Radishes Are A Superfood!

Did you know radishes are considered a SUPER FOOD? Yes, they are so good for you; rich in Vitamin C, Folic Acid and Potassium, oh and they aid in digestion and heart health also!

Ingredients for Cucumber Radish Salad:

There are literally 3 ingredients in this radish salad and 2 ingredients in the dressing (including salt!) I know what you’re thinking; WOAH – that can’t be all?! My Mother has been making this recipe since I was a child and sometimes a classic recipe doesn’t need any improvement.

Radish recipes ingredients for cucumber radish salad

Cook’s Tip: Stir the sour cream dressing into the salad just before serving. The longer it sits, the more liquid the dressing becomes as the salt causes the cucumber to release some juice. But I guarantee you’ll use a spoon to gather any extra juice left behind. It’s so yummy!

One of our favorite radish recipes is this creamy cucumber radish salad.

Radishes also have a very satisfying crunch; Mmm! I love that this simple sour cream dressing neutralizes the radishes slight pungent flavor and enhances their sweetness. I was impressed when my 4 year old ate and enjoyed this radish and cucumber salad.

Try mixing low fat buttermilk and sour cream for a cucumber salad. My husband’s grandmother made what our family called Summer Salad. My husband craves it when our cucumbers are in season. It has sliced cucumbers, diced green onions including the tops, sour cream, buttermilk, and cottage cheese. If you mix cottage cheese into the dressing, you can use less sour cream and make it lower in calories. I will try adding radishes this year. It will be an interesting change.

This is really good and I don’t even like cucumbers lol! It’s mainly the smell of cucumbers that bothers me and the sour cream covers it up nicely. 5 stars all on its own and also a great ‘base’ salad to jazz up. I tried it following the recipe and also a variation, adding fresh dill, avocado, antipasto olives, splash of evoo and red wine vinegar, and some pepper. Great both ways!

I too grew up eating a very similar cucumber salad. Instead of just green onions, I use thinly sliced yellow onion and add both salt and pepper to the mixture. On occasion, I add sliced radishes, but more often just the peeled and sliced cucumbers. I also vary it by adding small pieces of iceberg lettuce and mixing it in just before serving the salad. I like when the cukes have marinated in the sour cream mixture a little while for more flavor. It is my go to salad for Thanksgiving and also when I serve pork roast or chops.

    • Natasha
      June 23, 2020

Hi Kim, it depends on when the recipe was developed. When I have garden cucumbers, I use those. English cucumbers are easier to use versus the less expensive wax-coated cucumbers because you have to peel the wax-coated ones and I do like to leave good cucumbers skins on so I opt for English cucumbers which are available year-round. In any recipe, you can substitute with regular cucumbers though.

If you add 1/4 cup mayo ( I used Hellman’s ) with the sour cream, it does not get as “wet”–also, lightly salting sliced cukes and allowing them to sit for 30 minutes–then pat dry help draw a lot of moisture from them without losing needed moisture and flavor. LOVE this salad. I truly think I could have some each day.

Being born and raised in the South, radishes were only in salads. I attended a spring cocktail party and one of the passed platters was a thinly sliced radish on the top of a toasted Baquette round that had been spread with a good quality un-salted butter. A few sea salt flakes were sprinkled on top the radish.

Love this recipe. Followed it exactly and it is delicious! Only recommendation is to add salt in quarter tsp increments. The 3/4 is too salty for me (don’t eat much salt here) so I’d be better off with a 1/4 or 1/2. Otherwise, amazing! Love Natasha’s Kitchen Recipes, I come here all the time 🙂

Very simple to make, the flavors were great but my problem was the dressing just liquefied while chilling. I wish there was a more substantial base for the dressing.

Hi Linda, anytime salt is added to cucumbers, it will release juice so I would highly suggest not adding dressing until ready to serve. This salad is best served fresh. You could also make this salad with a vinaigrette, but it would be the same scenario of there is salt in the dressing.

Made this today and it is DELICIOUS. Had Greek yogurt on hand so thinned it just a smidge with a couple drops of vinegar fore easy stirring. Crispy. Juicy. Filling. I live in the desert so this will be my go to salad for the summer. Looked at some other reviews and variations so can see how versitile it is. Might add jar trader joe cut beets in vinegar next time.

Wonderful salad. I grew up on this recipe (my Mom is of Lithuanian descent). To solve the issue of the salad becoming liquidy is to salt the cucs and let them sit for awhile, drain, then continue with the recipe. I also add some pepper and a tad of lemon juice. My family continues to make this salad for Thanksgiving and Christmas dinners.

It’s so interesting reading everyone’s comment! The ingredients are so simple, so common, yet everyone remembers it from their childhood.

For a party couple weeks ago, I combined this & the Creamy Cucumber Tomato Salad. Without me telling him beforehand, my friend (originally from Ukraine) immediately identified that “May made the Ukrainian Salad”! & proclaimed it’s his “favorite”. 😉

I used 50-50 of Smetana & Kefir yogurt (I cultivated my own Kefir & just drained to thicken it), & add dill instead of scallions.

Your recipe looks yummy with the radishes… Never thought of adding them to this salad. Our family salts the sliced cucumbers and leaves them sit til the juice comes out and the cukumber a are a bit wilted (1/2-3/4 of an hour). We then add the sour cream and mix it in. I find that a couple of tablespoons of vinegar added in make a tangy addition.

My husband favorite salad! I’ve put a “healthy twist” to it (as I find myself doing to most russian dishes) and throw in chopped spinach (it’s virtually tasteless in this salad, yet adds great nutrients) and substitute plain greek yogurt for half the sour cream. Per your commenters suggestions, I’ll have to try adding eggs next time. 🙂

Oh I see, the bulka is like our version of paska. The pashtet sounds wonderful!

Any kind of potato or rice dish. Serve it just like you would a regular cucumber & tomato salad. I hope you love it!

Looks soooo good! When I was prego this was my favorite salad 🙂 but I always added hard boiled eggs to it and no cucumber! I just love your photography! Great job 🙂

Thank you so much for the sweet compliment. 🙂 My Mama-in-law says she puts eggs in hers too. Do you dice or shred them?

We also omit the cucumber and put in hard boiled egg. We dice the eggs. I love it, with half mayo half sour cream.
