Breakfast Quesadillas – 3 Easy Ways (VIDEO)

Breakfast quesadillas are the easiest one-pan breakfast and take just minutes to make. If you enjoyed our Steak Quesadillas, you will love these!

Everyone in our family loves these and I love how fast and easy they are to make. You will love that they are make-ahead and freezer friendly. The fluffy egg, cheese, and meat all reheat just as good as the day they were made. Check out our reheating tips below for keeping that exterior crisp.

Watch Natasha make this breakfast quesadilla recipe. It really doesn’t get any easier than this! We love that these come together in one pan so there is minimal cleanup.

Ingredients for Egg Quesadillas:

The ingredients are so simple that you will have this recipe memorized by the time you are finished watching the video tutorial. For the basic egg quesadilla, you will need an 8-inch flour tortilla, 2 large eggs with a pinch of salt and pepper, and 1/4 cup of Mexican cheese (or your favorite melting cheese like cheddar or mozzarella).

You can add extra protein and our favorites are breakfast sausage. If you aren’t able to find the sausage patties, you can buy breakfast sausages and remove the casing. Bacon is always a favorite for a bacon egg and cheese quesadilla. Ham is convenient because you don’t have to pre-cook the meat and can use leftover Baked Ham.

What to Serve with Breakfast Quesadillas:

Quesadillas are great by themselves but we love to serve them with these fresh toppings like Pico de Gallo and our Roasted Salsa. Our children love them with sour cream.

How to Freeze Quesadillas:

To Freeze – Arrange quesadillas in a single layer on a baking sheet lined with parchment paper and flash freeze for 2 hours. Once they are solid, transfer to a freezer-safe zip bag and store in the freezer.

To Reheat – Place frozen quesadillas into a toaster oven at 350˚F and reheat until warmed through and cheese is melted. We love reheating in an air fryer to re-crisp the outside. If you thaw quesadillas in the refrigerator for a couple of hours or overnight, they will reheat twice as fast.

Breakfast quesadilla with cheese pull
Breakfast quesadillas are the easiest one-pan breakfast and take just minutes to make. Change up the egg quesadillas with your favorite protein. Watch the video tutorial to see how we made them with breakfast sausage, bacon, and sliced deli ham.

Total Time: 10 minutes

Ingredients 

Servings: 1 quesadilla

Ingredients for 1 Breakfast Quesadilla:

  • 1 flour tortilla, 8” in diameter
  • 2 large eggs
  • 1 Pinch salt and pepper
  • 1/4 cup shredded cheese, (1 oz) Mexican cheese, medium cheddar or mozzarella

Select Your Meat/ Protein:

  • 3 oz breakfast Sausage, 2 patties
  • 2 slices ham, (2 oz) chopped
  • 2 slices bacon, (2 oz), sliced

Instructions

  • Heat a non-stick pan over medium heat. Cook Sausage or Bacon until browned and cooked through then remove to a plate. If using cooked ham, you can heat it up or just add it over the cheese in step 4. Wipe excess oil from skillet if needed. Reduce heat to low.
  • In a measuring cup, add 2 eggs with a pinch of salt and pepper, or add seasoning to taste. Beat with a fork. Add beaten eggs and swirl to spread evenly over the bottom of the pan. Cook over low heat until When eggs are nearly cooked through (if you tilt the pan they shouldn't run).
  • Sprinkle the top with 2 Tbsp shredded cheese then cover with a tortilla. The cheese will make the tortilla stick to the egg. Use a large spatula to get under the egg and quickly flip over.
  • Sprinkle another 2 Tbsp of cheese or add cheese to taste. Sprinkle your cooked protein (sausage, bacon or ham) over half of the surface and fold the tortilla in half. Sautee on both sides until golden brown.* Remove from skillet and use a pizza cutter to cut quesadilla into wedges and serve warm.

Notes

*COOK'S TIP: Adding a little oil to the pan will help the outside of the tortilla crisp nicely.

    This recipe is so easy and so quick to make. My picky grandkids liked it. Instead of putting oil in the pan so the tortilla would brown nicely, I dipped my basting brush in oil and covered the tortilla in it. Worked slick.

