipe so it should not be called Alfredo. Traditional alfredo has cheese in the sauce. It was good but I think you should change the name b/c it’s misleading.     This is not an Alfredo, it’s a Tetrazzini.
    Alfredo is: cream, butter, pepper, cheese. That’s it.
    Tetrazzini is: chicken/turkey, mushrooms, garlic, cream, butter, pepper, cheese.

      Hi Vicki, when using a light cream (half and half), it is important to simmer the sauce until it thickens slightly or it will be too loose and won’t coat the noodles easily.

    It was my grandson’s birthday and he requested Chicken Alfredo. Surprisingly I had all the ingredients in the house so I decided to try your recipe. I wanted to add Parmesan Cheese to the sauce but my grandson dislikes it. I was pleased how rich, thick and delicious the sause was and so simple.     Phenomenal recipe! Used a whole lb of fettuccini, reduced my half n half to 2 1/2 cups, and added 1/4 cup of each Parmesan, Romano, and Asiago and it was a bit creamier with a heartier cheese taste. The parsley makes this dish!

    I do not mix all chicken with noodles, because I like to use that chicken with mashed potatoes the next day. So, I have usually two meals: with noodles today and mashed potatoes or rice or buckwheat tomorrow.I liked the recipe very much.     Hi Natasha! I’m new to your channel and have quickly become a huge fan..your recipes look sooo yummy 🤤 i wanted to ask if you have a recipe for this Alfredo without the chicken? Not that i don’t want to make it with chicken but I only have a whole chicken right now and I plan to make it using your instant pot whole chicken recipe. I’m afraid it won’t have the full flavor of yours without it. Any ideas? Also how would you reheat the leftovers?

      Hi Carla, To be honest, I haven’t tried freezing it but I think it might work. I’d add a little bit more cream or half and half when re-heating to make sure it isn’t dry.

    I have used this recipe a few times but always wondered why you don’t use any freshly grated parmesan cheese with it. It is still my family favorite but we always add some parmesan.

    Hi Natasha! I tried this recipe yesterday and it was soooo good!! I’m a beginner in cooking so I wasn’t sure how this was gonna turn out, but it totally exceeded my expectations! My family loved it too🥰 the sauce is light and creamy but not too thick which is perfect! Will definitely try this out again😋 looking forward to trying your other recipes❤️

    Alright. I love the combination of mushrooms and onions. You just can’t go wrong. Let me tell you, I have a few kids that don’t like mushrooms but they loved this. And I didn’t scrimp on the mushrooms either.

    Would you recommend reserving some pasta water to combine with the sauce and the noodles to finish this? That’s my go to method with tomato based sauces but not sure how it would work with a cream based sauce…

    I absolutely love watching you cook some awesome meals and I made your Chicken Fettucine Alfredo recipe but was surprised that you don’t add fresh grated parmesan to yours, I told my wife and daughter and they both wanted parmesan cheese added to it… they loved it with garlic toast, just wonder why your recipe doesn’t have it as many do.

      Hi Karin, I really haven’t tested anything else with this recipe that is dairy-free. One of my readers recently mentioned that they use the cream from canned coconut milk to make my zuppa toscana soup recipe creamy without using milk cream, but I haven’t tested that here so it’s hard to recommend it here. The almond milk would not be thick enough on it’s own but it may work if you add 3 Tbsp of flour after the mushrooms are cooked and sauté the mushrooms with the flour for a couple minutes until golden then slowly add about 2 to 2 1/2 cups almond milk and bring to a simmer, whisking until it thickens. I haven’t tried this method myself but I’ve seen it done online. Sorry I can’t be more helpful – that’s my best guess!

      Hi Neil, that can happen if you boil at too high of heat, or for too long. Also, if adding parmesan, I would turn the heat off after adding it or it can clump in the sauce.

    So dissapointed in myself. I added half a cup of grated parm and a tsp of flour to thicken the sauce, and it ended up clumping, which is fine as long as the flavor was right. However, I found the mushroom to be overpowering, and masking any creamy flavor. I’m also not sure if I liked the onion. Overall, I wasn’t getting the delicious thick creamy comfort of alfredo that I was going for. Thank you for sharing your recipe though.

    My Italian grandmother used to make me and my cousins pastina when we were growing up. It’s made with Acini de Pepe pasta, one egg (whisked and then dropped into the water after the pasta cooks), butter, parmesan, salt, and pepper. It’s really good.

    Oh how Delicious!
    I followed each step, plus I added a half cup of parmesan cheese, mix into ingredients; thereafter, I added the parsley.
    Allowing the dish to sit for 10-15 minutes is the key. The sauce will thicken.

        I’d suggest not using any salt in the pasta water or adding any to the dish itself, if that’s the case. The butter and half and half already have it and the onions and garlic within the recipe will add a ton of flavor as is, so you really shouldn’t miss out on flavor all that much.
