Lasagna Roll Ups Recipe (VIDEO)

Lasagna Roll Ups combine the best of classic Lasagna but are much easier to serve, bake faster and can be enjoyed right away – no resting time required! They are make-ahead, freezer-friendly, and reheat well.

We love comforting pasta dishes like Chicken Tetrazzini, traditional Spaghetti and Meatballs and Mom’s Chicken Alfredo. These are among the most requested meals in our family. Try this Lasagna Roll-Ups recipe and you will make it over and over.

Lasagna Roll-Ups:

We love lasagna in all forms including Skillet Lasagna, make-ahead Slow Cooker Lasagna, and of course Classic Lasagna. These Lasagna Roll-ups are beefy, saucy, cheesy and definitely satisfy the craving for lasagna, but they are way easier to serve. No more messy lasagna squares sliding apart as you struggle to remove them from the pan.

The Ultimate Cheese Sauce:

We make a 3-cheese sauce with ricotta cheese, shredded mozzarella, and parmesan cheese. Once the sauce is baked, it tastes almost like an alfredo sauce – rich, creamy, and cheesy.

Beefy Lasagna Meat Sauce:

The best meat sauce for lasagna is essentially a ragu – a meat sauce with ground beef, onion, seasonings, and marinara. We don’t skimp on the meat and use a full pound of ground beef which makes this lasagna supremely satisfying. You can use homemade marinara or your favorite store-bought marinara.

Can I Substitute the Ground Beef?

You can swap out the ground beef for Italian sausage or use ground turkey or ground chicken if you want a leaner lasagna.

How to Make Lasagna Rolls:

The process here is simple and you have all the elements of a classic lasagna but they are rolled rather than layered. This results in 12 perfectly portioned servings of lasagna. It’s brilliant for parties! The process for lasagna rolls is simple:

  1. Cook the noodles
  2. Make the meat sauce and spread 1/2 cup in a 9×13 casserole
  3. Make the cheese sauce
  4. Spread cheese sauce and meat sauce on each noodle.
  5. Roll up noodles, transfer to the casserole dish, spread with remaining meat sauce and mozzarella, then cover and bake.

Tips for Assembling Lasagna Roll-Ups

  • Cook 2-3 extra noodles as some may break while boiling.
  • Cook noodles according to package instructions in salted water until al-dente (do not over-cook). We use about 3 Tbsp salt for a large soup pot of water.
  • Drain cooked noodles then cover them with cold water until ready to use so they don’t stick together.
  • To contain the mess, arrange the noodles 6 at a time on a rimmed non-stick baking sheet (keeping remaining noodles in cold water until ready to use).

Can I Make Lasagna Roll-Ups Ahead?

There are 2 options to make these lasagna roll-ups ahead of time.

  1. Fully assemble and bake, then cool to room temperature, cover, and chill. To serve, reheat portions in the microwave or oven until roll-ups are heated through and cheese is melted.
  2. Fully assemble roll-ups in a casserole dish (without baking), cover tightly with foil and refrigerate overnight or freeze up to 3 months. Bake refrigerated lasagna roll-ups at 375˚F for about 45 minutes. Bake from frozen at 375˚F for about 1 hour.

Ingredients 

Servings: 12 lasagna roll ups
  • 12 lasagna noodles, cooked to package instructions
  • 16 oz ground beef, 85% lean
  • 24 oz marinara sauce
  • 1/2 cup diced onion
  • 3 garlic cloves, minced
  • 1 tsp sea salt, or to taste for red sauce
  • 1/2 tsp black pepper, or to taste
  • 1/2 tsp dried oregano
  • 15 oz ricotta cheese
  • 1 large egg
  • 1/4 cup parmesan cheese, shredded
  • 3 cups mozzarella cheese, shredded, divided
  • 1/4 cup parsley, chopped, plus more to garnish

