Breakfast Quesadillas – 3 Easy Ways (VIDEO)
Breakfast quesadillas are the easiest one-pan breakfast and take just minutes to make. If you enjoyed our Steak Quesadillas, you will love these!
You can change up the egg quesadillas with your favorite protein. Watch the video tutorial to see how we made them with breakfast sausage, bacon, and sliced deli ham.

Everyone in our family loves these and I love how fast and easy they are to make. You will love that they are make-ahead and freezer friendly. The fluffy egg, cheese, and meat all reheat just as good as the day they were made. Check out our reheating tips below for keeping that exterior crisp.
Watch Breakfast Quesadilla Video Tutorial:
Watch Natasha make this breakfast quesadilla recipe. It really doesn’t get any easier than this! We love that these come together in one pan so there is minimal cleanup.
Ingredients for Egg Quesadillas:
The ingredients are so simple that you will have this recipe memorized by the time you are finished watching the video tutorial. For the basic egg quesadilla, you will need an 8-inch flour tortilla, 2 large eggs with a pinch of salt and pepper, and 1/4 cup of Mexican cheese (or your favorite melting cheese like cheddar or mozzarella).
You can add extra protein and our favorites are breakfast sausage. If you aren’t able to find the sausage patties, you can buy breakfast sausages and remove the casing. Bacon is always a favorite for a bacon egg and cheese quesadilla. Ham is convenient because you don’t have to pre-cook the meat and can use leftover Baked Ham.
What to Serve with Breakfast Quesadillas:
Quesadillas are great by themselves but we love to serve them with these fresh toppings like Pico de Gallo and our Roasted Salsa. Our children love them with sour cream.
How to Freeze Quesadillas:
To Freeze – Arrange quesadillas in a single layer on a baking sheet lined with parchment paper and flash freeze for 2 hours. Once they are solid, transfer to a freezer-safe zip bag and store in the freezer.
To Reheat – Place frozen quesadillas into a toaster oven at 350˚F and reheat until warmed through and cheese is melted. We love reheating in an air fryer to re-crisp the outside. If you thaw quesadillas in the refrigerator for a couple of hours or overnight, they will reheat twice as fast.

Breakfast Quesadillas Recipe (3 Easy Ways)
Ingredients
Ingredients for 1 Breakfast Quesadilla:
- 1 flour tortilla, 8” in diameter
- 2 large eggs
- 1 Pinch salt and pepper
- 1/4 cup shredded cheese, (1 oz) Mexican cheese, medium cheddar or mozzarella
Select Your Meat/ Protein:
- 3 oz breakfast Sausage, 2 patties
- 2 slices ham, (2 oz) chopped
- 2 slices bacon, (2 oz), sliced
Instructions
- Heat a non-stick pan over medium heat. Cook Sausage or Bacon until browned and cooked through then remove to a plate. If using cooked ham, you can heat it up or just add it over the cheese in step 4. Wipe excess oil from skillet if needed. Reduce heat to low.
- In a measuring cup, add 2 eggs with a pinch of salt and pepper, or add seasoning to taste. Beat with a fork. Add beaten eggs and swirl to spread evenly over the bottom of the pan. Cook over low heat until When eggs are nearly cooked through (if you tilt the pan they shouldn't run).
- Sprinkle the top with 2 Tbsp shredded cheese then cover with a tortilla. The cheese will make the tortilla stick to the egg. Use a large spatula to get under the egg and quickly flip over.
- Sprinkle another 2 Tbsp of cheese or add cheese to taste. Sprinkle your cooked protein (sausage, bacon or ham) over half of the surface and fold the tortilla in half. Sautee on both sides until golden brown.* Remove from skillet and use a pizza cutter to cut quesadilla into wedges and serve warm.

I’m so glad this recipe was perfect for you, Laura! Thank you so much for sharing that with me.
These were delicious. The next time I make them I am going to use asparagus with swiss cheese which is a favorite combo for an omelet.
That sounds great, Peggy!
These are eggcellent. So easy and versatile. Mmmm, yummy. Love your recipes Natasha. Going try my hand at the Onion rings today.
Hi Liz! Thank you. I’m glad you loved the recipe. 🙂 Let us know how the onion rings turn out.
