Chicken Lettuce Wraps Recipe

Lettuce wraps are a family favorite. They are healthy and delicious. We posted a recipe for lettuce wraps a long time ago, but we still make them often. Between my husband and I, we can wolf down this entire platter together (guilt free) ;). So I guess I should say that this can feed a “normal” family of 4.

Ingredients for Chicken Lettuce Wraps:

1 – 1 1/2 lb chicken breast or chicken tenders
1/2 cup Teriyaki marinade (Yoshibas or Lawry’s teriyaki w/ pineapple are good options)
1 small/medium jicama, peeled and julienned
2 small cucumbers, juilienned or finely sliced
2 med/1 large carrot, grated
1 head of boston/bib/butter lettuce (about 12 leaves)

Ingredients for the dipping sauce:

1 cup Newman’s Own low-fat ginger sesame dressing
2 heaping Tbsp creamy peanut butter

How To Make Chicken Lettuce Wraps:

1. In a medium bowl, combine chicken with your favorite Teriyaki Marinate, cover and marinate in the fridge 20-30 minutes. Meanwhile, prep your vegetables.

2. Peel and julienne jicama, grate carrot and julienne cucumber. Remove the core from the lettuce. Rinse and spin dry the leaves, then arrange the lettuce and prepared vegetables on a large serving platter.

3. To make a dipping sauce, pour 1 cup of Newman’s Own dressing into a container with lid and add 2 heaping Tbsp of peanut butter. Cover and shake well until the consistency is smooth.

4. Heat a large skillet over medium/high heat. Add 1-2 Tbsp olive oil and saute the marinated chicken about 3 min per side or until cooked through. Remove chicken to a cutting board.

5. Once the chicken is cool enough to handle, slice it into thin strips and add the chicken to your serving platter. See? Ingredients 

Servings: 4
  • 1 lb chicken breast or chicken tenders

    I could not find Yoshibas teriyaki sauce however I did find Yoshida’s teriyaki sauce?

      Hi Anne, you can marinate the chicken in any teriyaki sauce.

    Help!!! So I ran around looking everywhere for the Kraft Recipe Maker Asian Fish Taco and every store I went to said they discontinued the product. Any suggestions where I could find it or substitutes. I also went online to do some research and it looks like they might have discontinued the Kraft Recipe Maker products all together. 🙁

    Can I substitute Kraft Recipe Makers Asian Fish Tacos with anything other than the peanut sauce?

      Julie, do you have someone allergic to peanuts or would you prefer to use something besides Kraft Recipe Makers? Here is the link to one of our favorite lettuce wraps that doesn’t require Kraft Recipe Makers. If you prefer not to use peanut butter than Newman’s Own low-fat ginger sesame dressing works great by itself. Hope this helps :).

    Delicious recipe! I just came from the store and I got everything exept kraft recipe makers because the didn’t have any. Is there anything I can substitute the sauces with?

      I just realized that you wrote two messages :). Julie, just use your favorite asian chicken marinade for the chicken, no need for specific one.

        Hi Natasha,

        Thank you ! Those are two separate ideas, right? Either teriyaki sauce or peanut sauce? I am missing an ingredient for the peanut sauce (sesame ginger dressing) so I think i’ll stick to teriyaki and try the peanut sauce another time!

    I have used the Sweet and Sour Chicken sauces. I made it with chicken, frozen mixed veggies that I precook end, and pineapple. I cooked it on the stove and served over brown rice.

    The lemon oregano sauce from the Chicken Cacciatore could also be used for grilled greek chicken breasts sprinkled with feta. The other sauce could be served over pasta.

    I think anything with an asian flavor (asian fish tacos box) to it works so well with salmon. I would marinade the salmon for about an hour in the fridge (not longer because then it starts to actually cook) and place it on the grill for some smokey flavor. I would add some sauteed julienne veggies (yellow, green and red bell peppers as well as carrots and some mushrooms) to soba noodles as a side dish for the meal adding some of the marinade to the noodles to complement the fish.