      Just adding to my first comment. I use a plate to flip the egg and tortilla. I take a spatula and go around the edges of the egg to make sure it won’t stick. Put on my cheese and the tortilla. Then I put the plate on top of the tortilla and turn the pan upside down. Slips right of the pan. Then slide back into the pan to finish.

      Yes or no depending on if you want extra Unfilled tortilla space. Or you could cut it down to size or you could just use half of it. Think about the possible solutions open to you.

    Just wanted to say that I am glad I had this recipe saved, as I made this today and it’s automatically a favorite of my family, including my five year old who has issues with egg’s off and on. Made a big batch, equal amount with ham/egg along with using leftover taco meat to give two choices for everyone. Going to be freezing the rest for another day. Thanks again for this awesome recipe.

    I made as directed but with garlic mushrooms instead of meat and holy wow. This technique is genius!

    Question – my boyfriend doesn’t eat cheese. Do you think the egg could stick to the tortilla as-is? Or do you have any alternatives to the cheese (i.e. refried beans?) to help the egg and tortilla stick together?

      Hi, I know I’m late but if you put the tortilla on the eggs when it still looks wet/runny/uncooked on top and just continue to let it cook that way and THEN flip when it’s ready, you’ll get the same result just minus cheese.

    THese are the best Breakfast quesadilla’s (I made mine THICK!). I had some leftover cheese dip, and French fries, so I mixed the dip with breakfast sausage and spread it over the fries. Topped with shredded cheese.

    Then topped one quesadilla with it (dip/sausage mix) and used it as filling for the other. I wish we could send pictures, does this poor explanation so much better justice.

    I made these quesadillas when you first posted this recipe and this has been on our regular breakfast (and sometimes lunch) rotation ever since!       Hi Bridgett, that should still work fine, but I would pre-toast the first side of the corn tortilla that touches the egg. Corn tortillas have a different texture and are a little more likely to crack when folded but if you prefer that texture, I think it would work fine.

    Hello Natasha!
    I am 80 years old, still interested in learning new ways of cooking.
    Both my husband ( same age )and I like to eat, but do not know how to cook tasty, light and easy meals.
    It was by chance I came across your sponge cake recipe and made it last week for a group of elderly diabetic friends using fresh blueberries, or strawberries and peaches with a lemon pudding topping and sugar free whipped cream.
    Everybody liked it.
    I continue to cook your other recipes and enjoy every one of them.

    I found a recipe for breakfast burritos and thought it sounded good for taking to work but after making them I had sooo much filling left and didn’t know what to do with it! THIS IS WHAT I’LL DO WITH IT!! I have scrambled eggs, sausage, hash browns with pepper and onions, salsa and cheese. Thank you sooooo much!

    Hi Natasha

    I saw your video/post on my FB feed. My partner and I decided to try it out, since we were hungry. We found some pepperoni in our freezer and threw some slices in the skillet and browned them.

    We continued with the recipe as shown. These quesadillas come together very quickly, we were eating in a few minutes time.

    Natasha you are in my top five of my favorite cooks. I have tried so many of your recipes and it never fails They are all amazing. Your personality is so bubbly, sweet and funny. I’m in Georgia and it’s a little after 2 am here, I just woke my husband up to show him this and to tell him I’m making this Saturday morning. He hates when I get excited about a recipe but enjoys it when I make the dish. Your babies are so adorable and 🥰🥰

      Hi, that should still work fine, but I would pre-toast the first side of the corn tortilla that touches the egg. Corn tortillas have a different texture and are a little more likely to crack when folded but if you prefer that texture, I think it would work fine.

    The way you make the egg stick to the tortilla is genius! Much easier than cooking them separately. I like to add a teaspoon of water to my eggs, it makes them fluffy. Also trying adding fresh chopped chives when you add toppings at the end.

    Found your recipe this morning and had to give it a try. It tasted amazing and was so easy to make! I made them with bacon and more cheese than called for. All I had for dipping was picante sauce, which was an added yum. This recipe was keto for us, since I had carb smart tortillas. Love it! Will make again and again!!

    This looks like another winner. Recently bulk sausage was on sale, and I took the same approach I do with ground beef: I cooked 6 pounds in my slow cooker (used a disposable liner for easier cleanup) drained the meat in a colander, broke it up, then divided it up into meal portions and froze it in freezer bags. Using precooked crumbled sausage would make this recipe even easier!