All your recipes are excellent I make a lot of them. Thanks so much for taking the time, blessing to your family.
You’re very welcome, Shelley! I’m so glad you are enjoying them. 🙂
How much liquid egg whites would this recipe need? I can’t have yokes 😏.
Hi Doreen. I did a quick google search and found that 2 egg whites replaces 1 egg.
I’m just curious as to what is the brand name of the hot plate you’re using and where can I get one. Also why do you use it instead of your stove? Thanks
Hi Kathy, you can find our favorite kitchen tools in our Amazon Affiliate Shop HERE. I used this Cuisinart hot plate HERE. We used it at times for filming, so you get a better view of what we’re cooking, but we absolutely love cooking on our home stove too! I hope this helps!
Does this freeze? Looking for freezer friendly breakfast for my husband while I’m away 🥰
This is a freezer-friendly recipe. You may check this portion in the recipe “How to Freeze Quesadillas”
This was a big hit. Tasty and filling! And what a genius idea to use a pizza cutter. It’s the little things. 😊
I’m so glad that tip was helpful, Kristin! Thank you for sharing that with me!

Yep … have made all 3 versions a couple of times … def a winner!
As a PS, I sautee the mushrooms with a little Oyster Sauce (seriously takes the flavour level up a subtle notch).
Thanks, Natasha:)
Thank you for the tip, Jules. That is so helpful! We also appreciate the review.
I made the bacon version. It is so easy and delicious! Thank you for the video also!
You’re welcome! I’m so happy you enjoyed it, Brenda!
Probably a dumb question but you cook the quesadillas before freezing right?
That’s right, Maria! We freeze them after cooking. See the “How to Freeze Quesadillas” section in the recipes for reheat instructions.
Made these for my adult kids while on vacatioin. They haven’t stopped raving about them!! So easy too!
Wonderful to hear that, Cathleen. Thank you for sharing!
Love the Breakfast Quesadillas
It was a hit
Thank you for the recipe
Theresa
Thank you for your great review, Theresa! I hope you’ll love all the recipes that you will try.
Love, love, love the recipe and your video!!!!!!!
Quick question: what size non-stick pan did you use? It was perfect for 2 eggs and the taco shell
Glad you love it, Brian. I used this Ballarni Pan.
This recipe is so easy and so quick to make. My picky grandkids liked it. Instead of putting oil in the pan so the tortilla would brown nicely, I dipped my basting brush in oil and covered the tortilla in it. Worked slick.
Great idea! Thank you so much for sharing that with us!
Just adding to my first comment. I use a plate to flip the egg and tortilla. I take a spatula and go around the edges of the egg to make sure it won’t stick. Put on my cheese and the tortilla. Then I put the plate on top of the tortilla and turn the pan upside down. Slips right of the pan. Then slide back into the pan to finish.
Thank you so much for sharing that with us!
Made Bfast quesadilla this AM.
Turned out perfect. I added salsa prior to folding in half. Delicious.
I will do this again.. BTW, my husband loved his👍🏻
Yum! The perfect breakfast! I’m so happy you enjoyed that, Adele!
We love this recipe thanks soooo much!!!
That’s just awesome! Thank you for sharing your wonderful review, Jack & Polly!
Help!!! I want to make these for
Breakfast tomorrow – I only have burrito size – would i double
All the ingredients??????
Hi Theresa, I bet that could work. You may need 1.5 to 2 times the ingredients for a burrito size tortilla.
Yes or no depending on if you want extra Unfilled tortilla space. Or you could cut it down to size or you could just use half of it. Think about the possible solutions open to you.
I just made them (for dinner because we don’t eat this things for breakfast in Spain) and it was delicious! I used minced meat and added green garlic to the eggs. It’ll be a regular in my dinners.
I’m so happy you enjoyed that. Thank you for sharing that with us!
these were great. I made the sausage quesadillas and added chopped onions while frying the sausage. I added salsa to them before folding over. Hubby loved them too. I’ll definitely make again
Sounds perfect, great to hear that you and your husband loved this recipe! Thanks for your good feedback, Brenda.
I love your site,I made the breakfast quesadillas and love them, I did add fried onions.
