Ground Beef Stroganoff is a delicious little spin on a classic. In under 30 minutes, you will have a rich and creamy mushroom sauce that is PACKED with savory, ground beef. Yum! 

During these colder months, there is nothing more soothing than a hearty meal of beef in a cream sauce. We love Classic Beef Stroganoff and this ground beef version is even easier.

Hi, there! This is Natalya from Momsdish. I love simple dishes that don’t use too many ingredients. That being said, I don’t like to skimp on flavor either! My Ground Beef Stroganoff is the perfect example of a dish that’s both low-maintenance and tasty. I’m so excited to bring it into your home!

I love to cook, but I don’t love cleaning up big messes. Therefore, I am a huge fan of one-pot meals. It’s also really easy to double or triple the recipe since it’s cooked in one pot. Meal-preppers rejoice!

Best Ground Beef for Stroganoff

Since the base of your sauce is cream, you are going to want to use leaner ground beef so you don’t have too much fat. I recommend using 90% lean beef. If you must, you can ground beef with a higher fat content but it will release more fat. 

Tip: If your ground beef has a higher fat content, brown it first and strain out the liquid fat that cooks off before you combine it with your sauce.

What is Stroganoff?

Beef Stroganoff has graced the tables of many over the centuries. But, who can take credit for this lusciously creamy, beefy dish? Authentic Beef Stroganoff was dreamt up in Russia in the early 1800s by the personal chef of Count Stroganoff, a dignitary in the court of Alexander III at the time. The chef then named his creation after the Count and the rest is history. 

How to Make Ground Beef Stroganoff

  1. Brown your ground beef in a dutch oven or deep skillet with olive oil. 
  2. To the ground beef add chopped onions and minced garlic. Cook until lightly browned.
  3. Add mushrooms to the skillet and cook for another 5 minutes.
  4. Add flour, stir to combine everything together and saute for another minute.
  5. Pour in your broth and scrape any bits stuck to the bottom of the pan. Add in your heavy whipping cream, Worcestershire sauce, salt, pepper and bring to a simmer. 
  6. Remove from heat. While stirring constantly, add in sour cream slowly.

How to Serve Ground Beef Stroganoff

Ground Beef Stroganoff is just as versatile as the classic version. You can serve it with noodles, rice, buckwheat or my favorite, mashed potatoes. You could even slather the meat sauce over some roasted potatoes.

If you want to skip the carbs, pour your beef stroganoff on top of some roasted veggies. My roasted Brussels sprouts will do the trick. 

For a garnish, chop up some fresh parsley or dill and sprinkle it right on top. Herbs add a nice pop of color, but more importantly, a welcome contrast to the beefy flavor.

Storing Leftover Beef Stroganoff

Refrigerate your leftovers by storing them in an airtight container for up to a week. You can reheat in a saucepan over medium heat or in the microwave. 

Freeze stroganoff in an airtight container or a freezer-safe bag. Allow it to thaw overnight before serving. Reheat in the microwave or in a saucepan over medium heat. 

Cook’s Tip: If you serve your stroganoff with noodles, make sure to store the pasta separately from the sauce. Noodles have a tendency to absorb liquid and will suck up your sauce overnight!

Ingredients 

Servings: 8 servings

Instructions

  • Preheat a heavy, deep pan over medium-high heat with olive oil. Add ground beef and stir to break down beef into tiny pieces. Add onions and pressed garlic. Saute until the onion is translucent and golden brown. 
  • Add sliced mushrooms and saute for another 5 minutes.
  • Add flour and stir until fully incorporated. Be sure to mix in any lumps that form.
  • Add 1 cup beef broth, 1 cup whipping cream, 1 Tbsp Worcestershire sauce, 1/2 tsp salt, and 1/2 tsp black pepper and bring it to a simmer. Turn the heat to low and simmer for about 5 minutes. 
  • Remove from the heat and add in sour cream. Stir to combine everything together and season to taste if needed. Serve over noodles, rice or potatoes.

    I feel like this is too much flour. It was too “flour-y”. Other than that, it was just ok. I would do less flour, no cream, more beef broth, and replace the “heavy cream” with maybe a tad bit more sour cream, and it would be a lot better.

    Very good recipe, but it could use a little extra spice/tang. I did add some paprika and parsley, but next time I think I will probably add a little mustard too. Overall, a very easy and reliable dish for any night of the week, particularly when it’s cold outside. Thank you for sharing it.