Instructions

  • Preheat oven to 375˚F. Cook noodles in a large pot of salted water according to package instructions then drain and fill pot with cold water to stop the cooking process and keep noodles from sticking together.
  • In a deep pan or dutch oven, over medium-high heat, cook ground beef until no longer pink, breaking up with a spatula (2 min). Add onion and cook until softened (3 minutes). Add garlic, 1 tsp salt, 1/2 tsp pepper and 1/2 tsp oregano and sautee another minute. Add marinara, bring to a simmer and turn off the heat. Spread 1/2 cup meat sauce over the bottom of a casserole dish
  • In a large bowl, stir together: ricotta, 1 egg, 1/4 cup parmesan cheese, 1 1/2 cups mozzarella cheese and 1/4 cup parsley.
  • To contain messiness, arrange noodles over a large baking sheet in a single layer. Spread 1/4 cup (1 scant ice cream scoop) of cheese mixture over the top of each noodle. Add a heaping Tbsp of meat sauce in a strip down the center of the noodle. Roll noodles up and arrange in the prepared casserole dish.
  • Spread remaining meat sauce over the tops of roll-ups and sprinkle on the remaining 1 1/2 cups mozzarella cheese. Cover with foil, making sure foil isn't touching cheese (if your pan is on the shallow side, you can put toothpicks into rolls to keep the foil away from cheese.
  • Bake covered at 375˚F for 40 minutes. Remove foil and broil another 2-3 minutes or until cheese is lightly golden. Garnish with parsley to serve.

      You’re welcome, Heather! You’ll want to bunch the herbs closely together, keeping them tight. Use a good knife, like a large chefs knife and finely chop them with a rocking motion. You can watch a YouTube tutorial to help visualize it.

    Just made these tonight for my family and a test run as a meal for a healing friend. Wow wow wow!! So incredibly delicious and this will be my new replacement for Barefoot Contessa’s lasagna that I usually make. I did use ground turkey instead of beef – and will also use sweet Italian sausage on some future occasions. Also added minced garlic to cheese mixture ( I always do). Serious perfection – thank you!

    I’m so excited to try this recipe but just a question. My dad doesn’t like ricotta cheese so when I make lasagna I just use cheddar cheese and mozzarella cheese. Would that work with these or is there another substitute. Don’t want them to be dry by removing the ricotta.

    Finally, was able to make this yesterday and my boyfriend is in lasagna heaven. He said the best lasagna he tasted ever.     This is a go to when I want to impress the family. I do one with beef and the other with half turkey and spicy sausage. Turns out great every time. I portion each left over amount into baggies and freeze. So nice to pull them out of the freezer and have a quick yummy meal. This is a favorite in my household.

    I follow you faithfully on FB. Love your food, your videos are fun to watch. I made the lasagna roll-up again this week and again they are dry. I tried adding water to the marinara sauce. Kept them covered as much as possible. What am I doing wrong?

      Hi Lucy, I haven’t had the experience of these turning out dry – they are usually very moist and saucy. I wonder if maybe it’s getting over-baked? If your oven runs hot, you might turn down the temperature and also make sure you aren’t using Convection oven mode which would definitely need an adjustment of temperature or time in the oven. I hope that helps!

    I’ve made lasagna rolls before, though not your recipe, which is made and sitting in the fridge waiting to be baked for company this evening. It’ll be wonderful as I’ve tasted all the components and know before hand. I did a minimal amount of tinkering, I added cooked frozen spinach to both the sauce and the ricotta mixture, used sweet Italian sausage instead of ground beef, and Rao’s Arrabiatta instead of marinara, we prefer spicier here. Thanks, I like the approach you’ve taken. The toothpick idea is a good one, and my other recommendation is if clearance challenged, use Reynolds nonstick foil, it’s just perfect for this situation.

      Les, when I make lasagna I usually use 1/2 sweet Italian sausage and half ground beef. Even pour in a bit of red wine to simmer in the sauce.

    This was excellent! I made last night for our family of 4 adults and everyone approved. I made one change- I added chopped spinach to the cheese mixture (1 bag frozen, cooked and then well drained, and cooled) instead of parsley as I didn’t have any. I can see this being a great base recipe for other flavors- maybe a Mexican lasagna? Thanks again for a great recipe Natasha, they are always a success!

      Easy to make and delicious. Even my 2 year old said they were so yummy! I’m just curious on the freezing and reheating. I fully cooked them, then froze the half we didn’t eat. Is the best recommendation for reheating them the same as stated in the recipe when it is frozen unbaked… which is 375 for an hour from frozen. Or should I let them thaw? Or microwave? Just curious what is best.

    I am planning on using your marinara recipe which calls for 3 cloves of garlic, dried oregano etc. instead of the jar of store bought marinara. Your marinara calls for 3 cloves of garlic and 1/2 teaspoon of oregano as does the lasagna roll up recipe. Do I need to adjust the amounts, or do I use a total of 6 cloves of garlic and a full teaspoon of the oregano? Thanks so much!