Thank you for your good comments and feedback, Bill!
Love your video’s 💕🥰 thank you
You’re welcome! I’m so happy you’re enjoying my videos!
Just wanted to say that I am glad I had this recipe saved, as I made this today and it’s automatically a favorite of my family, including my five year old who has issues with egg’s off and on. Made a big batch, equal amount with ham/egg along with using leftover taco meat to give two choices for everyone. Going to be freezing the rest for another day. Thanks again for this awesome recipe.
That’s so great! I’m so glad you have a new favorite from my blog!
I made as directed but with garlic mushrooms instead of meat and holy wow. This technique is genius!
Question – my boyfriend doesn’t eat cheese. Do you think the egg could stick to the tortilla as-is? Or do you have any alternatives to the cheese (i.e. refried beans?) to help the egg and tortilla stick together?
Hi Adrienne, we love this with cheese and haven’t tried a substitution, but, that’s the beauty of quesadillas; you can fill it with whatever you’d like.
Hi, I know I’m late but if you put the tortilla on the eggs when it still looks wet/runny/uncooked on top and just continue to let it cook that way and THEN flip when it’s ready, you’ll get the same result just minus cheese.
I am anxious to try these for breakfast, but my only concern is the very high sodium number. How can this be reduced?
Hi Patti, most of the sodium comes from the bacon and ham in this recipe.
THese are the best Breakfast quesadilla’s (I made mine THICK!). I had some leftover cheese dip, and French fries, so I mixed the dip with breakfast sausage and spread it over the fries. Topped with shredded cheese.
Then topped one quesadilla with it (dip/sausage mix) and used it as filling for the other. I wish we could send pictures, does this poor explanation so much better justice.
THANK YOU!
You’re welcome, Billy! Thank you for that wonderful review with me!
Thanks Natasha, I am enjoying my breakfast!
I’m so happy to hear that!
A recent episode you put tater tots in the first layer of cheese, peppers, tomatoes and choice of meat. Then built it into a taco like tower. can’t find it anywhere in your site.
Hi Carol, I don’t have any tater tot casserole recipes at this time. I’m curious if that was another site or a recipe we shared from another site. Did you see it on our Youtube channel?
Hi Natasha, Can pepper jack cheese slices be used? I don’t have other cheeses on hand right now.
Hi Mary Ann, I haven’t tried that yet to advise but feel free to experiment! Please share with us how it goes.
My sister and I made this today for breakfast. It was good! We didn’t have sausage or ham on hand, so we had to use Turkey bacon. We served it with sour cream. My mom loved it! Thanks for this recipe Natasha.
These look delicious, just wondering what type of skillet you use. I am looking for a heavier medium sized non stick skillet and wondered which one you were using.
Hi Janice, you can find our favorite kitchen tools in our Blog Shop HERE and in our Amazon Affiliate Shop HERE. I hope this helps!
Natasha, thank you for giving this gift to the world. So incredibly delicious! I will never make them any other way again!
I’m so glad you enjoyed it!
This is the easiest quesadillas i ever made. Made rotisserie left over with it and dip on picante…my grandkids love it.
Hi Grace, thank you for sharing that with us!
i like it but not my favorite recipe. my favorite has to be your breakfast sandwiches!
Hi Natasha. Im Sharon from the Gold Coast in Australia. This is a great recipe. I cant wait to make these for my family who will be here for the week end. I love how your recipes never fail. Thank You. xx
Sounds like a great plan! You chose a good recipe, I think your family will enjoy these quesadillas.
The quarantine has helped me use what I have – even it’s tortillas at breakfast! This is the best technique for breakfast quesadillas I’ve done and now I buy tortillas just for these! Thank you!
So nice to know that you’re really making use of the ingredients that you on hand. I hope you love all the recipes that you will try!
I made these quesadillas when you first posted this recipe and this has been on our regular breakfast (and sometimes lunch) rotation ever since! It’s honestly so easy I cant believe I didn’t think of it sooner! We always use sausage in ours and my kids devour it! We love to dip it with salsa, guac, or sour cream! Thanks Natasha!
Yum! I’m sure that the version is delicious. Thanks for sharing that with us, Galina!
