Shrimp Fajitas Recipe (VIDEO)

Shrimp Fajitas are so flavorful and couldn’t get any easier! A one-skillet shrimp fajitas recipe with plump juicy shrimp, tender charred vegetables with an amazing fajita marinade. Be sure to serve them with Jalapeño Ranch.

Shrimp Fajitas Recipe:

Make this shrimp fajita recipe once and you will make it over and over. The marinade is perfectly seasoned so every delicious bite of your fajitas has sweet, savory and smoky flavor.

How to Make One-Pan Shrimp Fajitas:

The easiest way to cook fajitas is on the stove top. They are quick, easy and come together in one pan. We also included grilling instructions below if you want to cook them outdoors (think: camping!).

  1. Stir together cajun seasoning marinade ingredients in a small bowl.
  2. Place sliced peppers and onion in a bowl and stir in 1/2 of the marinade.
  3. In a second bowl, pat dry shrimp and stir in the remaining marinade.
  4. Heat a large skillet over medium heat with 1/2 Tbsp oil. Sautee shrimp 1-2 min per side then remove.
  5. In the same pan, sautee vegetables 10 min or until soft and browned then turn off heat.
  6. Add back shrimp with their accumulated juices. Toss with 1/4 cup cilantro and a squeeze of fresh lime juice. Serve with toasted tortillas and Jalapeño Ranch.

How to Make Shrimp Fajitas

How to Warm Flour Tortillas:

There are several methods to warm tortillas and it should be done just before serving. The easiest way is to wrap a stack of 5 tortillas in a damp paper towel and microwave for 30 seconds at a time until warmed through. Wrap warmed tortillas in aluminum foil to keep them from cooling and drying out. Here’s interesting read on the best tortillas.

Tortillas can also be toasted about 15 seconds per side on:

  • A gas stove-top over a medium/low flame (watch the video below)
  • A hot dry skillet, griddle, flat cook top, or BBQ grill grates

Want to Make GRILLED Shrimp Fajitas?

Grilling your shrimp fajitas adds another smoky layer of flavor. What you will need: 4 skewers (soaked in water 30 minutes if using wooden skewers)

  1. Preheat grill to medium/high heat (400˚F). Brush the grilling basket with oil to prevent sticking.
  2. Skewer shrimp onto skewers, so they are just barely touching and not packed together then grill 2 minutes per side or until just cooked through. Remove shrimp from skewers and place on a platter.
  3. Place the vegetables in the grilling basket and grill until lightly charred (about 10 minutes), stirring every couple of minutes and keeping the lid closed between stirring.

Shrimp Fajitas Recipe in Skillet
Shrimp Fajitas are so flavorful and couldn't get any easier! A one-skillet shrimp fajitas recipe with plump juicy shrimp, tender charred vegetables with an amazing fajita marinade.

Ingredients 

Servings: 4 people

Fajita Marinade Ingredients:

  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 Tbsp lime juice, from 1/2 lime
  • 1 Tbsp cajun spice
  • 1/2 tsp salt

Shrimp Fajita Ingredients:

  • 1 lb large shrimp, peeled, deveined
  • 2 bell peppers, (any color) sliced
  • 1/2 medium onion, sliced
  • 1/4 cup cilantro, chopped
  • 2-3 tsp lime juice , (from 1/2 lime)

To serve:

  • 8 small flour tortillas
  • Jalapeno Ranch
  • 1 avocado, sliced
  • 1 lime, cut into wedges

Instructions

  • In a small bowl, combine marinade ingredients: 1/4 cup olive oil, 4 cloves garlic, minced, 1 Tbsp lime juice (from 1/2 lime), 1 Tbsp cajun spice, 1/2 tsp salt.
  • Slice bell peppers, and onions the same 1/3” thickness and place vegetables in a medium bowl. Pour half of the marinade over the top then toss to combine.
  • In a second medium bowl, pat dry shrimp with a paper towel, add remaining half of the marinade and stir to combine.
  • Heat a large heavy pan over medium heat with 1/2 Tbsp oil and when hot, add shrimp in a single layer and sautee 1-2 minutes per side or just until cooked through and no longer translucent then promptly transfer to a plate.
  • In the same pan, add marinated vegetables and saute until soft and golden brown at the edges (10 min), stirring occasionally, then turn off the heat.
  • Add shrimp back to the pan along with 1/4 cup chopped cilantro. Squeeze fresh lime juice to taste over the mixture and toss to combine. Serve fajitas with warmed or toasted tortillas* and jalapeno ranch, or your favorite sauce.

Notes

*To Warm Tortillas: Wrap a stack of 5 in a damp paper towel and microwave 30 seconds at a time until warm.
* To Toast Tortillas: Place individual tortillas on a hot dry skillet, griddle, low gas flame or grill for about 15 seconds per side until lightly browned.

    I’m going to try these tonight! Is there a reason not to cook the peppers first, and add the shrimp at the end to cook? Instead of cooking shrimp, setting aside, and adding back to the pan at the end? Thank you!

    Another awesome recipe! We cooked the veggies for longer, omitted the extra salt, and left out the cilantro to suit my family’s taste. I loved the fresh lime. It was way better than restaurant fajitas. This is another one of Natasha’s kitchen recipes that will be on repeat in my house.

      Hi Donna, you can easily cut down the salt and then just season to taste at the end if desired. When shopping for cajun seasoning, note the sodium content and pick the one with less sodium. I’m not a nutritionist and I always suggest that you talk to your doctor to determine the proper sodium intake, but I hope that answer is helpful to you. Enjoy the shrimp fajitas!