    If my 7 and 10 year old won’t eat it, it means the recipe failed me. My husband said it lacked flavor. I think it would have tasted better if the beef, onions, and mushrooms would have been sautéed well (even a little crispy) before adding the beef broth. It ended up tasting bland, and I even used more salt than what the recipe says.

    very good. Stroganoff traditionally (my tradition, lol) has a bit of red wine in it, which I added. Glad to have a recipe without canned soup.

    I made this with Impossible Beef and vegan no-beef broth and it was excellent! Tips for using faux meats: go a little heavy on all seasonings, including making the broth double strength. I also used powdered heavy cream (Anthony’s is available online and is excellent quality). Thanks for a great recipe!

    It was suggested to me to add brown mustard (Dijon mustard) to it. At first I thought it was strange, but it was delicious!! I recommend adding the mustard, but I’m not sure when the best time would be. I added it at the very end and it was still really really good.

    This is a good easy-to-follow recipe. It’s easy to tweak to your taste without messing up the balance. I suggest
    adding more garlic and a dollop of sour cream upon serving. I added a splash of cream sherry when the meat was cooking, which really brings out the mushroom flavor.

    This is not beef stroganoff. This is soupy beef over noodles. I expected a thicker sauce.
    I followed the recipe then added extra seasoning as it was quite bland.

      Kat, did you add the 2 tbsp flour? My sauce was much less thick before I added it. Once the flour was added it turned into a perfect creamy sauce consistency. 🙂

      I agree! Too much liquid with the beef broth plus cream and only 2T flour. Ended up very soupy and definitely a touch bland. I used ground chuck and drained it. Kinda disappointed!

    I guess I like my food seasoned well. This was pretty bland. I added more seasonings and it helped, but I will not make this again. For those wondering, I added 1 tablespoon Dijon mustard and 1 teaspoon paprika. I increased the kosher salt to 1 teaspoon, used 3 cloves of garlic, used 1/2 cup sour cream and added in 4 ounces cream cheese. These changes helped with the blandness.

    I made this recipe last night for my family and it took me one pot and less than an hour to make! I did make some minor adjustments after reading through some comments. I added smoked paprika, thyme, a tablespoon of Dijon mustard and an extra cup of beef broth so I could cook the noodles in the sauce. And it came out great! Everyone loved it! Way better than the box stuff mom used to make when we were kids! Will definitely be making again.

I eagerly searched online for a simplified version of a classic stroganoff and your recipe was by far the fastest, easiest and most budget-wise I found.     I made this & forgot to add the sour cream! It was still very good. I thought it was a little runny and didn’t realize it was because I forgot the sour cream. Once I poured it over the noodles didn’t seem runny.

    Thank you for this recipe. I believe the beef stock I use is weak so I added 1.5 cubes and extra worcestershire. I also added mustard powder and smoked paprika to this recipe.     In the reviews, you referred someone to the Printer Friendly version of this recipe to get the serving size info. I didn’t see Printer Friendly but I did see Print. I still did not see info re serving size. Is it a cup, a 1/2 cup or what? I wish that all recipes would tell you the size of a serving. Many of them, not just yours, don’t.

    Delicious recipe!! Because I’m extra lazy and I didn’t want to dirty two pots, I added extra beef broth and cooked my noodles in the same pot as my ground beef mixture. I also added a hint of horseradish (because I had it in the fridge), and it added just an extra kick. 🙂

    I haven’t had this dish in so long, I only remembered what it tasted like after making it tonight. My momma used to make beef stroganoff for me, and even used ‘fake’ ground beef when I went through some vegetarian years lol! Very tasty – already sampled it w/ linguini, just waiting on the egg noodles to finish. I was making spaghetti w/ marinara and decided to use half the meat/onions to make stroganoff in a separate pot since I finally had mushrooms and cream in the fridge and egg noodles in the pantry. AND I needed to use some extra beef stock so it was meant to be!

    I can easily find fat-free sour cream, but heavy cream by definition requires the fat content it has. Can I omit the cream entirely and still be left with a delicious meal, or do you know of an easily found substitute for the cream that works well? Thanks!!

      Hi Andrew, we prefer this with the reach and creamy whipped cream, and while I haven’t tried a substitution, here’s what one of my readers wrote. I hope it’s helpful: “I replaced the cream with half-in-half fat free to cut down the fat grams and I used lite sour cream. Also used low sodium beef broth.”

    I didn’t have heavy whipping cream so I substituted 3/4 cups of milk and 1/4 melted butter whisked it and used ground turkey instead. So delish!!!!