WOW! I made these the other day. I made the ham, egg and cheese quesadilla – one that my husband and I split. We had it for brunch and it filled me up for a good part of the day. It tasted amazing! This weekend I’m going to make more and freeze them.
Isn’t it the best and so convenient! I’m happy you enjoyed that Carol!
What would be the best way to re-heat using a regular oven or microwave? I will be having company & would like to make these ahead of time. Thank you, they look “YUMMY”
You make my life easier. Thanks for sharing yummy recipes.
I Seba! Thank you so much for sharing that with me!
Hi Natasha!! I cooked these for dinner tonight!! They were gone in minutes!! My family loves them! Thank you so much for sharing all your beautiful recipes! I AM honestly hooked to your channel and so grateful that I have all these new ideas. GOD BLESS YOU ALWAYS!!

Hi Lilia, I don’t have a tortilla recipe yet, but there are some tutorials online. If I come up with something great, I will be sure to share it in the future.
I’ve made sausage, and bacon versions. We love them!
I’m so happy you enjoyed that. Thank you for sharing that with us!
Made this today. So easy and delicious. Thank you Natasha.
You’re welcome! I am so glad you loved it.
If GF would this work with corn tortillas?
Hi Bridgett, that should still work fine, but I would pre-toast the first side of the corn tortilla that touches the egg. Corn tortillas have a different texture and are a little more likely to crack when folded but if you prefer that texture, I think it would work fine.
My parents love these too! I even tried including some sauteed mushrooms and spinach, and is so yumm! I’ve also shared this recipe to my friends and they made it! Thanks Natasha for the great recipe!
My pleasure! Thanks for giving this recipe great feedback, Karen.
Tasty! Just like all of Natasha’s Kitchen recipes.
You’re so nice! Thank you for that great review!
Hi Natasha,
I’m Diah, from Indonesia. I love your recipes and this quesadillas is super easy and great. I added sauted mushroom in it. My kids looove it. This is their new favourite for breakfast.
Thank you!
Sounds yummy! Thanks for giving this recipe a try, I am so glad you and your family enjoyed it.
Hello Natasha!
I am 80 years old, still interested in learning new ways of cooking.
Both my husband ( same age )and I like to eat, but do not know how to cook tasty, light and easy meals.
It was by chance I came across your sponge cake recipe and made it last week for a group of elderly diabetic friends using fresh blueberries, or strawberries and peaches with a lemon pudding topping and sugar free whipped cream.
Everybody liked it.
I continue to cook your other recipes and enjoy every one of them.
Thank you for sharing your love of cooking.
Gratefully,
Ginette
Aww, that’s just awesome! I’m so inspired reading your review Ginette! Thank you so much for sharing that with me!
I found a recipe for breakfast burritos and thought it sounded good for taking to work but after making them I had sooo much filling left and didn’t know what to do with it! THIS IS WHAT I’LL DO WITH IT!! I have scrambled eggs, sausage, hash browns with pepper and onions, salsa and cheese. Thank you sooooo much!
You’re welcome Rhonda! I’m so glad you enjoyed that!
Hi, how long can these be frozen?
Hi Natalie, I would say up to 3 months.
Hi Natasha
I saw your video/post on my FB feed. My partner and I decided to try it out, since we were hungry. We found some pepperoni in our freezer and threw some slices in the skillet and browned them.
We continued with the recipe as shown. These quesadillas come together very quickly, we were eating in a few minutes time.
Loved it! Thank you so much.
I’m so glad you enjoyed that Eric! Thank you for that wonderful review!
Honestly .this was lovely,so easy and we think better than a McDonald’s wrap lol. Abit off fun with the kids aswell
Homemade is definitely so much better and healthier! Thanks for giving this recipe a nice feedback.
Breakfast quesadillas were so good they were requested for supper again the next night!
Wow that’s so great! So glad you all loved it.
Thanks! As always very special, delicious Quesadillas!!
You’re most welcome, thanks for giving this recipe a try!
My whole family (4 Big eating males) loved this meal. Delicious as always – dinner not breakfast with Angus Beef Sausage. Delicious!
Great to hear that you loved this recipe. Thanks for sharing!