    I know these will be wonderful from all the comments that I read. I made them today for dinner tomorrow. ? I want to make these for Christmas dinner for about 15 people. After making the rolls I was wondering can I freeze just the rolls on a cookie sheet when frozen put them in a zip lock bag and then defrost and continue with the recipe. I work in retail and do not have much time off during the holidays. I thought if I could do this, it would make my life for much easier

    Love this recipe! So yummy! I have a question though about baking after freezing…I read the section in the recipe about freezing and searched all the comments and your responses related to this, but I still have a question…lol. I’m not clear about what “baking from frozen” means exactly. I am going to put it all together and freeze it without baking it. When I “bake from frozen,” does that mean it can go directly from the freezer into the preheated the oven? Or should I thaw it first? Thanks much Natasha!

    This recipe turned out so good! I’ve seen a lot of comments in other recipes say “5 stars, it was so good but… I had to add our change this and that..” in my opinion that’s not a five-star recipe. That is not the case in this recipe tho. I changed absolutely nothing. And I actually watched the video and took her advice and made an extra couple noodles just in case. And guess what, I needed them! I’m definitely going to be following Nat, and her recipes.

    I use the homemade marinara recipe I took from your chicken Parmigiana recipe. It’s the only red sauce I’ll use when making the likes of spaghetti, lasagna and so on. Just thinking about makes my mouth water

      Hi Eliza, Marinara sauce is listed in the ingredient list on the recipe card. You can either purchase a 24oz jar of marinara sauce or make your own following the Marinara sauce recipe linked. I hope this helps!

      Hi Nadia! I don’t have a specific amount of time to cook them, cook the noodles in a large pot of salted water according to package instructions or until they are done. Also, you can use a pan if its deep enough.

      Hi Justine, you would cook the entire recipe from frozen. Here is a note we have in the recipe. “Fully assemble roll-ups in a casserole dish (without baking), cover tightly with foil, and refrigerate overnight or freeze up to 3 months. Bake refrigerated lasagna roll-ups at 375˚F for about 45 minutes. Bake from frozen at 375˚F for about 1 hour.” I hope that helps.

    I love these. I make them often. I am going to make them for a wedding buffet. I am putting them in a chafing dish pan that will hold about 40 rolls. Going to bake from frozen. Will i need to change temp or bake time?

    I’ll be making the lasagna roll ups in a couple days and wondering if I make my own marinara sauce do I need to add more onion garlic oregano and salt and pepper when make this since have those ingredients in my sauce?

    I have not made your version of this, but I’m at the store right now purchasing items. I’ve made other variations of this before. Just an FYI to anyone who might want to know. My entire family hates Riccota cheese, I find that a good Romano, Parmigiano Reggiano And mozzarella cheese (the fresh kind works more like a ricotta) works just great in all lasagna type applications. Thanks for this recipe it’s the first I’m trying from your blog. Final note, wish people would read the entire article (take the few minutes it takes), half of the questions that people are asking are ALREADY AVAILABLE IF YOU READ THE ENTIRE POST. don’t mean to be rude, but this seems like a logical step to take before asking something that she already took the time to include since she is doing this website and doing it correctly by answering the “common questions” ahead of time that’s all. Thank you again! Can’t wait to make for the 6 hungry grown men that I feed everyday!

      Denise, you may be happy to know that here in Florence, Italy, and I think all the north of Italy, they don’t use ricotta in lasagna, just mozzarella, the meat sauce, parmesan cheese and a besciamella sauce!!
      Ricotta is used more in pasta and dessert dishes in Sicily. Ricotta makes this dish too heavy!

    Love this recipe Natasha, its so much easier than making standard lasagne. I made this today, I live in Scotland and we don’t generally use the ricotta mixture, instead we make out lasagne with Bechamel Sauce.     I made this for dinner the other day and it was amazing! The recipe is easy to follow and I followed it to a T and also cut the boiled lasagna noodles in half so there would be more roll ups. It was a hit in the house and so much fun to make! It was a bit time consuming with putting the cheese and meat sauce in the middle of the lasagna noodles and rolling them up but it is definitely quicker than making a regular lasagna! Spraying your foil with cooking spray also helps the cheese not stick to the pan along with putting in a few toothpicks in the dish. This recipe is a keeper!