    I made this tonight and it was just like the packet mix can buy, I added some garlic powder as well as fresh garlic, but it was great, I think I will need less cream next time and use milk instead as it went a bit thicker quicker. I usually put tomato paste but this didn’t need it, I served it with egg noodles and green beans, but I would like to try with rice next time.

    My husband hates pasta…at least he thought he did. I made this a few days ago thinking he would just have to eat something that I enjoy for once. He came in from work, looked in the pot and didn’t say a word. After his first bite he said “Wow! That’s amazing!” He ate all the leftovers the next day then said “time to make more!” LOL!

    Move over Chicken Tetrazzini; there’s a new 1st Place Winner. I had originally planned to make the alternate recipe with strips of tender sirloin but I forgot the sirloin while shopping. I already had the ingredients for the ground beef recipe so I went to work.

    My mother liked it so much that she could not find the right words to express her delight, so I allowed her to just enjoy the moment. Later that same evening, she asked if there was any left. Alas, there was not. She asked me the follow day if I was making it again but I was not. On the third day of her asking if I would make it again, I decided to indulge her. In 40 years of knowing my mother, I’ve only seen her this excited when we flew to Acapulco in 1997 as a family. There is something mystical about this recipe.

    I have vacuum sealed and frozen several packages of this recipe for her, sans the noodles. She can make fresh noodles when she wants to reheat a package of the frozen Stroganoff.

    If there are other adult children out there who are trying to make their elderly parents independent again, be careful with this recipe. Like my mother, they will stick around for the next recipe from Natasha’s Kitchen.

    Natasha, will the sauce stay thick the next day if leftover? I find with some sauce/gravy based recipes, they turn watery the next day. Find that especially with my mushroom onion gravy. Any suggestions? I make it using flour.

    I just wanted to tell you that I made your ground beef stroganoff last night for dinner, & it was absolutely delicious 😋 My daughter actually had 2 plates! The only thing I did differently was that I doubled the amount of onions and I served it over mashed potatoes instead of egg noodles, and corn as a side dish. I’ll be making it again for sure!

    I made this last night and it was delicious! My picky eater who had requested beef stroganoff, specifying ground beef, loved it. I made the basic recipe with a few minor alterations. My package of ground beef was 1 1/2lbs. I used a whole onion as I love onions. I did not have fresh mushrooms so used a 10oz. jar. I drained the mushroom juice into a measuring cup and added enough water to make one cup. Then added a teaspoon of Better than Bouillon and that made my beef broth. Most recipes I have seen and used over the years called for some mustard so I added a teaspoon of Colman’s mustard powder. In finishing off the recipe I had a bit of a heavy hand with the sour cream. I cooked it all in a deep cast iron skillet which was perfect. I served it over egg noodles. Thank you for offering such a yummy and EZ to prepare recipe.

      Smart you! A tablespoon of Dijon mustard is essential to a good Stroganoff, and really does NOT need worcestershire sauce.

    Another amazing recipe! I followed everything EXCEPT adding sour cream. I always find it makes an otherwise tasty Stroganoff bland. Yours was no exception. I did a test, added sour cream to a serving & it stole all the flavor from your sauce! I find it an unnecessary step. Thank you for another great recipe

    I’m sorry but this was not good. It was very plain. I would suggest seasoning your ground beef when you’re cooking it to make it taste a little better otherwise I don’t recommend this dish.

    Good recipe. I use white vinegar instead of worcestershire (gives it a German tang) and about 3/4 of sour cream and no heavy cream, and I use 3tbs of flour.

    Family loved it. Only change was that I added 2 T. cooking sherry. Next time I will add some parsley and some more seasoning, and I will cut down the Worcestershire by at least 1/3. Definitely a keeper!

      Hi JB, I’m sorry to hear it didn’t work out for you. This normally is very flavorful – did you possibly swap out any ingredients? Another thing to consider if you use a coarse grain salt, you would want to add more and always add seasoning to taste since some people love a saltier dish. Salt can make or break a recipe.

    This recipe is perfect! I actually use it to a make a vegan version using Impossible ground beef. I use whole fat Oatly milk, vegan bouillon to make broth, and homemade cashew cream with a little apple cider vinegar for the door cream and vegan Worcestershire. So good!!!

    I think I’m on a roll with your recipes! I’ve made one for dinner practically every night this week! And last night I made this beef stroganoff because I had been craving it.     This is a really good and easy recipe. The meat definitely needs to be salted during cooking (this was skipped in the recipe). I added extra onion because we like onion and I used whole milk instead of whipping cream (that’s all I had on hand). It thickened up nicely regardless of that substitution. I will make this again, thank you!