Natasha you are in my top five of my favorite cooks. I have tried so many of your recipes and it never fails They are all amazing. Your personality is so bubbly, sweet and funny. I’m in Georgia and it’s a little after 2 am here, I just woke my husband up to show him this and to tell him I’m making this Saturday morning. He hates when I get excited about a recipe but enjoys it when I make the dish. Your babies are so adorable and 🥰🥰
That is so awesome, thank you for your compliments! I hope you love every recipe that you try.
Hii Natasha Kravchuk I like your recipe It seems to be yummy and tasty thank you for sharing your recipe with us. God bless you
So lovely to hear that! Thanks for your good feedback.
We had these for breakfast this morning. They were super delicious, such a filling breakfast meal! We ate them as is with no extra sauces and they were perfect.
That’s just awesome!! Thank you for sharing your wonderful review!
Hey,Natasha
Thanks for sharing this recipe with us. We had it today for breakfast, it was good.
I’m so glad you enjoyed it!
Looks really easy, I will be making this today. Simple and I have all these ingredients already. I did make your recipe for shrimp scampi and it was awesome.
So glad to hear that, Jan. I hope you also love quesadillas!
My dear Natasha, I discovered your blog about a year ago, and I’ve tried about 80% of your recipes, and except one or two, they were all a big hit for my husband and son! I shared your blog with my mom who lives in Romania, and she loved you from the first recipe she tried! You are talented, lots of fun and a very pleasant lady! The quesadilla recipe was delicious! Thank you for making cooking easy, quick , fun and affordable!
I’m so glad that you discovered my blog and thank you for always giving my recipes a try! I appreciate your kind words.
WE LOVE THIS IT WAS SO GOOD, VERY EASY, MY HUSBAND SAID THEY WERE……… AWESOME, THANK YOU!!!
You’re very welcome! I’m glad you both enjoyed it.
Hi, Natasha, would it be OK to make this recipe with corn tortillas, will it hold together? Thank you!
Hi, that should still work fine, but I would pre-toast the first side of the corn tortilla that touches the egg. Corn tortillas have a different texture and are a little more likely to crack when folded but if you prefer that texture, I think it would work fine.
The way you make the egg stick to the tortilla is genius! Much easier than cooking them separately. I like to add a teaspoon of water to my eggs, it makes them fluffy. Also trying adding fresh chopped chives when you add toppings at the end.
Thank you for that awesome compliment and for sharing our fluffy egg tip!
Found your recipe this morning and had to give it a try. It tasted amazing and was so easy to make! I made them with bacon and more cheese than called for. All I had for dipping was picante sauce, which was an added yum. This recipe was keto for us, since I had carb smart tortillas. Love it! Will make again and again!!
That’s just awesome!! Thank you for sharing your wonderful review Linda!
This looks like another winner. Recently bulk sausage was on sale, and I took the same approach I do with ground beef: I cooked 6 pounds in my slow cooker (used a disposable liner for easier cleanup) drained the meat in a colander, broke it up, then divided it up into meal portions and froze it in freezer bags. Using precooked crumbled sausage would make this recipe even easier!
That’s so great! Thank you for sharing that with me Teresa!
What brand and size pan did you use for these quesadillas? The pan looks hefty/sturdy.
Hi Jechalle, I used this Ballarni Pan.
I love this idea. Who says that quesadillas have to be for dinner only. I’m trying one this weekend for sure. Yum!
I hope you love this recipe, Krissy! Thank you for sharing that wonderful review!
We could eat these every morning!! Love how cheesy they are & my kids love that they can add what they like.
The perfect breakfast! Thank you for that wonderful review, Kristyn!
Just made the bacon version Natasha! These are for KINGS! So good and easy to make. Thanks for this new concept. Did you create this?
Hi Jim, I’m so glad to hear that! We recreated them after inspiration from a viral TikTok video of all things! I’m glad you loved the recipe.
These were so cheesy and delish! The perfect way to start off the day!
I’m so happy you enjoyed that. Thank you for sharing that with us!
These were so easy, I added lots of crispy bacon into them and the texture and flavor was perfection, what a genius idea for quick breakfast.
Yum! The best! Thank you for that great review, Lily!