      Hi Barbara, I haven’t tested this with oven-ready lasagna, but here’s what one of my readers wrote: “I haven’t tried using the oven-ready ones but I did find a recipe online where they used oven-ready but still boiled them to soften so you could roll them up, which defeats the purpose of buying no boil.” I hope that helps.

      You can replace the ricotta mixture with a Bechamel Sauce (white sauce) and add whatever cheese you like, its not as thick but thats what we use in the UK. Its a Northern/Southern Italy type of debate.

      I Cheryl S. , I have been making these now for almost 60 yrs..yes. I assemble all just like I am putting them right in the oven. But I double wrap completely & freeze. I take them out day before and defrost on counter. Then refrigrate until the next day. Remove from fridge and let stand about 1 12 hrs room temp until ready to bake. Another hint.>> I take 2 boxes of lasanga noodles par cook in oval roasting pan boiling water on top of stove and fill my sink up with cold water. Transfer “par cook noodles” in cold water, lay clean bath towels on counter, drain & pat dry each noodle place on towel then Cut each in half. Have your ricotta mixture ready and spoon in center on half noodle, wrap both end over. Then place on large cookie sheet not touching and I do several layer with wax paper in between. Then I freeze over night. Next day, I remove them either seal a meal bag or I prefer to put in large plastic containers such as plastic shoe boxes. Layer with wax paper between rows. You have enough for many many meals ahead. Then remove what you need, and bake in your favorite sauce. I have frozen mine for as long as 6 months including home made raviolis and homemade spaghetti.

      Hi Karen, I haven’t tried only cottage cheese but I think the texture would be changed a little bit in the sauce. The ricotta blends better.

        I’ve been using cottage cheese for years in lasagna, just throw it into a food processor 1st. Works like a charm!

    What I loved about this recipe is that I could make some “rolls” tailored to my family’s dietary needs and preferences. I made 4 rolls without cheese/dairy, some with extra cheese, I added spinach to some as well. We had 4 different types all in one pan – THANK YOU I will not be making lasagna the traditional way again

    While it’s tasty, I prefer Italian sausage to ground beef. Let your meat sauce thoroughly cool before spreading on ricotta mixture or else it all oozes out when you roll it up

    I made these this past weekend and were really delicious! Had a lot of leftovers since it’s just me and hubby so I put some of the cooked leftovers in the freezer. Will they be ok to take out in a couple days and reheat? I only saw directions on freezing it when theyre uncooked. Thanks

      Hi Sara, we have a note on that on the recipe. Here’s what it says: “There are 2 options to make these lasagna roll-ups ahead of time.
      Fully assemble and bake, then cool to room temperature, cover, and chill. To serve, reheat portions in the microwave or oven until roll-ups are heated through and cheese is melted.
      Fully assemble roll-ups in a casserole dish (without baking), cover tightly with foil and refrigerate overnight or freeze up to 3 months. Bake refrigerated lasagna roll-ups at 375˚F for about 45 minutes. Bake from frozen at 375˚F for about 1 hour.”

    I never understand why cheese measurements are stated in cups. We don’t buy cheese that way. It’s measured in ounces when we buy it. It would be so much better if all recipes gave ounces of cheese. 3 cups of mozzarella equal 12 ounces.

        And some people grate fresh blocks, so the cup measures are helpful to me for that. Also most preshredded bags show the cup conversion. Most are 2 cups.

    I am a 22-year-old just starting to learn how to actually cook more than the basics or things that have more than 3 steps. I’ve made 2 of your recipes ( Italian pasta salad and Lasagna Roll-ups) and both were so easy and so delicious. I made the pasta salad for memorial day and barely go to take any home! And my close friend said the lasagna tasted like his mom’s! Im definitely looking for my next recipe from you

    Do you think I could add cooked fresh spinach to the cheese mixture? When I do stuffed shells, I mix spinach in with the ricotta and mozzarella…added color ☺

    Thank you for this lovely recipe. The ground beef is so good. Just need some pointer on instant lasagna. The package says no pre-cook required but the lasagna sheet tasted little chewy. Can I opt to cook the sheet like how you did with instant lasagna sheets? Thanks.

      Hi Alice! You’re welcome! I’m glad you enjoyed it. Someone has reported using no-boil or oven-ready lasagna noodles and cooking them a few at a time in boiling water for 30 seconds, then laying them out on a kitchen towel and used them that way.

      Sheila – Try Boursin Garlic and Herb Cheese instead of ricotta or cottage cheese. A bit more flavor and texture that regular cream cheese!