      Hi Liz, the shrimp is the most flavorful part of this recipe – I wonder if maybe you forgot the cajun or used a substitute for it? Cajun and all of the ingredients listed here add tons of flavor normally.

    My husband declared these to be restaurant quality – which is high praise considering we just got home from Mexico a week ago. I made pork fajitas the other day, and these blew those out of the water. The oil in the marinade is probably what has the biggest impact on how well they turned out. So juicy and flavourful.

    This is my most favorite dish at an Authentic Mexican Restaurant here in Bangor, ME. I actually have made my own using your recipe. It was great! I don’t eat the fajitas. I give them to my husband. Less carbs for me! LOL. I do eat the other sides that comes with the meal: rice, salad and I always ask for whole Pintos instread of refried beans. YUM!

    Amazing fajitas & super easy! I used Chef Prudhomme’s Fajita magic for the Cajun seasoning & it was perfect! Fresh cilantro is key. I also used a little sour cream when putting the tortilla together. Delicious!

    Hi – I noticed that the recipe named Fajita has a cajun spice – which I think has more Italian seasoning than the Mexican spice mix called Fajita. Have you tried fajita spice mix for this recipe? I assume it would work fine – any thoughts?

      Hi Mary, cajun spice is a seasoning that is popular in Louisiana in cajun cuisine. I don’t think it has much Italian influence.

    So (finally) got to making these last night. In fact made 3 of your recipes last night Natasha! Shrimp fajitas, Jalapeno ranch, and Shrimp cakes. Yes, crazy I know. But, with “wows” and “when are you making it again” comments round the table, it was worth it!

    The Shrimp fajitas turned out soooo good. I added spring onions to the veggies. And add some hot chilli powder to the marinade. Worked great.

    My sister and I made this recipe twice so far. We made it yesterday for dinner. Our family loved it! We used your shrimp taco sauce recipe to serve on top of the shrimp fajitas. It was delicious!     These are so, so good!! It’s my go-to recipe night now. Everybody in my family loves them, from 6-44. I generally do at least 2 meats and chicken works out amazing in the marinade as well. I could literally eat them half the week. IF there are any leftovers they turn in to an amazing “burrito bowl”. Every time I make them multiple people reiterate how great they are.

      Hi Pam, we used raw shrimp. Pre-cooked shrimp will become rubbery and tough when cooked again.

    These are the best fajitas I have ever had. The only thing I changed was that I added about a quarter teaspoon of Chili powder. I like a little Heat in my fajitas. DELICIOUS!

    Excellent! I made this without cilantro and the cajun spice (though I add most of its components). But still, it was the best shrimp recipe I had made so far. It’s light but extremely tasty. The combination of shrimp and bell pepper goes perfect! The chilly taste of the spice along with the mild sweetness of onion and sourness of lemon juice is brilliant. And the whole thing with some crispy tortillas is just heavenly. I enjoyed it a lot. Thanks! Will definitely make this again and again.

    The best ! Got a 10 outa 10 rating from very hungry men!! I quadrupled the recipe and still had no leftovers!!!!! Made my cajun season as you suggested ( added Cumin!) and cooked the veggies first as I did not want to risk overcooking the fresh shrimp! Jalapeno ranch was perfect – luckily I made enough for the southwestern “slaw ” ! Thank you for excellent directions and results!!

    I made this for dinner last night and I cannot say enough great things about this recipe!! So easy and so delicious. I used Tony Chachere’s original creole seasoning, which I only recently discovered. It worked so well with this recipe. I followed the recipe exactly as I usually do when making something for the first time. No changes necessary, it’s perfect as is. Thank you so much for sharing!

    I made thes but I did change a few things, before I added the shrimp to the marinade, I sprinkled the shrimp with Old Bay, let that sit for a bit, and I used Bang Bang sauce….yummmmm!

      Hi Dana, we have always made them fresh but I imagine that will work. I worry the veggies will get soggy, however. If you experiment, let me know how you liked the recipe.

        5 star-I prepared this recipe but decided not to cook all of it. I placed 1/2 of the shrimp and 1/2 of the veggies, placed each in separate zip lock bags. 3 days later, I cooked the marinated shrimp and veggies. The veggies were as crisp as the 1st day.

    This is my second NK recipe this week. Made the chicken fritters last time and they were amazing. These were fantastic too. So flavorful and delicious.

    I Highly recommend making the jalapeno ranch too–SOOO good.

    My kids are now at the place where, when I see any skepticism from them about “what’s for dinner,” I tell them, “I got the recipe from Natasha.” And they are all like, “Whew. Ok. It’s cool then.” 🙂

    I made the shrimp fajitas tonight for the family and they were a hugh hit! Wonderful flavor and easy to prepare. For the dressing, my wife isn’t fond of jalapenos, so I took some ranch dressing, added some Cajun spice, Louisiana hot sauce, lime juice, and cilantro. It complimented the fajitas very well. Thanks for a wonderful recipe! I use a lot of your recipes in my daily cooking, and this will become a regular!

    Amazing! My family loved it, it was so good their was no left overs. I made it with the jalapeño ranch dressing. I don’t like spicy food or ranch dressing but I loved that one. How long can I keep the dressing in the fridge?

          Hi Ella, the shrimp were from Fred Meyer and I think they were Argentinian shrimp (wild caught) – not sure about the brand. I try to find wild caught when possible.

            Truly delicious. I used Penzey’s Fajita seasoning and made the Jalapeno Ranch dip. They’re also very easy to make, although I’m not sure they qualify as a 30-minute meal unless you cut up the vegetables, peel the shrimp and make the dip ahead of time.
